EASY LASAGNA I
A super easy and fast beef lasagna recipe. It is made with a prepared sauce, and requires no boiling of the noodles.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet, cook and stir ground beef until brown. Add mushrooms and onions; saute until onions are transparent. Stir in pasta sauce, and heat through.
- In a medium size bowl, combine cottage cheese, ricotta cheese, grated Parmesan cheese, and eggs.
- Spread a thin layer of the meat sauce in the bottom of a 13x9 inch pan. Layer with uncooked lasagna noodles, cheese mixture, mozzarella cheese, and meat sauce. Continue layering until all ingredients are used, reserving 1/2 cup mozzarella. Cover pan with aluminum foil.
- Bake in preheated oven for 45 minutes. Uncover, and top with remaining half cup of mozzarella cheese. Bake for an additional 15 minutes. Remove from oven, and let stand 10 to 15 minutes before serving.

- Start with the following in a pot: 1 pound (450 g) of sweet Italian sausage 1 pound (450 g) of ground beef 1/2 cup (120 mL) of chopped onions 2 cloves of garlic chopped The flavor of the Italian sausage varies from brand to brand. You may need to try a different brand the first couple of times you cook this dish. Find the flavor you like the best. Brown the ground beef, Italian sausage, onions and garlic in a pot until they start to cook. It takes about 6 to 9 minutes to brown the meat. I like to use a Dutch oven to cook this portion of the recipe. I use a medium low temperature to brown the meat. It is optional to remove the grease from the meat once it is finished browning, your choice. Add the following: 1 (28 ounce) (784 g) can of crushed tomatoes 2 (8 ounce) (230 g) cans of tomato sauce 2 (6 ounce) (168 g) cans of tomato paste 1/2 (120 mL) cup of water Gently stir this into the cooking meat. Add the following: 2 tablespoons (30 mL) white sugar 1 teaspoon (5 mL) fennel seed 2 teaspoons (10 mL) fresh Basil leaves chopped 2 tablespoons (30 mL) fresh Italian parsley chopped 1 teaspoon (5 mL) salt 1 teaspoon (5 mL) Italian Seasoning 1/2 teaspoon (2.5 mL) ground pepper Gently stir these seasoning into the sauce Cover the pot and let the meat sauce simmer. Add the following: 1 egg 2 tablespoons (30 mL) fresh Italian parsley chopped Mix these ingredients together with a spoon Now we start building the lasagna layers. Use a 9×13 inch baking pan. Spread 2 Cups (480 mL) of meat sauce on the bottom of the pan. Remove your lasagna noodles out of the water bath. Shake water off wet noodles. - Soak 9 sheets of lasagna noodles in VERY hot water.
- Meanwhile, brown beef. Drain fat and add onion then sauté additional 2 minutes.
- Add the sauce and ricotta cheese and heat thoroughly.
- In a 13 by 9-inch pan, ladle enough sauce to thinly cover the bottom. Layer with 3 lasagna noodles, 2 cups of sauce, 3/4 cup mozzarella cheese and 1/4 cup of parmesan cheese. Repeat twice.

- In a mixing bowl, combine the egg, parmesan cheese, Italian seasoning, cottage cheese, and 1 cup mozzarella cheese; set aside.
- In a large skillet, brown the beef, onion, and garlic together until the beef is done; drain excess grease.
- Add water and all but 1 cup of spaghetti sauce to beef.
- Spread reserved spaghetti sauce into the bottom of a greased 13x9 inch pan.
- Layer 5 to 6 lasagna noodles over the sauce, overlapping or breaking to fit.
- Spread half the cheese mixture over the noodles.

- In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 teaspoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
- Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.

- Cook lasagna noodles according to package directions.
- To make meat sauce: Sauté in small amount of oil, onion, garlic, celery, parsley and carrot. Add tomato paste, tomatoes and spices and sugar. Sauté ground beef in skillet and add to sauce. Simmer 2 hours.
- To make cream sauce: Melt butter, add flour stirring to mix. Add milk stirring until smooth and thickened. Add remaining ingredients.
- Lightly oil a 9 x 13 inch pan, layer noodles, meat sauce, cream sauce, Parmesan and mozzarella cheese. Repeat layers twice.
- Bake in 350 degree oven for 1 hour. Let stand 15 minutes before cutting.
NONNA'S LASAGNA

