This is a spaghetti sauce recipe that I've developed over time. You may alter the ground meat as you please; sometimes I use all ground beef when I find a good sale but half beef/half pork is pretty tasty. My crock pot is my best friend at times when I'm having busy days at work but still want a decent meal on the table for my family. I serve spaghetti with crusty bread and a romaine salad. Cook time is the crock pot cooking time. This recipe is for a 4 quart crock pot, halve it if your pot is smaller.

1 lb ground beef
1 lb ground pork
1 medium onion, chopped fine
2 (28 ounce) cans diced tomatoes, with juice
2 (6 ounce) cans tomato paste
2 (8 ounce) cans tomato sauce
2 bay leaves
5 garlic cloves, pressed
4 teaspoons dried oregano
1 1/2 teaspoons salt
4 teaspoons dried basil
3 tablespoons brown sugar
1 teaspoon dried thyme

Steps:

  • Brown meats and onion in a skillet and drain well.
  • Transfer to your crock pot.
  • Add remaining ingredients and mix well.
  • Cover and cook on low for 8-10 hours.
  • Serve over hot spaghetti noodles.

As a kid, I was pretty picky about spaghetti sauce, and then mom got this one from a friend...SO good! Now that I have kids of my own, they love it and I've been able to improvise on the recipe myself to make it both kid- and adult-friendly! An easy meal that you don't have to think about and will make your house smell delicious! Plenty for freezing,as well, for another day. Hope you enjoy! *Sometimes, I'll replace some of the tomato sauce with crushed tomatoes and add a little more spice and garlic to compensate* **I use hot Italian sausage mixed with ground beef for a little more of a kick**

1 -1 1/2 lb ground beef or 1 -1 1/2 lb sausage
1 tablespoon olive oil
1 medium onion, diced fine
4 garlic cloves, minced
1 (46 ounce) can tomato juice
2 (15 ounce) cans tomato sauce
1 (6 ounce) can tomato paste (2 cans, for thicker sauce)
1 tablespoon sugar
2 bay leaves
1 1/2 tablespoons basil
1 1/2 teaspoons oregano
1 teaspoon parsley
salt & pepper
red pepper flakes (optional, to taste)

Steps:

  • Heat oil in large skillet over med-high heat until hot.
  • Brown onion and 2 cloves of garlic in oil, but do not burn!
  • Add meat to skillet and cook thoroughly. (Drain meat if desired).
  • In a crock pot, add juice, sauce, paste, 2 cloves of garlic, sugar, spices, and meat mixture and cook on low all day (8-12 hours -- the longer, the better!). Can cook on high for less time, as well, but may not be as thick. *To thicken up, "crack" lid for the last few hours.
  • Serve over hot pasta and freeze any leftover sauce for later!

I really did make up this recipe on my own, with the help of an Italian lady through emails. The mingling of the oil/spices is the key. We were really into Once a Month Cooking for awhile and this sauce is/was a hit.

102 ounces tomato sauce (#10 can)
1 1/4 lbs Italian sausage, casings removed
2 tablespoons olive oil
1 large white onion, diced
1 tablespoon minced bottled garlic
1 tablespoon sugar
1 tablespoon paprika
1 tablespoon dried parsley
1 tablespoon dried oregano
1 tablespoon dried basil
1 tablespoon garlic powder
2 bay leaves
salt, to taste
pepper, to taste

Steps:

  • Brown sausage in pan, crumbling with spatula, until no pink remains. Drain and rinse. Put into a 5 quart crockpot.
  • Saute onions and garlic in olive oil until translucent and golden but not brown. Add all the spices and mix well. Turn off the heat and let the spices mingle for about 10 minutes. The heat will let the oils release from the dried herbs.
  • Add the tomato sauce and spice mixture to the meat in the crockpot and stir to mix. Cook on high for 1 hour and then low for 7-8 hours. Use over pasta.
  • If freezing, cool sauce and pour into quart sized freezer bags. Remove all the air and place flat on a cookie sheet and put into freezer. When frozen, they will stand up like records in the freezer.

1 pound ground beef or bulk Italian sausage
1 medium onion, chopped
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 can (6 ounces) tomato paste
1 bay leaf
1 tablespoon brown sugar
4 garlic cloves, minced
1 to 2 teaspoons dried basil
1 to 2 teaspoons dried oregano
1 teaspoon salt
1/2 to 1 teaspoon dried thyme
Hot cooked spaghetti

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. , Transfer to a 3-qt. slow cooker. Add the next 10 ingredients. Cover and cook on low for 7-8 hours or until heated through. Discard bay leaf. Serve with spaghetti.

I have worked on this sauce recipe for quite some time. I hope you enjoy it as much as our family does. We traditionally eat this every Sunday with garlic toast [roasted garlic drizzled with olive oil (425 degrees for 35 minutes wrapped tightly in tin foil) and topped with parmesean cheese placed on top of a cooling rack, set on a cookie sheet, then broiled], Ceasar salad, steamed broccoli and orange slices. This recipe make A LOT of sauce (You may want to halve it). Leftovers freeze beautifully.

3 (14 1/2 ounce) cans tomato sauce
2 (28 ounce) cans whole tomatoes, broken apart by hand
4 (6 ounce) cans tomato paste
1 (3 ounce) can sliced olives
2 bay leaves
1/2 tablespoon raw sugar
3 teaspoons dried basil
3 teaspoons dried oregano
2 tablespoons chopped fresh parsley
2 teaspoons sea salt (to taste)

1 large onion, chopped

3 lbs ground beef

Steps:

  • Turn crock pot on high.
  • Add all ingredients in Phase I to crock pot.
  • Add olive oil to large skillet. Over medium-high heat wait until olive oil just starts to smoke. saute onions and mushrooms, until onions have browned. Add garlic and sauté for one minute. Add to crock pot.
  • Next, in same skillet, brown ground beef. Drain fat. Add to crock pot.
  • Simmer on low for 6-8 hours. Add salt and pepper to taste.
  • Serve over spaghetti topped with cheese.
