1 tablespoon butter
1 tablespoon flour
3/4 cup plus 1 tablespoon milk, lukewarm
1/2 teaspoon Dijon mustard
1/2 teaspoon nutmeg
1/4 cup grated gruyere cheese
salt, pepper
6 large slice white bread, without crusts
3 tablespoons butter, melted
2 1/2 ounces ham, cut into cubes
6 small eggs

Steps:

  • For the sauce, melt the butter in a pan over medium heat. Add flour, then beat hard until you have a paste. Take off heat; let cool 2 minutes, then gradually add milk, whisking constantly. Return to heat, and add mustard and nutmeg; simmer gently for 10 minutes, whisking frequently so the sauce doesn't burn. Once the sauce thickens to the consistency of tomato sauce, take it off the heat. Add the cheese (keep a little to garnish). Season to taste.
  • Preheat oven to 350 degrees. Flatten the bread with a rolling pin; brush both sides with melted butter. Line 6-cup muffin tin with the bread slices, pressing them with the bottom of a glass.
  • Divide the ham among the muffin cups. Crack an egg into each (if the egg seems too big, pour a little of the white away before using). Top with 2 tablespoons sauce, then sprinkle with cheese and pepper. Bake 15-20 minutes, and serve.

2 thin slices ham
50g Monterey Jack or cheddar , grated
2 chunky slices bread , such as sourdough
2 tbsp butter
1 egg
handful of salad, to serve

Steps:

  • Heat a frying pan on a medium heat and put oven on low. Put the ham and cheese between the bread slices and press to seal, then spread half the butter on the outside of the sandwich on both sides.
  • Fry in the pan, pressing down with a fish slice, for 1-2 mins until golden then flip and cook the other side. Keep warm in the oven. Melt remaining butter in the pan and fry egg for 1-2 mins until cooked. Top the croque with the egg and serve with salad.

Croque madame is a classic French sandwich filled with ham and bathed in a warm, cheesy bechamel sauce. Add a fried egg and you've got croque madame. I've made this sandwich endlessly, but never for a group because you can only prepare them one at a time. Then I created this casserole--aka "hot dish," the Midwestern term--of white toast layered with bechamel, ham, and shredded Gruyere and topped with a few runny eggs.

1/2 stick (4 tablespoons) unsalted butter, plus more for greasing
10 slices white country bread, halved
1/4 cup all-purpose flour
3 cups whole milk
2 tablespoons Dijon mustard
Kosher salt and freshly ground black pepper
1/2 pound thinly sliced ham, such as Virginia or Black Forest, torn
8 ounces Gruyere cheese, shredded (2 cups)
6 large eggs

Steps:

  • Preheat the oven to 375 degrees F. Generously grease a 9 by 13-inch glass or ceramic baking dish with butter.
  • Spread the bread on a large baking sheet and bake for about 10 minutes, until dry and very lightly toasted.
  • Meanwhile, in a medium saucepan, melt the butter over medium-high heat. Add the flour and cook, whisking continuously, until a paste forms and it starts to bubble, about 2 minutes. Gradually whisk in the milk until smooth. Bring the sauce to a boil and then simmer over medium-low heat until thickened and no floury taste remains, about 7 minutes. Whisk in the mustard and season the sauce with salt and pepper.
  • Spread 1/2 cup of the sauce in the prepared baking dish. Arrange half the toast in the baking dish and spread half the remaining sauce on top. Scatter half the ham and cheese on the coated bread. Repeat the layering one more time with the remaining bread, sauce, ham and cheese.
  • Bake the hot dish for 15 minutes, until hot and the cheese has melted. One at a time, crack the eggs into a small bowl, then slide them onto the hot dish so that the whites spread a little and the yolks sit in little divots; use the back of a spoon to make divots if the arrangement of your bread doesn't naturally make them. Bake the hot dish for 12 to 15 minutes more, until the egg whites are just set but the yolks are still runny. Serve hot, sprinkled with more salt and pepper.

16 slices thin white sandwich bread
1/4 pound Gruyere cheese, thinly sliced
1/2 pound thinly sliced deli ham

  • Preheat oven to 450 degrees. Spread 1/2 teaspoon butter on each bread slice and place 8 slices, butter side down, on a rimmed baking sheet. 16 slices sourdough bread

EGGS:
2 tablespoons butter
8 large eggs
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 400°. Place half of the cheese on 8 bread slices; top with ham and remaining bread. Spread outsides of sandwiches with softened butter., On a griddle, toast sandwiches over medium heat 2-3 minutes on each side or until golden brown. Spread tops with mayonnaise; top with remaining cheese. Transfer to an ungreased baking sheet; bake 4-5 minutes or until cheese is melted., Meanwhile, for eggs, heat 1 tablespoon butter on griddle over medium-high heat.
