Ready, Set, Cook! Hidden Valley Contest Entry" I love to bake chicken and have it be crunchy and good. This recipe is full of flavor and easy to throw in the oven too. I especially love to use flavored tortilla chips if you have any on hand.

1 tomatoes, seeded, chopped
1 jalapeno, seeded and diced
1 red bell pepper, chopped
1 cup frozen corn, thawed
1 tablespoon fresh cilantro, chopped
1 (15 1/2 ounce) can black beans, drained and rinsed
1 lime, juice and zest of
2 tablespoons olive oil
1 teaspoon salt and pepper, divided
4 boneless skinless chicken breasts
1/2 cup breadcrumbs, course
1/2 cup parmesan cheese
1/2 cup tortilla chips, crushed
1 teaspoon chili powder
3 tablespoons Hidden Valley Original Ranch Seasoning Mix
2 tablespoons butter, melted

Steps:

  • Preheat oven to 400 degrees.
  • In a bowl combine tomato, jalapeno, bell peppers, corn, cilantro, black beans, lime zest plus juice and olive oil. Season with salt and pepper and spread out on a rimmed baking sheet.
  • Place each breast between 2 pieces of plastic wrap. Gently pound out to an even 1/2-inch. Place on top of vegetables and season with salt and pepper.
  • In a small bowl combine bread crumbs, Parmesan cheese, tortilla chips, chili powder, and Ranch seasoning; toss with melted butter.
  • Divide crumb mixture evenly over each breast, pressing firmly.
  • Bake 20-25 minutes, or until cooked through.
  • Serve immediately. Makes 4 servings.

2 1/2 pounds organic or grass-fed beef (80/20)
2 pounds Italian sausage
1/2 cup fresh Italian parsley, chopped
2 yellow onions, chopped
3 tablespoons minced garlic
4 farm-fresh eggs, organic eggs or at the very least cage-free eggs
3 tablespoons organic Italian seasoning
1 tablespoon Himalayan salt or sea salt
1 tablespoon fresh coarse-ground pepper
1 cup organic ketchup
2 cups fresh breadcrumbs (I use gluten-free)
1 tablespoon olive oil
3 yellow onions, peeled and cut in half, then sliced into half-moons 1/4 inch thick
1 tablespoon red balsamic vinegar
1 teaspoon organic sugar
2 fresh garlic cloves
1/4 cup grated mix of Parmesan, Asiago and Romano cheeses or just a good Parmesan will do
1/4 teaspoon Himalayan salt or sea salt
1 cup fresh basil leaves
1 cup stemmed kale leaves of choice (any variety will do)
1/4 cup olive oil
Mayonnaise, for spreading
24 to 28 slices dense bread or French bread
Marinara or meat sauce of your choice, for topping
24 to 28 slices Havarti cheese

Steps:

  • For the mini meatloaves: Preheat the oven to 350 degrees F. Line baking sheets with parchment or silicone pads.
  • In a large bowl, mix together the beef, sausage, parsley, onions, garlic, eggs, Italian seasoning, salt, pepper, ketchup and breadcrumbs with your hands. Yep, they are the best utensils for the job!
  • Form the meat mixture into approximately 12 to 14 mini loaves (6 to 8 ounces each) on the baking sheets. Bake for 16 to 18 minutes until they reach 165 degrees F. Remove from the oven and let cool slightly before slicing.
  • For the caramelized onions: Heat a saute pan over medium-high heat. Pour in the olive oil, add the onions and then reduce the heat to low. Cook the onions until translucent, stirring occasionally. Add the balsamic and sugar and continue cooking until soft, approximately 2 hours low and slow.
  • For Joy's basil kale pesto: In a food processor, add the garlic, cheese, and salt. Process until almost smooth. Add the basil, kale and olive oil and process until combined. Taste and make any adjustment you may like. Ah, yum! Set aside if you can until ready to use.
  • For the sandwiches: Spread some mayo on each slice of bread. On half of the slices, spread on marinara or meat sauce of your choice. On the other slices, spread on the pesto. Slice the mini meatloaves and layer on the pesto slices. Top with the caramelized onions. Finish with the cheese slices. Close the sandwiches and place on a panini grill until browned and toasty! Slice in half on an angle and enjoy!

