CLASSIC CLAM CHOWDER

- In a large soup kettle, fry bacon over medium heat until bacon crisps, about 5 minutes. Remove bacon; set aside.
- Keep 2 tablespoons bacon fat in pan. (If necessary, add oil to yield 2 tablespoons.) Add onion and saute until soft, about 5 minutes. Add thyme and bay leaves; cook until fragrant, 30 seconds or so.
- Whisk in mashed potatoes, clam juice (bottled and what you've drained from the clams) and 1 cup of water. Add new potatoes and bring to a simmer. Reduce heat; continue to simmer, partially covered, until potatoes are tender, about 10 minutes. Stir in clams, cream and parsley; season with salt and pepper.
- Heat through and serve, garnishing each bowl with reserved bacon.

BOB'S BACON POTATO CLAM CHOWDER
Bob's Bacon Potato Clam Chowder, a classic New England recipe, makes a comforting, delicious meal for the whole family! Bacon renders, then an onion cooks in the rendered fat. Add flour and butter to create a roux, then add clam juice and whole clams! When the mixture thickens, add milk, potatoes and water. Season with salt and pepper, and simmer until the mixture coats the back of the spoon. Perfect for any season, this chowder sings of the sea.

Steps:
- In a large Dutch oven or stockpot over medium heat, render the bacon.
- Once the bacon has rendered, remove the meat. (We won't use this in our recipe, but if you want, you can let it drain on a paper towel and use as a garnish with the chowder is finished.) Leave the bacon fat in the pan.
- Add the onion, stirring until the onion is coated in the bacon fat. Cook until the onion softens, about 3-5 minutes.
- Add the butter, stirring until it melts.
- Measure in the flour to create the roux. Stir the onion, bacon fat, butter and flour together. Let the flour cook until slightly browned, about 5 minutes.
- Lower the heat to the lowest setting. Add the clam juice and the chopped clams to the Dutch oven. Heat slowly as the soup thickens.
- Add the milk, the pre-cooked potatoes and the water. Season with salt and white pepper.
- Slowly heat the chowder over medium heat until the proper consistency. Please take caution that you to not bring to a boil because of the dairy products used in this recipe. The finished chowder should be thick enough to coat the back of a spoon. If the soup gets too thick, add a little more milk to thin it out to proper consistency.
- Serve warm with oyster crackers, and enjoy!

CINDY'S AWESOME CLAM CHOWDER
A wonderful clam chowder to serve with hot sourdough bread, or even better yet, in a sourdough bread bowl. My whole family adores this recipe, I'm sure yours will too!

- Place the bacon in a large pot and cook over medium-high heat, stirring occasionally, until crisped and browned, about 10 minutes. Remove the bacon with a slotted spoon, leaving the drippings in the pot. Set the bacon aside. Stir the potatoes and carrots into the bacon fat. Season with salt and pepper, and cook for 5 minutes, stirring frequently.
- Pour the juice from the clams into the pot, and add enough water to just cover the potatoes. Bring to a boil, then reduce heat to medium-low, cover, and simmer until the potatoes are just tender, 10 to 15 minutes.
- Gently stir the leek soup mix into the potatoes until no lumps of soup remain. Stir in the clams, reserved bacon, and half-and-half cream. Cook and stir until the chowder returns to a simmer and thickens, about 10 minutes more.

POTATO AND CLAM CHOWDER
I love chowders. I have combined these two chowders with a few extra ingredients to make a wonderful tasting chowder. I like to serve it the same as French Onion Soup with the garlic toast in the bottom of the bowl or garlic croutons and pepper jack cheese melted on top. UMMMMMMM Good! This is really a comfort food on a cold winter day.

- In a large pot saute (sweat) chopped onions in olive oil.
- Peel and dice potatoes into small bites and add to onions and olive oil.
- Add cayenne pepper, black pepper and salt.
- Cook potatoes with 1/4 cup of water covered until fork tender.
- In a small pan on medium heat mix butter and flour as if your were making a gravy or white sauce.
- Add flour and butter mixture to large pot and mix with potatoes.
- Pour 4 cups chicken broth and stir until it starts to thicken.
- Add can of whole baby clams and chopped clams with juice.
- Pour in heavy cream.
- (Thickness varies. Mashing some of the potatoes or adding instant potatoes for thickening.).
- Cook for 30 minutes.
- Top with Old Bay Seasoning.

- Drain clams, reserving clam juice. In a large saucepan, cook bacon over medium heat until crisp, stirring occasionally. SWEET POTATO CLAM CHOWDER
My partner and I both love Clam Chowder, but recently we were told we need to watch our cholesterol levels. This is my revamping of traditional clam chowder with a slightly healthier twist. My partner says it tastes just as good if not better this way.

- Peel and chop Sweet Potatoes.
- Chop Onions.
- Chop Turkey Bacon.
- Combine Onions, Sweet Potatoes, Clams, and Bacon in Crock pot. Cover with 1.5 cups of water. Cook on high for 3-4 hours.
- Stur in Milk, Cream, Flax Seed and allow to cook again 30 minutes to 1 hour.
