cooking spray
1 spaghetti squash, halved and seeded
¼ cup butter or margarine
1 small onion, chopped
2 cloves garlic, finely chopped
salt and pepper to taste

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Coat a baking sheet with cooking spray, and place squash halves cut-side down on the sheet. Bake until squash is tender but still crunchy, about 40 minutes. Set aside to cool.
  • Once cool enough to handle, shred squash flesh from rind using a fork. Set aside.
  • Melt butter in a skillet over medium heat. Cook onion and garlic in butter until soft. Add squash to the skillet, and cook until hot. Season with salt and pepper.

1 tablespoon canola oil
1 package (12 ounces) fully cooked chorizo chicken sausage links or flavor of choice, sliced
1 medium sweet yellow pepper, chopped
1 medium sweet onion, halved and sliced
1 cup sliced fresh mushrooms
1 can (14-1/2 ounces) no-salt-added diced tomatoes, undrained
1 tablespoon reduced-sodium taco seasoning
1/4 teaspoon pepper
Chopped green onions, optional

Steps:

  • Halve squash lengthwise; discard seeds. Place squash on a microwave-safe plate, cut side down; microwave on high until tender, about 15 minutes. Cool slightly., Meanwhile, in a large skillet, heat oil over medium-high heat; saute sausage, yellow pepper, onion and mushrooms until onion is tender, about 5 minutes., Separate strands of squash with a fork; add to skillet. Stir in tomatoes and seasonings; bring to a boil. Reduce heat; simmer, uncovered, until flavors are blended, about 5 minutes. If desired, top with green onions.

1 spaghetti squash, halved and seeded
1 tablespoon extra-virgin olive oil
salt and freshly ground black pepper to taste
1 tablespoon freshly grated Parmesan cheese, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place the squash halves into a large baking dish with the cut-sides facing down.
  • Bake in the preheated oven until easily pierced with a knife, about 40 minutes. Cool squash for 10 minutes.
  • Shred the inside of the squash with a fork and transfer to a bowl. Add olive oil, salt, and pepper to shredded squash and toss to coat. Serve with Parmesan cheese.

1 medium spaghetti squash (about 8 inches)
1 cup water
1 pound lean ground beef (90% lean)
1 large onion, chopped
1 medium green pepper, chopped
1 teaspoon garlic powder
2 teaspoons dried basil
1-1/2 teaspoons dried oregano
1 teaspoon salt
1/2 teaspoon pepper
1/4 to 1/2 teaspoon chili powder
1 can (28 ounces) tomato puree
1 cup grated Parmesan cheese, divided

Steps:

  • Preheat oven to 375°. Slice squash lengthwise and scoop out seeds. Place squash, cut side down, in a baking dish. Add water and cover tightly with foil. Bake until easily pierced with a fork, 20-30 minutes. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink, breaking into crumbles; drain. Add onion, green pepper, herbs and seasonings; cook and stir until onion is tender, 5-7 minutes. Stir in tomato puree. Cover and cook over low heat, stirring occasionally. Scoop out squash, separating the strands with a fork. Just before serving; stir 1/2 cup Parmesan cheese into meat sauce. Serve sauce over spaghetti squash with remaining 1/2 cup Parmesan cheese.

I make this often with my overload of garden spaghetti squash, my family loves this with fresh grated Parmesan cheese sprinkled on top, I also like to add in some crushed red chili flakes --- prep time does not include roasting the squash.

3 tablespoons olive oil (can use half butter and oil)
1 small onion, chopped
1 -2 tablespoon fresh minced garlic
1 large spaghetti squash, roasted
1/4-1/2 teaspoon seasoning salt (or to taste) or 1/4-1/2 teaspoon white salt (or to taste)
fresh ground black pepper (to taste)
freshly grated parmesan cheese (optional)

Steps:

  • Using a fork remove all the stringy pulp from the roasted spaghetti squash and place in a bowl.
  • Heat olive oil in a large skillet over medium-high heat; add in onion and saute for about 5 minutes or until tender.
  • Add in garlic and cook stirring for 1 minute.
  • Add in the squash pulp, seasoned salt and cook for about 5 minutes stirring, tossing with a spoon while cooking.
  • Season with fresh ground black pepper to taste.
  • Sprinkle with Parmesan cheese.

1 cup onion, diced
1 cup green bell pepper, diced

2 cups tomato, diced

½ teaspoon dried oregano
1 medium spaghetti squash
1 cup shredded mozzarella cheese, divided
green onion, to serve

Steps:

  • Preheat oven to 350°F (180°C).
  • Heat the olive oil over medium heat in a large skillet.
  • Add the turkey and cook until browned, about 5-6 minutes.
  • Add the onion, bell pepper, salt, and pepper. Cook for 5-6 minutes.
  • Add the tomatoes, garlic, thyme, basil, and oregano. Cook for 2-3 minutes.
  • Add the spaghetti squash. Cook for 4-5 minutes until most of the liquid has cooked off.
  • Add half of the mozzarella and stir until cheese has melted, about 1-2 minutes.
  • Remove from heat and ladle the mixture into a baking dish.
  • Bake for 20 minutes.
  • Carefully remove then add the remaining mozzarella cheese.
  • Bake for an additional 10 minutes.
  • Carefully remove and allow to cool for 5-10 minutes.
  • Garnish with green onions, if desired and serve.

1 pkg. (6 oz.) KRAFT Finely Shredded Parmesan Cheese, divided

Steps:

  • Pierce squash in several place with fork. Microwave on HIGH 15 min. or until tender; cool slightly.
  • Heat oven to 400°F. Halve squash; remove and discard seeds. Scrape squash into strands with fork; set aside.
  • Heat oil in large ovenproof skillet over medium heat. Add onions; cook, stirring frequently, 5 min. or until crisp-tender. Add squash, pasta sauce, beans, crushed red pepper and 1 cup cheese; mix lightly. Bring to boil, stirring frequently.
  • Use bottom of 1/3-cup measuring cup to make 6 wells in squash mixture. Slip 1 cracked egg into each well; top with remaining cheese.

2 tablespoons olive oil
1/2 cup minced onion
3 -4 cloves garlic, minced
2 green onions, finely chopped
12 ounces cooked chicken or 12 ounces cooked turkey
2 cups canned crushed tomatoes
1/4 cup dry red wine
2 teaspoons capers
2 1/2 teaspoons fresh oregano or 1 teaspoon dried oregano
1 teaspoon crushed red pepper flakes, to taste
3 tablespoons Italian parsley, finely chopped

Steps:

  • Heat the oil in a skillet over medium high heat, sauté onion, garlic and green onions for 2 minutes.
