This is one of my weekly meals for my family! It's easy and delicious. Top with sour cream, Cheddar cheese, chopped onion, green onion, or crushed tortilla chips. Maybe even in a sourdough bread bowl!

1 ¼ pounds lean ground turkey
1 (28 ounce) can crushed tomatoes
1 (16 ounce) can kidney beans, rinsed and drained
1 (16 ounce) can pinto beans, rinsed and drained
1 cup chicken stock
1 small onion, chopped
1 tablespoon hot sauce (such as Frank's® Redhot®), or more to taste
1 tablespoon chili powder
2 teaspoons salt
1 teaspoon minced garlic
½ teaspoon paprika
½ teaspoon dried oregano
½ teaspoon cayenne pepper, or more to taste
½ teaspoon ground cumin
½ teaspoon ground black pepper

Steps:

  • Mix ground turkey, tomatoes, kidney beans, pinto beans, chicken stock, onion, hot sauce, chili powder, salt, minced garlic, paprika, oregano, cayenne pepper, cumin, and black pepper together in a slow cooker; stir to break the turkey into small chunks.
  • Cook on Low 6 to 8 hours (or High for 4 hours).

1 lb bacon, chopped
1 lb lean (at least 80%) ground beef
1 medium red bell pepper, chopped (1 cup)
1 cup chopped onions
2 cloves garlic, finely chopped
1 can (28 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained
1 can (19 oz) Progresso™ red kidney beans, drained, rinsed
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 cup Cascadian Farm™ frozen organic sweet corn
1/2 teaspoon salt
2 tablespoons chili powder
Sour cream
Shredded Cheddar cheese
Chopped onion
Chopped fresh cilantro leaves

Steps:

  • Spray 5-quart slow cooker with cooking spray.
  • In 12-inch skillet, cook bacon 12 to 14 minutes over medium heat, stirring occasionally, until crispy. Drain on paper towels. Reserve 1/4 cup; cover and refrigerate until ready to serve. Add remaining bacon to slow cooker.
  • Reserve 1 tablespoon drippings in skillet. Add beef, bell pepper, onion and garlic. Increase heat to medium-high. Cook 6 to 9 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
  • Add beef mixture to slow cooker; stir in remaining chili ingredients. Cover; cook on High heat setting 3 to 4 hours or on Low heat setting 6 to 8 hours. Serve with reserved bacon and Toppings.

  • In a large skillet, heat oil over medium heat. Add turkey and onion; cook until meat is no longer pink, breaking up turkey into crumbles, 8-10 minutes., Transfer to a 5-qt. slow cooker; stir in seasonings. Add tomatoes, sweet peppers, chiles and garlic; stir in coffee and wine., Cook, covered, on low 7-9 hours. Stir in beans; cook until heated through, 15-20 minutes longer. 1/2 lb turkey bacon (or regular bacon)
1 1/2 lbs ground turkey
2 (15 ounce) cans kidney beans (drained)
1 (15 ounce) can pinto beans (drained)
1 (10 ounce) can Rotel chili fixins tomatoes (or other diced tomatoes)
8 ounces tomato paste
1 onion, finely chopped
1 tablespoon chili powder
1 (15 ounce) can chicken broth
1 tomatoes
2 ounces sliced jalapeno peppers
1 garlic clove
1/2 tablespoon ground cumin

Steps:

  • Fry bacon until it starts to brown, cut into bite size pieces and put into crock pot.
  • Brown the ground turkey with onions.
  • Combine ground turkey, kidney and pinto beans, canned tomatoes, tomato paste, chili powder, cumin, and chicken broth and add to crock pot.
  • Use food processor or mini-prep to puree garlic, tomato, and jalapeno peppers and add to crock pot.

1 lb ground turkey meat
8 oz bacon (I used Applegate Farms Good Morning Bacon)
2 cups baby carrots or carrot slices
2 cups frozen pepper stripes or fresh peppers, diced
1 medium onion (diced)
2 medium Garlic Cloves (minced)
2 stalks Celery (thinly chopped)
2 cups frozen spinach
1 28 oz can stewed or crushed tomatoes (preferably without any basil added)
2.5 cup Kidney beans (pre-cooked or canned (and rinsed))
1.5 cups Frozen peas
1 tbsp sea salt
1 tsp black or white ground pepper
1.5 tsp ground cumin
1 tsp smoked paprika
1/2 tsp dried oregano
1/2 tsp chili powder
1 tbsp olive oil

Steps:

  • Add oil to a sauté pan and heat over medium for a minute or so. Then add ground turkey meat and start to work your spatula through it. Break it up as it cooks into small pieces. Cook until it's white (not pink).
  • Meanwhile, start assembling your crockpot. Add carrots first to the bottom of your slow cooker. They require the most direct heat for the longest period of time.
  • Next add the pepper stripes, onion, garlic, celery, garlic, and frozen spinach in this order layered on top of each other.
  • When the turkey is cooked, add it directly on top of the veggies.
  • Start cooking the bacon in the sauté pan. Do not cook until crispy. You only need to cook it until it starts to brown. Then remove it from the pan and cut into 1/4" strips. Add them on top of the turkey meat.
  • Pour the canned tomatoes evenly over top. Don't worry if the crockpot is quite full. Just shift the contents around to help the tomato sink into the crockpot around the veggies. If you think you may need more liquid, add about 1/2 cup water.
  • Add the spices evenly over top. If you'd like to mix it up a bit, that's fine. But do not pull the veggies up in the process.
  • Set your crockpot to cook for 8 to 10 hours on low. About an hour before you are ready to serve it, add the frozen peas.
  • When it's done, add the cooked kidney beans to the crockpot and combine.
  • Adjust spices to taste and serve.

Then add the garlic and cook for another 2 minutes. Next add the stock, hot sauce, chipotles, tomato paste, chili powder and cumin. Cook it on very low heat, covered, for about 40 minutes. Add three-quarters of the bacon, saving one-quarter for garnish, and cook for an additional 20 minutes, uncovered. Add salt if needed. Serve topped with the chopped bacon and sliced avocado with tortilla chips.
