Steps:
- Cook onion, butter, garlic, celery and sausage in a frying pan until onion is tender, about 5 minutes.
- Add all ingredients, except tomatoes and cornstarch, to the crockpot. Cook 4-5 hours on high or 8 hours on low or until potatoes are tender.
- Stir in tomatoes with juices and cornstarch and cook 10 minutes more.
- Discard bay leaf and season with salt & pepper to taste. Serve with sour cream if desired.

Steps:
- Brown sausage and onion in a skillet. Drain well.
- Place potatoes, celery and carrot in bottom of crock pot. Add sausage and onion mixture. Pour chicken broth over vegetables and sausage.
- Turn crock pot to low and cook 4 to 5 hours.
- During the last 5 minutes of cooking add evaporated milk and cheddar cheese. Do a taste test for salt and pepper and add, if needed.
- Note: If a thicker soup is desired, add -- 1 tablespoon of cornstarch dissolved in 2 tablespoons of cold water.
- Serve and enjoy!

- Pour chicken broth in crock pot.
- Add can of mushroom soup and mix well with broth.
- Peel and dice potatoes, add to crock pot.
- Dice onion and saute in skillet with butter until soft.
- Slice smoked sausage and then quarter.
- Add to onion.
- Cook until smoked sausage is hot.
- Add to crock pot.
- Cook on high for 4 hours.
- Before serving, lower heat and add milk and cheese. Stir in cheese until melted.
- Mix cornstarch with a small amount of water. Mix until smooth. Add to soup to help thicken.

- In the slow cooker pot, add the potatoes, onion, celery, carrots, garlic, salt, pepper and chicken broth. Stir together.
- Heat a medium size skillet on medium heat and add butter. Stir the butter until melted and then add flour. Stir until the flour is combined with the butter. If the mixture starts to have large bubbles in it, turn the heat down slightly. Stir in milk (or half and half if preferred). Continue to stir until creamy (about 2 minutes). Add pepper and stir.
- To the slow cooker pot, add the roux and stir. Add parsley and stir. Add the shredded cheese and stir. Give the soup a taste test and add more salt and, or pepper if needed.
- Serve warm right out of the slow cooker and garnish with drizzles of hot sauce, olive oil. Top with parsley and small chunks of pepper jack cheese.
