1/4 cup raisins
2 tablespoons pine nuts, toasted
1-1/3 cups semisweet chocolate chips
1/2 teaspoon instant coffee granules
1/4 teaspoon ground cinnamon
1/4 cup sour cream
Coarse sea salt

Steps:

  • Place pretzels, raisins and pine nuts in a bowl. In a microwave, melt chocolate chips; stir until smooth. Stir in coffee granules, cinnamon and sour cream. To rewarm, microwave in additional 5- to 10-second intervals. Add to pretzel mixture; toss until combined., Drop mixture by heaping tablespoonfuls onto a waxed paper-lined baking sheet. Sprinkle with salt., Refrigerate until set, about 10 minutes. Store in an airtight container in the refrigerator.

2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
1 cup unsalted butter, at room temperature
1 cup brown sugar, firmly packed
2 large egg whites
1 teaspoon vanilla extract
¾ cup coarsely chopped pecans
¾ cup chocolate-covered toffee bits (such as Heath®), or to taste

Steps:

  • Combine flour, baking soda, and salt in a medium bowl; whisk until well combined.
  • Place butter and brown sugar in a large bowl and beat with an electric mixer until light and fluffy, about 3 minutes. Add egg whites and vanilla extract, and beat for 1 more minute. Gradually add flour mixture to the bowl and mix until completely combined. Fold in pecans and toffee bits until all ingredients are well incorporated.
  • Move the bowl to the refrigerator and chill for at least 30 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Line 2 large baking sheets with parchment paper and set aside.
  • Scoop dough into heaping tablespoon-sized balls with a spoon or cookie scoop. Place dough balls about 2 inches apart on the prepared baking sheet and flatten just slightly with the palm of your hand.
  • Bake in the preheated oven until edges are set and lightly browned, 10 to 12 minutes. Let cookies cool on the baking sheet for 1 minute, then transfer to a wire rack to cool completely.

1-1/2 cups peanut butter
1/2 teaspoon almond extract, optional
4 cups Cap'n Crunch cereal
4 cups crisp rice cereal

  • Place candy coating in a 5-qt. slow cooker. Cover and cook on high for 1 hour. Add peanut butter. Stir in extract if desired. , In a large bowl, combine the cereals and marshmallows. This healthy homemade granola is high in fibre and packed with nutritious ingredients such as dried apricots, nuts, and seeds

50g (about 7) soft ready-to-eat dried apricots (we used Crazy Jack organic, because they are sulphur-free)
½ tbsp rapeseed oil
3 large eggs , whites only (see tip to use up the yolks)
200g porridge oats
1 tbsp cinnamon
1 tbsp vanilla extract
25g desiccated coconut
25g flaked almonds
25g pumpkin seeds
3 x 120g pots bio yogurt
3 peaches , to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line a large baking tray with baking parchment.
  • Tip the apricots, oil and egg whites into a bowl (see tip box for how to use up the egg yolks), then blitz with a hand blender until very smooth. Stir in the oats, cinnamon and vanilla, then fold through the desiccated coconut, almonds and pumpkin seeds.
  • Pinch clusters of the mixture together to create texture in the granola, then scatter over the lined baking tray in a single layer. Bake for 15 mins, then toss (turning the larger pieces) and bake for a further 10 mins until golden and crunchy.
  • Cool the granola completely on the tray, then pack into a large airtight jar or container. If you're following our Healthy Diet Plan, serve two portions over three days, filling the base of each bowl with yogurt (½ pot for each portion) and topping with half a peach, sliced.

No Bake Crunchy Peanut Butter Clusters image

No baking required for these Crunchy Peanut Butter Clusters! An easy-to-make snack that uses ingredients you have in your pantry: peanut butter, while chocolate, Rice Krispies cereal, peanuts, and marshmallows.

2 cups Rice Krispies cereal (or any puffed rice cereal)
2 cups dry roasted peanuts
2 cups miniature marshmallows
1 cup creamy peanut butter
1 pound almond bark (white chocolate candy coating)
Sprinkles (optional topping)

Steps:

  • Grab a large cookie sheet and cover in wax paper or parchment paper. Set aside.
  • In a large bowl, gently mix together cereal, peanuts, and marshmallows. Set aside.
  • In a separate bowl, add peanut butter and almond bark (make sure that almond bark is broken up into smaller chunks).
  • Place peanut butter and almond bark in microwave for 90 seconds. Stir, then place back in microwave for 30 seconds. Continue to cook and stir peanut butter and almond bark mixture at 15 second intervals until smooth and completely melted.
  • Pour peanut butter mixture over cereal mixture in the large bowl.
  • Using a large wooden spoon, gently mix together until all cereal, peanuts, and marshmallows are completely coated in melted peanut butter mixture.
  • Using a tablespoon or small cookie scoop, scoop large spoonfuls onto the prepared cookie sheet. If desired, top with sprinkles.
  • Let sit at room temperature for 2 hours to set up completely (or place in the fridge for about 30 minutes to set up faster).

"Sweet coffee, candy and nut clusters in chocolate. Not a recipe for the novice candy maker. You won't regret the effort, though. These crunchy nutty treats are better than cookies and won't last long once your guests try one!. " This is the heading on the recipe I found in and old cookbook hidden in the back room at work. I have updated the instructions but the ingredients are the same (I'm guessing that it goes back to the 20's). Anyway, it said nothing at all about time or the amount this will make. The times and amount given is a total guess on my part. I'm posting because I really want to try this recipe this Christmas season.

4 egg whites
2 1/2 cups brown sugar
1 cup nuts, chopped small
1/4 cup corn syrup
1/2 cup strong coffee
4 lbs chocolate, chopped
1/4 teaspoon salt

Steps:

  • Butter a 2-quart saucepan.
  • Combine sugar, corn syrup, salt and coffee.
  • Cook on high heat until sugar dissolves and mixture comes to a boil, stir constantly.
  • Then cook to hard ball stage without stirring.
  • Remove from heat.
  • In a large chilled bowl, beat egg whites to stiff peaks stage.
  • Pour the hot syrup into the egg whites (slowly!) while beating at high speed.
  • Once the syrup is added, continue beating until you get soft peaks.
  • Add nuts and beat for another 5 minutes.
  • Let it cool down, then cover and put in the freezer.
  • In a double boiler, melt the chocolate.
  • Line several cookie sheets with waxed paper. Remove the other bowl from the freezer. Spoon out a teaspoon of the cold mixture and drop in the melted chocolate. Scoop out and place on the waxed paper.
  • Repeat.
  • When the mixture is used up, you can store any remaining chocolate for another use. Let the candies cool and harden, then store in the refrigerator.
