CRUDITES WITH GARLICKY WHITE BEAN DIP



Crudites with Garlicky White Bean Dip image

If you are a real garlic lover, use one or two additional cloves in this delicious dip.

1 tsp(s) Olive oil extra-virgin
3 clove(s), large Garlic clove(s) minced
15.5 oz Canned cannellini beans drained and rinsed
1.5 tbsp(s) Fresh lemon juice
1.5 tbsp(s) Water
0.125 tsp(s) Table salt or to taste
0.125 pinch Black pepper or to taste
0.5 tsp(s) Smoked paprika or chopped fresh parsley (optional)
1.5 cup(s) Fresh cherry tomato(es) about 12 average
1 small Cucumber(s) cut into spears
1 small Yellow pepper(s) or red pepper, cut into thick slices
3 medium Uncooked carrot(s) peeled and cut into sticks

Steps:

  • To prepare dip, heat olive oil in a small saucepan over medium heat and sauté garlic, stirring constantly, until garlic just begins to turn golden, about 1 to 2 minutes. Remove from heat and let cool slightly.
  • In a food processor, combine garlic-olive oil mixture, beans and lemon juice. Process until smooth, slowly adding 1 to 2 tablespoons of water to obtain a thick yet creamy consistency. Season to taste.
  • Transfer dip to a bowl and garnish with paprika or chopped parsley, if desired. Place dip on serving platter and arrange pepper, tomatoes, cucumber, and carrots around it.

1 can white beans (drained and rinsed (540ml/18oz))
1 avocado (diced)
1 clove garlic (finely chopped)
1 jalapeño pepper (seeded and finely chopped)
1 lime (juiced)
1/4 tsp salt
1 can white beans (drained and rinsed (540ml/18oz))
1/2 cup marinated artichoke hearts + additional for garnish
3/4 cup freshly grated Parmigiano Reggiano
3 tbsp extra virgin olive oil
2 tbsp lemon juice
1 clove garlic (finely chopped)
1/8 tsp salt
1 can white beans (drained and rinsed (540ml/18oz))
1 small beet (peeled and grated)
1 clove garlic (finely chopped)
2 tbsp tahini
1 tbsp greek yogurt
1/4 tsp salt
1 tbsp chopped parsley

Steps:

  • Place all the ingredients in the base of a blender or food processor.
  • Pulse a few times, then scrape down the sides of the blender and pulse until creamy and smooth. Taste for seasoning and adjust as necessary. Transfer to a bowl and top with garnish.
  • Serve with toasted baguette or your favourite vegetables.

Number Of Ingredients 6

2 (15-ounce) cans cannellini beans or another white bean, drained and rinsed
5 cloves garlic, peeled and smashed
1 tablespoon finely chopped fresh rosemary
1 cup olive oil
Salt and pepper to taste
Assorted cut up veggies for dipping, try baby carrots, celery, radishes, bell peppers, red onion, scallions and cucumbers

Steps:

  • In a saucepan, combine the olive oil, garlic and rosemary. Steep the flavors over medium heat until the garlic begins to darken. About 8 minutes. Remove from heat and let cool for 5 minutes.
  • In the bowl of a food processor, combine the beans, unstrained infused olive oil, salt and pepper and process until smooth. Taste for seasoning and adjust. Transfer to a serving bowl and serve with crudite.
