2 cups sugar
2 cups water
2 pieces (6 inches each; about 8 ounces) peeled fresh ginger

Steps:

  • In a small saucepan, bring sugar and water to a boil over medium heat; continue boiling, stirring occasionally, until sugar dissolves, about 5 minutes.
  • Meanwhile, with a paring knife, slice ginger crosswire very thinly (about 1/8 inch thick). You should have about 1 cup.
  • Add ginger slices to pan; simmer over medium-low heat until translucent and tender, 20 to 25 minutes. With a slotted spoon, transfer ginger to a wire rack set over a baking sheet lined with parchment or waxed paper; spread pieces so they are not touching. Let drain. Reserve ginger syrup (let cool; refrigerate in an airtight container up to 1 month).
  • Pour 1/4 cup sugar into a small bowl; coat ginger slices, 1 or 2 at a time, in sugar. Store in an airtight container at room temperature, up to 1 month.

1 ¼ pound fresh ginger root
6 cups water
2 cups granulated sugar
½ teaspoon salt
1 teaspoon vanilla extract (optional)

Steps:

  • Peel the ginger root and slice into 1/8 inch rounds.
  • Place the ginger slices in a large 6 quart sauce pot. Add the water. Bring to a simmer. Cover and simmer for 30 minutes to soften the ginger.
  • Remove the lid and check the liquid levels. There should be approximately 1/4 - 1/3 cup of water in the bottom of the pot. If needed, scoop out some water with a ladle, or add water, to make sure you have about ¼ cup in the pot.
  • Stir in the sugar and salt. Bring the sugar syrup to a simmer. Simmer, stirring regularly, for 15-20 minutes, until the syrup starts to crystalize. The color will range from pale cream to golden. Remove from heat and stir in the vanilla extract.
  • Set out a baking rack. Spray with nonstick cooking spray. Use tongs to move the ginger pieces to the rack, spreading out in a single layer.
  • Allow the ginger to rest for 2-4 hours, until all the pieces are dry.
  • Place in an airtight container. The ginger candy will last for at least 1 month if kept in a cool dry place.

1 pound fresh ginger root
5 cups water
Approximately 1 pound granulated sugar

Steps:

  • Spray a cooling rack with nonstick spray and set it in a half sheet pan lined with parchment.
  • Peel the ginger root and slice into 1/8-inch thick slices using a mandoline. Place into a 4-quart saucepan with the water and set over medium-high heat. Cover and cook for 35 minutes or until the ginger is tender.
  • Transfer the ginger to a colander to drain, reserving 1/4 cup of the cooking liquid. Weigh the ginger and measure out an equal amount of sugar. Return the ginger and 1/4 cup water to the pan and add the sugar. Set over medium-high heat and bring to a boil, stirring frequently. Reduce the heat to medium and cook, stirring frequently, until the sugar syrup looks dry, has almost evaporated and begins to recrystallize, approximately 20 minutes. Transfer the ginger immediately to the cooling rack and spread to separate the individual pieces. Once completely cool, store in an airtight container for up to 2 weeks. Save the sugar that drops beneath the cooling rack and use to top ginger snaps, sprinkled over ice cream or to sweeten coffee.

Steps:

  • Cut ginger into 2-inch pieces and slice lengthwise into 1/8-inch slices. Score ginger slices by pricking with a fork.
  • Toss ginger with sugar in a bowl.
  • Combine ginger-sugar mixture and water in a large skillet or wok; bring to a simmer. 1 1/2 cups peeled and thinly sliced fresh ginger
Superfine sugar

Steps:

  • Place ginger in a medium, heavy-bottomed saucepan. Add enough water to cover by 1 inch. Partially cover saucepan and bring to a boil over medium-high heat; boil until ginger is almost cooked through but still slightly al dente, about 1 hour. Drain.
  • Weigh cooked ginger and return it to saucepan with an equal amount of sugar. Add 2 tablespoons water; bring to a boil over medium-high heat, stirring, until ginger becomes translucent, about 20 minutes.
  • Reduce heat and continue cooking, stirring, until ginger is crystallized and begins to clump in the middle of the pan.
  • Meanwhile, sprinkle a large rimmed baking sheet with sugar. Pour crystallized ginger onto prepared baking sheet and roll in sugar, separating pieces. Transfer to a sterilized jar and store in a cool place for 3 to 6 months.

