3 cups all-purpose flour
2 cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 pound unsalted butter, melted and cooled
2 extra-large eggs
3/4 cup whole milk
2 teaspoons pure vanilla extract
1 cup mashed ripe bananas (2 bananas)
1 cup medium-diced ripe bananas (1 banana)
1 cup small-diced walnuts
1 cup granola
1 cup sweetened shredded coconut
Dried banana chips, granola, or shredded coconut, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • Line 18 large muffin cups with paper liners. Sift the flour, sugar, baking powder, baking soda, and salt into the bowl of an electric mixer fitted with a paddle attachment. Add the melted butter and blend. Combine the eggs, milk, vanilla, and mashed bananas, and add them to the flour-and-butter mixture. Scrape the bowl and blend well. Don't overmix.
  • Fold the diced bananas, walnuts, granola, and coconut into the batter. Spoon the batter into the paper liners, filling each 1 to the top. Top each muffin with dried banana chips, granola, or coconut, if desired. Bake for 25 to 30 minutes, or until the tops are brown and a toothpick comes out clean. Cool slightly, remove from the pan, and serve.

  • In a small bowl, combine flour, baking powder and salt.

Everytime I make this bread, someone thinks its an old family secret and I have been told by many that it is the best banana bread ever. I originally found it in a magazine 10 years ago. The ginger adds a unique taste and the crunch topping is very yummy.

2 cups all-purpose flour
1 cup sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 cup cold butter, cut in pieces
1 cup mashed ripe banana (I use a little more)
1 cup coarsely chopped walnuts (optional)
1/4 cup finely chopped candied ginger
2 eggs
1 teaspoon vanilla
1/2 cup all-purpose flour
1/4 cup sugar
1/4 cup butter, melted
3/4 teaspoon ground cinnamon
3 tablespoons confectioners' sugar (optional)

Steps:

  • Heat oven to 350 degrees. Grease 9x5x3-inch loaf pan.
  • Combine flour, sugar, baking powder and salt in large bowl. Cut in butter until mixture resembles coarse crumbs. Stir in bananas, walnuts, ginger, eggs and vanilla until mixture is just moistened. Spoon batter evenly into prepared pan.
  • Prepare Crunch Topping: Combine flour, sugar, butter and cinnamon in a small bowl. Sprinkle evenly over batter.
  • Bake at 350 degrees oven for 70 minutes or until wooden pick inserted in center comes out clean. Cool bread in pan 10 minutes. Remove bread and cool on wire rack completely. Sprinkle with confectioners' sugar.

  • In a large bowl, whisk the milk, pudding mixes and sour cream for 2 minutes. Let stand for 2 minutes or until thickened. Fold in bananas. Pour into a 1-1/2-qt. bowl. 1/4 cup crunchy high-fiber, low-sugar cereal (I used Grape-Nuts)
1 tablespoon all-natural creamy peanut butter (chunky won't work in this recipe)
1 small banana, peeled and cut into thirds crosswise

Steps:

  • Pour the cereal into a medium shallow bowl.
  • Spoon the peanut butter into a small, shallow microwave-safe bowl. Microwave on medium until the peanut butter is just melted, 15 to 20 seconds.
  • Roll one piece of the banana in the peanut butter to lightly coat it on all sides. Transfer it to the cereal bowl and coat it evenly with the cereal. Place it in a medium resealable plastic container lined with parchment or waxed paper. Repeat with the remaining pieces and place them side by side in the container. Refrigerate them for at least 15 minutes. Serve chilled.