- To make the pasta, follow the directions for Homemade Egg Pasta. After rolling, cut into 12 inch long strips, then precook in boiling water for 30 seconds and place in ice water.
- Dry and set aside on clean kitchen towels.
- To make the sauce, heat the olive oil in a saucepan and once hot add the pork bones over medium heat and cook until well browned. Add the onion and continue cooking until it is tender. Add the garlic and stir well, cooking an additional minute. Finally add the puree, paste and 1 cup of water.
- Next add the oregano, 1/2 cup of the parsley, the basil, red pepper flakes and salt and pepper. Bring everything to a boil and then reduce heat to a simmer.
- Taking the ground beef (or beef/veal mix), and add the egg, bread crumbs, 1/4 parsley, 1/3 cup Parmesan Cheese and salt and pepper. Add the milk to the bread cubes and soak. Once the bread is soft use your fingers to break it up and then add it to the meat mixture. Mix all the ingredients together well with your hands, and then roll into small 1 inch sized meatballs and drop carefully in the sauce.
- Continue cooking the sauce for about 2 hours over low heat, adding additional water as needed if the sauce becomes too thick.
- Remove the meatballs and the pork bones from the sauce with a slotted spoon and place into a small bowl when the sauce is complete.
- To assemble the lasagne, add about 1/2 cup of sauce to the bottom of a large lasagne pan, then add a little water and mix.Make an overlapping layer of the noodles across the bottom of the pan. Spread a large spoonful of sauce on top, making sure the noodles are well covered. Add one more layer of noodles and sauce, and then add a layer of the mozzarella slices. Continue in this manner until you have 5 layers.
- On the top, cover the noodles well with the sauce, place another layer of mozzarella, then sprinkle on the parmesan. To finish, evenly place the meatballs across the top surface.
- Cover with foil, and bake in a preheated 375 degree F. oven for about 30 minutes. Remove the foil and cook another 10 minutes. Let rest an additional 10 minutes before serving.
TRADITIONAL CANADIAN LASAGNA
This is definitely a Canadian recipe as I Personally recall seeing it on the side of the blue Catelli box, myself, as a child, on . It was the only pasta mom would buy, and a Canadian company since 1867. However, I could find no information about when the recipe first appeared on the side of the lasagna noodle box. The meat sauce and tomato sauce in this recipe are not the recipes on the side of the box. The idea and process is the same. The cottage cheese and spinach layer is key to the Traditional Canadian Lasagna, as is the mozzarella and the meat filling layers.

- Brown the beef with the garlic; stir to break into small pieces of meat
- Season with salt and freshly ground black pepper
- Add 4 cups cooked beef to 2 cups homemade tomato sauce; combine well
- Check again for seasoning
- Wring frozen spinach inside a thick tea towel until all liquid is dispelled
- Combine all ingredients
- Spread 1/2 cup Homemade Tomato Sauce onto the bottom of the pan; it will be sparse
- Place 4 lasagna noodles on top of the sauce (these will fit perfectly in the 11 x 13 inch casserole pan)
- Spread 1 cup of meat sauce very sparsely over the noodles; cover with 4 lasagna noodles
- Spread 1 1/4 cups of meat sauce very sparsely over the second layer of noodles; cover this layer of meat sauce with mozzarella cheese slices
- Cover the cheese slices with 4 lasagna noodles (at this point, you will need a couple of half pieces of noodles and ends if your casserole dish fans outwards as the surface area grows with each layer)
- Spread the entire cottage cheese and spinach mixture over the third layer of lasagna noodles; top this with another layer of lasagna noodles
- Cover the last layer of lasagna noodles with 1 1/2 cup of meat sauce, sparsely distributed over the noodles (if you have enough room, make one more layer of noodles and a final layer of meat sauce)
- The meat sauce will be the top of the lasagna; cover that with generous slices of mozzarella cheese
- Wrap tightly in plastic wrap; date and label; freeze for future use
- Bake frozen in 350 degree oven for 2 to 2 1/2 hours until bubbly and cheese on top just starts to brown (cover with tented foil while still baking, to avoid over browning, if necessary)
- Preheat oven to 350F
- Bake for 1 hour and 15 minutes until bubbly and cheese on top just starts to brown (cover with tented foil while still baking, to avoid over browning, if necessary)
- If you have a lot left over, portion into individual pieces, wrap well, label, date and freeze and these make great individual lunches
