Crustless Vegetable Quiche image

This tasty crustless vegetable quiche is perfect for brunch and substantial enough for lunch or dinner.

1 tablespoon butter (for pan)
16 oz frozen mixed vegetables ((mine has carrots, peas, corn, and green beans))
8 large eggs
½ cup sour cream
1 teaspoon Diamond Crystal kosher salt (or 1/2 teaspoon fine salt)
¼ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 cup shredded sharp cheddar cheese ((4 oz))

Steps:

  • Preheat your oven to 400 degrees F. Generously butter a 9-inch pie dish.
  • Place the frozen vegetables in a large microwave-safe bowl. Add ¼ cup of water. Cover and microwave on high for 6 minutes, stirring after the first 3 minutes. Drain well.
  • In a large bowl, whisk together the eggs, sour cream, kosher salt, black pepper, garlic powder, and onion powder. Stir in the thawed veggies and shredded cheese.
  • Transfer the mixture to the prepared pie dish. Bake until golden brown and a knife inserted in the center comes out clean, about 30 minutes.
  • Allow the quiche to cool and set in the pan on a wire rack for about 15 minutes, before slicing and serving.

1/2 red pepper, finely chopped
6 broccoli florets, chopped
1 small zucchini, chopped
5 ounces American cheese or 5 ounces provolone cheese
6 eggs
1 teaspoon oil
salt and pepper

Steps:

  • Sautee veggies in oil until tender.
  • Remove veggies and allow to cool.
  • Beat eggs in bowl, add salt and pepper add cool veggies to eggs and mix well.
  • Spray glass pie plate with cooking spray.
  • Pour half of the egg mixture in pie plate.
  • Add the cheese slices.
  • Top with remaining egg mixture.
  • Bake at 350 degrees for 15-17 minutes.

1 cup cottage cheese
2 cups cheddar cheese, grated
1/2 stick butter, melted and cooled
1 small onion, finely chopped
4 ounces mushrooms, sliced
1 tomato, sliced
Fresh parsley, chopped

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F / 180 C. Grease a 9 x 9 x 2-inch casserole dish or quiche dish.
  • In a large bowl, whisk together the flour, baking powder, salt, and pepper. Set aside.
  • In another large bowl, beat the eggs .
  • Add the cottage cheese, cheddar cheese, melted butter, onion and mushrooms. Mix well.
  • Whisk in the flour mixture, mixing well until the flour is fully incorporated.
  • Pour the mixture into the prepared casserole dish.
  • Arrange the tomato slices on top of the quiche and push them slightly into the surface. Sprinkle the quiche evenly with the parsley.
  • Bake in the preheated oven for 40 minutes, or until the quiche is set, the top is golden, and a tester inserted in the center comes out clean.
  • Allow to rest for 5 to 10 minutes before slicing into wedges and serving.

1 1/2 cups (1-inch, day-old) bread cubes, preferably sourdough
2 tablespoons unsalted butter or extra-virgin olive oil
2 cups half-and-half
2 large eggs
2 large egg yolks
1/2 teaspoon kosher salt
Freshly ground black pepper
Freshly grated nutmeg
Pinch cayenne or paprika
2 to 3 cups prepared vegetables, such as braised leeks, broccoli, sauteed onions, mushrooms, spinach, peppers, tomatoes
4 ounces, or about 1 cup grated or crumbled cheese, such as Cheddar, goat cheese, Gruyere, Parmesan, fontina, provolone, mozzarella, Gouda, solo or combined
1 to 4 tablespoons minced herbs, such as parsley, chives, tarragon, basil, dill, rosemary, marjoram
3/4 cup chopped crisp bacon, diced ham or salami
1 tablespoon all-purpose flour, optional, this is good to use with vegetables that release liquid during cooking, such as zucchini and spinach

Steps:

  • Preheat oven to 350 degrees F. For the pan: Brush pan with the soft butter and sprinkle the grated Parmesan evenly on top. Or for a Quick Crust, pulse bread into crumbs in a food processor. Heat butter or oil in a large skillet over medium heat; add bread crumbs and stir until evenly toasted, about 5 minutes. Evenly spread crumbs in a 9-inch glass or ceramic pie pan. Place pan on a baking sheet.
  • Whisk the half-and-half, eggs and yolks in large glass measuring cup. Season with salt, pepper, and nutmeg, cayenne or paprika to taste. Spread half the desired filling evenly in the pan, top with about half the cheese; repeat with remaining filling and cheese. Pour the custard over the fillings. Top with more herbs or cheese as desired.
  • Bake until the quiche is just set in the center, about 40 to 50 minutes. Cool completely on a rack before serving.

1 cup KRAFT Shredded Mozzarella Cheese

Steps:

  • Heat oven to 325 degrees F.
  • Reserve 2 tablespoons each onions and tomatoes. Cook bacon in large skillet until crisp. Remove bacon with slotted spoon to paper towels; reserve 1 tablespoon drippings in skillet. Add mushrooms to skillet; cook and stir 2 minutes or until tender. Remove from heat. Chop bacon. Add to skillet with onions and tomatoes; mix well.
  • Beat eggs and sour cream with whisk until well blended. Pour into greased 13x9-inch baking dish; top with bacon mixture and cheeses.
  • Bake 30 minutes or until center is set. Sprinkle with reserved onions and tomatoes. Let stand 5 minutes before cutting to serve.

Make a simple crustless quiche to cut out the faff of making pastry. It's packed with cheese, smoky pancetta and green veg for a lovely lunch or picnic dish

20g butter , plus extra for the tin
1 onion , finely chopped
100g chopped pancetta or smoked bacon
200g asparagus or broccoli, trimmed
8 large eggs
150ml double cream
80g gruyère or parmesan cheese

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter and line a 23cm round deep, springform cake tin so the paper comes 2-3cm up the sides of the tin.
  • Melt the butter in a frying pan. Add the onion and pancetta and cook over a low heat for 10 mins or until softened and translucent.
  • Bring a pan of lightly salted water to the boil. If using broccoli, cut into small florets, if using asparagus, keep whole. Blanch the veg for 2 mins, drain and leave to steam-dry.
  • Whisk the eggs, cream and two thirds of the cheese together in a bowl. Season with salt and black pepper. Mix through the onion and bacon mixture. Pour into the tin and top with the veg and remaining cheese. Bake for 25-30 mins or until golden brown with a slight wobble in the centre.

2 tablespoons olive oil
1 medium onion, chopped fine
2/3 cup broccoli, chopped fine
1 medium zucchini, chopped fine
3 large eggs, beaten
1/2 cup half-and-half (or milk)
1 tablespoon all-purpose flour
1/2 cup parmesan cheese, grated
1 1/2 cups swiss cheese, shredded
1 dash garlic powder
1 dash salt & pepper
1/2 lb bacon, chopped, fried crisp & drained

Steps:

  • Prepare bacon, set aside and drain fat from skillet.
  • In same skillet, heat oil; add onion, broccoli, & zucchini and cook until almost soft.
  • Heat oven to 350 degrees.
  • In bowl, beat eggs with fork. Add milk, flour, cheeses, garlic powder, salt & pepper; mix well.
  • Add vegetables and bacon to egg mixture. Stir to combine.
