What makes these delicious chocolate and vanilla ice cream bars so crunchy? Try a yummy mix of crushed vanilla wafers, toasted pecans and coconut.

50 vanilla wafers, finely crushed (about 1-1/2 cups)
1 cup finely chopped toasted pecans
1 cup BAKER'S ANGEL FLAKE Coconut, toasted
1/4 cup (1/2 stick) margarine or butter, melted
1 pt. (2 cups) each: vanilla and chocolate ice cream, softened, divided

Steps:

  • Mix wafers, pecans, coconut and margarine until well blended. Press 1 cup of the wafer mixture firmly onto bottom of 9-inch square pan.
  • Spoon vanilla ice cream over crust; carefully spread to form even layer. Freeze 25 min. or until firm. Sprinkle with 1/4 cup of the remaining wafer mixture; cover with the chocolate ice cream. Sprinkle with the remaining wafer mixture.
  • Freeze 4 hours or until firm. Let stand 10 min. at room temperature to soften slightly. Cut into 16 bars to serve. Store leftover bars in airtight container in freezer.

1/2 cup peanut butter
4 cups cocoa krispies cereal
1 pint brick ice cream

Steps:

  • Mix corn syrup thoroughly with peanut butter. Add cocoa krispies cereal and stir until well coated. Press mixture evenly and firmly into bottom of buttered 13x9x2 inch pan. Place in freezer until firm. Cut into 12 three inch squares and place a slice of ice cream between each 2 squares. Cut each square into two bars. To store, wrap individually in foil and keep in freezer until needed.

1 ½ cups crisp rice cereal
¼ cup brown sugar
1 cup sweetened flake coconut
½ cup chopped mixed nuts
¼ cup margarine, melted
1 block vanilla ice cream
1 (16 ounce) package frozen sliced strawberries, thawed

Steps:

  • Grease a 9x13 inch baking dish.
  • In a medium bowl, stir together the crisp rice cereal, brown sugar, flake coconut, mixed nuts, and melted margarine. Place half of the crisp rice mixture in the bottom of the prepared baking dish.
  • Cut the block of ice cream into 3/4 inch slices and arrange in baking dish, covering all of the crisp rice mixture. Sprinkle remaining crisp rice mixture over the top of the ice cream and gently press. Place baking dish in the freezer 15 minutes, or until set. Keep frozen until ready to serve. (Bars can be kept covered, in the freezer for 2 weeks.) Cut into squares and serve with thawed strawberries.

1/2 cup slivered almonds
1 cup crushed Rice Chex
1/2 cup sweetened shredded coconut
1/2 cup packed brown sugar
1/8 teaspoon salt
1 carton (1-3/4 quarts) vanilla bean ice cream, softened if necessary

Steps:

  • Preheat oven to 375°. In a large skillet, melt butter over medium heat. Add almonds; cook and stir 2-3 minutes or until toasted. Stir in Rice Chex, coconut, brown sugar and salt. Press onto bottom of an ungreased 13x9-in. baking dish. Bake 5-6 minutes or until edges are golden brown. Cool 10 minutes; place in freezer 30 minutes., Gently spread ice cream over crust. Cover and freeze overnight. Cut into bars.
