  1. preheat oven to 350-degrees f
  2. spray 9-inch pie plate with pam
  3. heat oil in skillet over med
  4. high heat
  5. add onion and saute until browned
  6. add spinach
  7. cook until excess moisture evaporates
  8. let cool
  9. beat eggs in bowl
  10. add cheese
  11. stir egg-cheese mixture into onion-spinach mixture
  12. season to taste with salt and pepper , if desired
  13. turn into pie pan , spreading top evenly
  14. bake until top is browned and tester comes out clean , 40-45 minutes
