4 chicken breasts
1 packet ranch seasoning mix
2 Tbsp Taco Seasoning
1 can black beans 15 0z
1 can Rotel 8 oz
1 can corn 15.25 oz (not drained)
1 block cream cheese
2 fresh limes

Steps:

  • Add the chicken and place all the ingredients except the limes and the cream cheese in the crock pot.
  • Cover and cook on high in the slow cooker for 3-4 hours or low for 6-8 hours.
  • Shred the chicken.
  • Squeeze the limes over the chicken mixture , add cream cheese and stir to combine.
  • Continue to heat in the crock pot until the cream cheese is fully melted (usually 30-60 minutes).
  • Serve over rice or with tortillas. Enjoy!

This Crock Pot Fiesta Lime Chicken is an easy low carb crock pot chicken recipe with an incredible creamy sauce.

3 lbs boneless, skinless chicken
1 cup chicken broth
1/3 cup soy sauce
3 tablespoons sugar substitute
3 cloves minced garlic
1 teaspoon liquid smoke
salt to taste
1 (optional) zest of a lime
4 limes (juiced)
1/4 teaspoon fresh ginger
1 cup mayo
1 cup sour cream
1/2 cup salsa
1/4 cup chicken broth
cajun seasoning (to taste (1-3 tsp))
1 teaspoon cumin
1 teaspoon dried parsley
hot sauce to taste (1+ tsp)
1 cup shredded cheese of choice
Garnish- Limes cut into wedges

Steps:

  • Place the chicken in a container that can be air tight.
  • In a bowl, combine all of the marinade ingredients and pour over top of chicken.
  • Seal container and shake well to coat chicken entirely.
  • Marinate in the fridge for at least and hour or up to overnight before slow cooking.
  • Drain the chicken and place into a 6 quart slow cooker. No additional liquid is needed. Chicken will produce its own juices.
  • Cook on low for 4-6 hours or until fork tender.
  • Drain chicken and place back into slow cooker.
  • Mix together dressing ingredients except cheese and pour over top of chicken.
  • Stir chicken to coat.
  • Top with cheese and cook on high until sauce is heated through and cheese melts.
  • Serve with lime wedges to squeeze over portions before eating.

1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 cup mayonnaise
1/4 cup sour cream
2 tablespoons salsa

1 tablespoon cajun seasoning
1/4 teaspoon dried parsley
1/4 teaspoon hot sauce
2 cups shredded cheese (cheddar, mozarella, colby jack, etc)
2 cups lime flavored tortilla chips

Steps:

  • Prepare marinade: Mix together in bowl; water, teriyaki sauce, juice from 1/2 of lime, garlic, tequila (if desired), liquid smoke, salt and ginger.

1 lime, juiced

  • Place the salsa, taco seasoning, lime juice, and cilantro into a slow cooker, and stir to combine. Add the chicken breasts, and stir to coat with the salsa mixture. My neighbor came up with this and brought me some to try. After one taste I asked how he made it and this is what he said. I'm guessing at the amounts of some ingredients.

Number Of Ingredients 6

2 lbs boneless skinless chicken thighs (6-8)
1 (12 ounce) jar medium salsa (I will use hot)
1 (10 ounce) can tomato soup (good brand)
1 (1 ounce) package taco seasoning (regular)
1 (14 ounce) can corn
1 (8 ounce) container sour cream (optional)

Steps:

  • Pour tomato soup in bottom of crockpot.
  • Place chicken pieces on top of soup.
  • Sprinkle chicken pieces with taco seasoning.
  • Pour salsa on top of chicken.
  • Cover and cook for 8-10 hours.
  • 30 minutes before serving, shred chicken and mix well.
  • Serve with tossed salad, on floured tortilla if desired and top with sour cream and/or shredded cheese.