1 cup granulated sugar
1 cup water
1/4 cup castor sugar

Steps:

  • Peel fresh ginger and cut into thin coins (1/8 inch thick). Add the sliced ginger to a medium saucepan along with 3 cups of water.
  • Bring the water to a rolling boil over high heat. Once it comes to a rolling boil, reduce the heat to low and cook the ginger for 2 minutes.
  • Remove the pan from heat, strain the ginger and discard the water. Cook the ginger coins in water similarly 2 more times. This process removes the bitterness from ginger and makes the fibrous cell wall soft. Drain and set aside.
  • Heat water and granulated sugar in a medium saucepan over medium heat. When it comes to a boil, reduce the heat to low and cook for 5-6 minutes.
  • Add the ginger to the pan and cook for 20-30 minutes on low heat till it turns translucent. Do not stir during this process otherwise there will be crystallization.
  • Strain the syrup using a strainer and store it for future use (iced tea or any other drink).
  • Let the crystallized ginger cool for 2 minutes.
  • Toss it in castor sugar until all the pieces are coated.
  • Arrange the pieces on a wire rack in a single layer and let them dry for 6-8 hours. Store in an airtight container for up to 2 weeks at room temperature or 2 months in the refrigerator.

Candied ginger is surprisingly easy to make at home and tastes phenomenal compared to the store-bought variety! We'll walk you through everything you need to know to master making ginger candy at home!

1 cup fresh ginger: sliced or chopped
1/2 cup sugar (more or less as needed)
1/2 cup water (more or less as needed)
pinch of salt

Steps:

  • Peel fresh ginger root by using a spoon to scrape the papery skin off. You can leave the skin on however it does negatively affect the final taste and texture.
  • Cut the ginger into the shape and size you like: long lengthwise slices, round ginger coins, matchsticks, or little ginger nuggets- it's up to you.
  • Add cut and peeled ginger to a pot of water (enough to fully submerge the ginger) and bring it to a boil. Boil for 10 minutes then drain and return the ginger to the pot.
  • Next, add water to the ginger pieces in the pot until the water is deep enough to just barely cover the ginger, taking care to measure how much water you add- you'll add equal parts sugar!!! Very important!!! Add a small pinch of salt.
  • Next, add the same amount of sugar to the pot and stir to combine. Heat over medium until it comes to a boil. Boil gently for 15 minutes. Ensure you have a low boil and do watch the mixture because as the sugar melts and a syrup forms, you'll need to slightly reduce the heat to maintain a low boil.
  • After 15 minutes, pour through a strainer to separate any syrup from the ginger pieces. This syrup is liquid gold, it's a ginger simple syrup, so we always strain into a mixing bowl versus down the drain!
  • Once you have your ginger separated, shimmy the strainer side to side to ensure you've separated as much syrup as possible. Add 1/4 cup sugar to the ginger pieces and stir to coat.
  • Place the candied ginger in a single layer on a piece of parchment paper or on a baking sheet with a drying rack and leave at room temperature for 4-24 hours to dry. The amount of time it takes to dry depends on how thick you ginger pieces are, the thicker they are the longer they will take to dry.
  • Once fully dry store in an air-tight container away from light and heat for up to 3 months!

Crystallized ginger is the secret ingredient to my favourite pound cake. It was available briefly and then disappeared off the shelves. I have made this version a few times and find it excellent. I do not include the 8-10 hour drying time in the prep.

1 lb fresh gingerroot, peeled and sliced into 1/4 inch thick slices
water, as required
sugar, as required
1/2 cup extra sugar

Steps:

  • Dry peeled and sliced ginger in a 140F oven for 8-10 hours. Cool. Place in saucepan with enough water to cover.
  • Boil over medium heat until ginger is tender, about 30 minutes. Drain and cool.
  • Measure ginger slivers and place in saucepan with equal amounts of sugar (about 3 cups) plus 3 tblsps of water. Simmer ginger slowly until sugar is dissolved, stirring frequently. Continue to simmer, stirring occasionally, until ginger becomes transparent and syrup has nearly evaporated.
  • Remove several slivers at a time with slotted spoon and place in paper bag containing 1/2 cup sugar. Shake to coat with sugar then remove to dry on waxed paper.
  • Store in an airtight glass jar.

  • Peel the ginger. I find this easiest with a spoon, following this method. You can even steep these skin pieces for a very light tea (if organic).
  • Add all of the ginger to a large pot with enough water to cover the pieces entirely and the juice from ½ a lemon. I used about 8 cups/2 l of water but you might need a bit more or less depending on how big your pan is.
  • Place the ginger back into the pot with the sugar, vanilla (slice the beans in half lengthwise and scrape all the seeds out into the pot), and remaining ½ lemon juice.
  • During this stage, you can dry the ginger as is or lightly toss it with sugar first. To toss in sugar, I recommend allowing the pieces to dry for 1-2 hours first, so they aren’t super wet, just sticky.
