CRITTER CRUNCH
I make a big batch of this fun sweet snack throughout the year to keep on hand for hungry kids of all ages. Once you get started eating, it's hard to stop. Plus, it makes a great take-along treat.-Wilma Miller, Port Angeles, Washington

Steps:
- In a saucepan or microwave-safe bowl, heat the butter, brown sugar and cinnamon until butter is melted; stir until blended. In a large bowl, combine the remaining ingredients. Add butter mixture and toss to coat., Place in a greased 15x10x1-in. baking pan. Bake, uncovered, at 300° for 30 minutes, stirring every 10 minutes. Store in an airtight container.

CRUNCHY CRITTERS
Crispy cornflake chicks in a chocolaty cereal nest are a sure sign that spring is on the way.

Steps:
- Toast coconut in 350 degree oven until lightly browned, about 5 minutes, stirring once. Butter seven 3 1/2-inch bowls; set aside. Melt butter in saucepan. Add marshmallows; stir until melted. Stir in cornflakes. Set aside 1 3/4 cups of the mixture in a medium bowl.
- Stir 1/2 cup coconut, crushed chocolate pieces, and melted chocolate into mixture in pan. Press into bowls to form nests. Refrigerate 1 hour.
- Form chicks from reserved mixture (attach 1- and 3/4-inch cereal balls with peanut butter). Decorate with candies. Remove nests from bowls; line with coconut. Add chicks.
CONCH FRITTERS
This is a traditional Bahamian recipe that is made with conch, this wonderful shellfish that is delicious but so hard to find out from the Bahamas. These fritters are great as an appetizer, finger food or as a very tasty hors d'oeuvre to accompany your favorite tropical drink!

Steps:
- Heat the oil in a large pot or deep fryer to 365 degrees F (185 degrees C).
- In a bowl, mix the flour, egg, and milk. Season with cayenne pepper, seasoned salt, salt, and pepper. Mix in the conch meat, onion, bell pepper, celery, and garlic.
- Drop the batter by rounded tablespoons into the hot oil, and fry until golden brown. Drain on paper towels.
- In a bowl, mix the ketchup, lime juice, mayonnaise, hot sauce, salt, and pepper. Serve dipping sauce on the side with the fritters.