1 (1 1/8 ounce) package Hidden Valley Original Ranch Dips Mix, divided
4 (4 ounce) boneless skinless chicken breasts
6 ounces Greek yogurt
2 tablespoons milk (to thin yogurt)
2 cups panko breadcrumbs (bread crumbs)
1 tablespoon fresh chives, finely chopped
cooking spray

Steps:

  • 1. Mix yogurt, milk and chives in a bowl large enough to hold your chicken breasts.
  • 2. Add 1 1/2 tablespoons of Hidden Valley Ranch Mix to yogurt mixture; stir.
  • 3. Add chicken breasts to marinate in fridge for at least 1 hour.
  • 4. Add 1 1/2 tablespoons Hidden Valley Ranch mix to panko breadcrumbs; mix well.
  • 5. Preheat oven to 400 degrees; grease a baking dish and set aside.
  • 6. Place breadcrumbs in a shallow dish; add chicken breasts, turning to coat both sides well.
  • 7. Place chicken in baking dish; lightly spray chicken with short bursts of cooking spray. This will help to crisp it up!
  • 8. Bake for 20-40 minutes (depending on the size of your breasts) or until juices run clear. (170 degrees on an instant read thermometer).
  • 9. Remove from oven; serve and ENJOY!

1 tablespoon butter
4 ounces baby carrots
8 ounces button mushrooms
6 ounces onions, rough chopped
3 garlic cloves
2 tablespoons tomato paste
1 teaspoon fresh thyme leave
1 cup frozen corn
10 ounces ground pork
1 lb ground beef
2 eggs
3/4 cup breadcrumbs
1 tablespoon Worcestershire sauce
hot sauce, to taste I like to kick it up
1 ounce Hidden Valley® Original Ranch® Dressing and Seasoning Mix, divided in half for meat and glaze
9 ounces mozzarella cheese (for those of us that like it hot) or 9 ounces monterey jack pepper cheese (for those of us that like it hot)
1 shallot, minced
2 tablespoons tomato paste
3 tablespoons brown sugar

Steps:

  • Preheat oven to 350 degrees.
  • Spray 2 jumbo 6-cup muffin pans.
  • Place carrots, mushrooms, onion and garlic in a food processor and process till very fine.
  • In a large pan melt butter add the processed duxelle mixture and cook over medium heat 10 minutes, stirring when needed add the tomato paste and cook 5 more minutes. Toss in thyme and the frozen corn and set aside to cool.
  • In a large bowl mix the meats, eggs, Worcestershire sauce, hot sauce, and 1/2 of the ranch seasoning together add the duxelle with corn to the meat mixture and mix with clean hands.
  • Divide the mixture in half and place in 9 of the muffin cups place in one ounce cheese in each half filled muffin. Top with the reminder of meat. Pressing down to smooth top.
  • Bake in preheated oven 25 minutes when meat registers 155 degrees.
  • Meanwhile mix the glaze ingredients together adding the other half of the seasoning. Set aside.
  • Remove from oven. Set oven to broil.
  • Brush all the glaze on the muffins.
  • Broil till bubbly.
  • Enjoy.

5 tablespoons salted butter (split use)
3/4 cup celery
3/4 cup white onion
2 tablespoons olive oil
2 boneless skinless chicken breast halves
1 (8 ounce) can sliced water chestnuts, drained and halved
1/2 cup Greek yogurt
1/2 cup mayonnaise
1/2 cup fresh chives, cut in 1/2-inch pieces
1/3 cup dried cranberries
1 cup cooked white rice

1/2 cup panko breadcrumbs
1/2 cup sliced almonds

Steps:

  • Preheat oven to 350 degrees. Lightly coat 8" or 9" square baking dish with cooking spray.
  • FILLING:.
  • Thinly slice celery and coarsely chop onion. In 12" skillet, melt 3 T butter and sauté 2 minutes. Pour into medium sized mixing bowl. In the same skillet, heat olive oil; add chicken breasts cut into ¾" cubes and 1 tablespoon of seasoning mix. Stir well and sauté just until chicken is no longer pink. I wanted a different twist to my meatloaf, so I added a package of dry Hidden Valley Ranch Dressing Mix. Instead of using ketchup for the sauce, I use V8 to add a different taste. Use the spicy if you want more of a kick to your sauce. My kids went back for seconds when normally I have to beg them to just eat meatloaf.

2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
