SLOW-COOKER ITALIAN CHICKEN-LENTIL SOUP

Steps:
- Remove fat from chicken. In 3 1/2- to 4-quart slow cooker, mix onion, zucchini, carrots, lentils, broth, salt and pepper. Add chicken.
- Cover; cook on Low heat setting 5 to 6 hours.
- Remove chicken from slow cooker. Use 2 forks to pull chicken into shreds. Return chicken to slow cooker. Stir in mushrooms and tomatoes. Cover; cook on Low heat setting about 15 minutes longer or until thoroughly heated. Sprinkle with basil. Serve with cheese.

- Heat oil in 3-quart saucepan over medium-high heat. Add chicken; sprinkle with 1/4 teaspoon of the Italian seasoning. Cook and stir 3 to 5 minutes or until browned.
- Add broth and water. Heat to boiling. Add pasta and bell pepper. Heat to boiling; reduce heat. Cook uncovered 10 to 12 minutes, stirring occasionally, until pasta is tender.
- Stir in remaining 1/4 teaspoon Italian seasoning, kidney beans and the zucchini. Cook 3 to 5 minutes or until zucchini is crisp-tender.

Steps:
- Heat olive oil in a large pot over medium-high heat. Saute onion and garlic in hot oil until softened, about 5 minutes. Remove onion and garlic to a small bowl.
- Stir chicken into any remaining oil in the pot; cook and stir until completely browned, 5 to 7 minutes. Return onion mixture to the pot; add beans, broth, chiles, cilantro, salt, and cayenne pepper.
- Bring the soup to a boil, reduce heat to medium-low, and cook until the beans are very tender and the chicken cooked through, about 20 minutes.

- Add the beans to a colander and rinse, sort out any unwanted debris and discard. Add the beans to the slow cooker.
- Add the chicken, celery, carrots, onion, garlic, rosemary and chicken broth. (WAIT TO ADD THE TOMATOES AND ITALIAN SEASONING PACKET)
- Place the lid on the slow cooker. Cook on HIGH for 7 hours without opening the lid during the cooking time. There are a lot of large beans in this and the longer cooking time is needed to soften them.
- Remove the rosemary spring from the top (if you used a sprig).
- Remove the chicken breasts onto a plate and cut into cubes (or shred) and add back into the soup.
- Add the two cans of diced tomatoes and the included Italian seasoning packet. Stir.
- Add salt to taste. Serve and enjoy!
ITALIAN BEAN SOUP FOR THE SLOW COOKER
This hearty bean soup almost makes itself. Vary the bouillon to suite your taste using vegetable, chicken or beef. I've tried different bean combinations as well and this is one of many that works well. Great vegetarian soup when using vegetable broth! Add garlic bread and a salad and you've got a complete meal!

Steps:
- Rinse beans and place in a large pot.
- Cover beans with 5 cups cold water.
- Bring water to a boil; reduce heat.
- Simmer for 2 minutes.
- Remove from heat.
- Cover and let stand for 1 hour.
- Drain and rinse the beans.
- Alternatively, soak the beans overnight in cold water in a covered pan, then drain and rinse.
- In a 4 quart crock pot combine beans, 4 cups fresh water, tomatoes with juices, onion, bouillon, garlic, Italian seasoning and pepper.
- Cook on low-heat setting for 11 to 13 hours or on high heat setting for 5 1/2 to 6 1/2.
- Thirty minutes before serving, thaw green beans and stir into soup.
- Cook soup for 30 minutes more on high-heat until frozen beans are cooked and tender.
- Serve with garlic bread and a salad for a complete meal.
