Ready, Set, Cook! Hidden Valley Contest Entry" I love to bake chicken and have it be crunchy and good. This recipe is full of flavor and easy to throw in the oven too. I especially love to use flavored tortilla chips if you have any on hand.

Steps:
- Preheat oven to 400 degrees.
- In a bowl combine tomato, jalapeno, bell peppers, corn, cilantro, black beans, lime zest plus juice and olive oil. Season with salt and pepper and spread out on a rimmed baking sheet.
- Place each breast between 2 pieces of plastic wrap. Gently pound out to an even 1/2-inch. Place on top of vegetables and season with salt and pepper.
- In a small bowl combine bread crumbs, Parmesan cheese, tortilla chips, chili powder, and Ranch seasoning; toss with melted butter.
- Divide crumb mixture evenly over each breast, pressing firmly.
- Bake 20-25 minutes, or until cooked through.
- Serve immediately. Makes 4 servings.

MEATLOAF PANINI SANDWICH

- For the mini meatloaves: Preheat the oven to 350 degrees F. Line baking sheets with parchment or silicone pads.
- In a large bowl, mix together the beef, sausage, parsley, onions, garlic, eggs, Italian seasoning, salt, pepper, ketchup and breadcrumbs with your hands. Yep, they are the best utensils for the job!
- Form the meat mixture into approximately 12 to 14 mini loaves (6 to 8 ounces each) on the baking sheets. Bake for 16 to 18 minutes until they reach 165 degrees F. Remove from the oven and let cool slightly before slicing.
- For the caramelized onions: Heat a saute pan over medium-high heat. Pour in the olive oil, add the onions and then reduce the heat to low. Cook the onions until translucent, stirring occasionally. Add the balsamic and sugar and continue cooking until soft, approximately 2 hours low and slow.
- For Joy's basil kale pesto: In a food processor, add the garlic, cheese, and salt. Process until almost smooth. Add the basil, kale and olive oil and process until combined. Taste and make any adjustment you may like. Ah, yum! Set aside if you can until ready to use.
- For the sandwiches: Spread some mayo on each slice of bread. On half of the slices, spread on marinara or meat sauce of your choice. On the other slices, spread on the pesto. Slice the mini meatloaves and layer on the pesto slices. Top with the caramelized onions. Finish with the cheese slices. Close the sandwiches and place on a panini grill until browned and toasty! Slice in half on an angle and enjoy!

- 1. Mix yogurt, milk and chives in a bowl large enough to hold your chicken breasts.
- 2. Add 1 1/2 tablespoons of Hidden Valley Ranch Mix to yogurt mixture; stir.
- 3. Add chicken breasts to marinate in fridge for at least 1 hour.
- 4. Add 1 1/2 tablespoons Hidden Valley Ranch mix to panko breadcrumbs; mix well.
- 5. Preheat oven to 400 degrees; grease a baking dish and set aside.
- 6. Place breadcrumbs in a shallow dish; add chicken breasts, turning to coat both sides well.
- 7. Place chicken in baking dish; lightly spray chicken with short bursts of cooking spray. This will help to crisp it up!
- 8. Bake for 20-40 minutes (depending on the size of your breasts) or until juices run clear. (170 degrees on an instant read thermometer).
- 9. Remove from oven; serve and ENJOY!

- Preheat oven to 350 degrees.
- Spray 2 jumbo 6-cup muffin pans.
- Place carrots, mushrooms, onion and garlic in a food processor and process till very fine.
- In a large pan melt butter add the processed duxelle mixture and cook over medium heat 10 minutes, stirring when needed add the tomato paste and cook 5 more minutes. Toss in thyme and the frozen corn and set aside to cool.
- In a large bowl mix the meats, eggs, Worcestershire sauce, hot sauce, and 1/2 of the ranch seasoning together add the duxelle with corn to the meat mixture and mix with clean hands.
- Divide the mixture in half and place in 9 of the muffin cups place in one ounce cheese in each half filled muffin. Top with the reminder of meat. Pressing down to smooth top.
- Bake in preheated oven 25 minutes when meat registers 155 degrees.
- Meanwhile mix the glaze ingredients together adding the other half of the seasoning. Set aside.
- Remove from oven. Set oven to broil.
- Brush all the glaze on the muffins.
- Broil till bubbly.
- Enjoy.

- Preheat oven to 350 degrees. Lightly coat 8" or 9" square baking dish with cooking spray.
- FILLING:.
- Thinly slice celery and coarsely chop onion. In 12" skillet, melt 3 T butter and sauté 2 minutes. Pour into medium sized mixing bowl. In the same skillet, heat olive oil; add chicken breasts cut into ¾" cubes and 1 tablespoon of seasoning mix. Stir well and sauté just until chicken is no longer pink. Pour into mixing bowl with vegetables. Reserve 1 teaspoon of seasoning mix for the topping. Add remaining mix to bowl along with the next 7 ingredients. Stir gently to combine well. Pour chicken mixture into prepared baking dish.
- TOPPING:.
- In the same skillet, melt 2 tablespoons butter. Stir in Panko bread crumbs, sliced almonds and the 1 teaspoon of reserved seasoning mix. Toss just until well coated. Sprinkle topping on chicken filling mixture.
- Bake for 30 minutes until bubbly and topping is golden brown. Makes four generous, delicious servings.
MEATLOAF WITH A RANCH TWIST
I wanted a different twist to my meatloaf, so I added a package of dry Hidden Valley Ranch Dressing Mix. Instead of using ketchup for the sauce, I use V8 to add a different taste. Use the spicy if you want more of a kick to your sauce. My kids went back for seconds when normally I have to beg them to just eat meatloaf.

- Preheat an oven to 350 degrees F (175 degrees C).
- Combine the vegetable juice, brown sugar, and Worcestershire sauce in a saucepan over medium heat; cook until the sauce thickens, about 10 minutes.
- Mix the ground beef, garlic powder, onion powder, ranch dressing mix, sage, salt, and pepper together in a large bowl. Gradually sprinkle the bread crumbs into the meat while mixing so the crumbs are distributed evenly throughout; add the egg and milk and continue mixing. Shape the mixture into a loaf and transfer to a loaf pan. Pour about half the sauce over the meatloaf.
