This tangy, zesty sauce instantly became a family favorite. I created it when my family came in from out of town; everyone raved about it and my husband begs me to make it all the time.

10 roma (plum) tomatoes - peeled, seeded and crushed
½ small onion, chopped
1 teaspoon minced garlic
¼ cup olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon ground cayenne pepper
1 teaspoon salt
1 teaspoon ground black pepper
1 pinch cinnamon

Steps:

  • Place tomatoes, onion, garlic, and olive oil in a slow cooker. Season with oregano, basil, cayenne pepper, salt, black pepper, and cinnamon.
  • Cover, and cook 10 to 15 hours on Low. The longer you simmer it the more flavorful it becomes. At 10 hours it's really good, but at 15 its even better.

And after you do it, it's just a matter of tossing all the ingredients into the pot and letting them simmer together into a rich and savory red gravy!

2 lb bulk Italian pork sausage or ground beef
2 large onions, chopped (2 cups)
2 cups sliced fresh mushrooms (6 oz)
3 cloves garlic, finely chopped
1 can (28 oz) Muir Glen™ organic diced tomatoes, undrained
2 cans (15 oz each) tomato sauce
1 can (6 oz) tomato paste
1 tablespoon dried basil leaves
1 teaspoon dried oregano leaves
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon crushed red pepper flakes

Steps:

  • Spray 5-quart slow cooker with cooking spray. In 12-inch skillet, cook sausage, onions, mushrooms and garlic over medium heat about 10 minutes, stirring occasionally, until sausage is no longer pink; drain.
  • Spoon sausage mixture into cooker.
  • Stir in remaining ingredients.
  • Cover; cook on Low heat setting 8 to 9 hours.

4 onions, chopped
4 cloves garlic, minced
1 green bell pepper, chopped
½ cup vegetable oil
16 cups chopped tomatoes
2 tablespoons dried oregano
2 tablespoons dried basil
¼ cup chopped parsley
¼ cup white sugar
2 tablespoons salt
¾ teaspoon ground black pepper
1 (6 ounce) can tomato paste

Steps:

  • In a slow cooker saute together the onion, garlic, green pepper, and vegetable oil. Cook until onion is transparent.
  • Add the chopped tomatoes, oregano, basil, parsley, sugar, salt, and ground black pepper. Cook for 2 to 3 hours on low heat. Stir frequently.
  • Let sauce cool. Pour sauce into quart size freezer containers. Store in freezer.
  • When ready to use sauce, stir in can of tomato paste.

This is so easy and quick it's almost embarrassing and the flavor is supurb.It's not too heavily flavored in any one direction so you can go anywhere with it when you use it.You'll never go back to canned sauce.

1 gallon crushed roma tomato
4 tablespoons olive oil
3 onions, chopped
4 -6 cloves garlic, minced
4 stalks celery, chopped
20 baby carrots, chopped
kosher salt
fresh ground black pepper
4 bay leaves
unsalted butter

Steps:

  • (Gallon cans of Tomatoes are available at small restaurant supplys that are "wholesale, open to the public" They will cost a lot less than retail.) Place Tomatoes in pot set on high.
  • Heat a large pan over med-high heat, add Oil.
  • Saute (stir fry) Onions for 5 min.
  • Add Garlic, Celery, Carrots, and Bay leaves saute for another 5-10 min. 'til tender. Add to pot.
  • Salt and Pepper 'til it's almost "right", stir well, cover.
  • Reduce heat to low and cook for 5-6 hours.
  • Remove Bay leaves and adjust seasoning.
  • If it is too acidic add Butter, 1 TBS at a time, stir well and retaste.
  • Continue to add, stir, and taste'til it's to your liking. This is much better than adding sugar!
  • Ladle a blender 3/4 full, Process 'til smooth.
  • Pour into a large bowl and continue with remaining sauce.
  • This sauce will be about the consistency of store bought.
  • If you wish it thicker, return to pot and cook on low, uncovered, stirring frequintly to keep the surface from turning dark.
  • When satisfied allow to cool completely, ladle 2 cup servings into plastic freezer bags.
  • Frozen it will keep up to 6 months. (I don't know if this is true, I've never kept any that long.).

This inspiration for this recipe was from my Italian relative. This is a very simple, delicious and authentic Italian tomato sauce, but instead of cooking it on the stove you prepare it in a crock pot. It makes alot so I like to freeze it in smaller batches, it freezes beautifully.

2 (14 ounce) cans crushed tomatoes
1 (8 ounce) carton vegetable stock
1/2 cup water
1 medium onion, finely diced
2 teaspoons rosemary
1 tablespoon oregano
1 tablespoon basil
1/4 cup sugar
2 bay leaves
2 garlic cloves, crushed
1 pinch salt
1 pinch pepper

Steps:

  • Place all ingredients in slow cooker and cook on low for 8 - 10 hours. The sauce will reduce several inches in the cooker resulting in an intense fresh tomato sauce.

  • Prepare your tomatoes by washing in plain water. Cut them in half or quarters and add to the crockpot. Add the garlic, onion, carrot, and herbs. Drizzle the wine and olive oil. Cover and turn crockpot to low and cook for 2-4 hours stirring occasionally.
  • After the sauce has simmered for a while and tomatoes have released their juices and the vegetables are soft, turn off crockpot and allow the sauce to cool.
  • Run the cooled tomato sauce through a Food Strainer or Food Mill to remove skins, seeds, and to smooth out the sauce. If you are crunched for time, you can pop the cooled sauce into the refrigerator and begin again the following day.
  • Return the strained tomato sauce to the crockpot to cook down further to thicken the sauce. Turn the crockpot to low and vent the cover so excess moisture evaporates. Cook until your desired thickness, 4-6 hours or longer, stirring occasionally.
