Time 2h45m

Yield 4 servings

Number Of Ingredients 27

4 tablespoons ground cumin
4 tablespoons ancho chile powder
3 tablespoons kosher salt
1 tablespoon freshly ground black pepper
2 racks pork ribs, 12 ribs each, excess fat trimmed
Canola oil
Steaming Liquid, recipe follows
Guava Glaze, recipe follows
Orange-Habanero Mojo, recipe follows
1 cup soy sauce, plus more if needed
4 cups water, plus more if needed
3-inch piece fresh ginger, thinly sliced
2 cups guava jelly
1/4 cup Dijon mustard
1/2 cup fresh orange juice
Salt and freshly ground black pepper
2 tablespoons canola oil
1 small red onion, finely chopped
4 cloves garlic, finely chopped
1/2 cup fresh lime juice
2 cups freshly squeezed orange juice
1 teaspoon orange zest
1 teaspoon lime zest
1/2 habanero chile
Salt and freshly ground black pepper
4 sprigs cilantro, leaves chopped
1 teaspoon ground cumin

Steps:

  • Mix together the cumin, ancho, salt and pepper in a small bowl.
  • Heat grill to medium. Rub each rack with a few tablespoons of the spice mixture. Drizzle with oil and grill until golden brown and a crust as formed, about 10 minutes. Remove the ribs to a platter. Using side towels, lift the grate off the grill and place the roasting pan with the Steaming Liquid mixture on top of the coals or heat source. Return the grate to the grill.
  • Return the ribs to the grill, rub side up, brush with some of the Guava Glaze, close the lid and continue grilling the pork, brushing with the guava glaze every 10 minutes until tender, about 1 1/2 hours. (If the steaming liquid evaporates before ribs are tender, add more soy and water to the pan) Remove ribs from the grill to a cutting board, brush with more of the glaze and let rest for 10 minutes. Cut the ribs, place on a platter and drizzle with the Orange-Habanero Mojo.
  • Combine all ingredients in a heavy duty roasting pan.
  • Whisk the guava jelly, Dijon mustard and orange juice together in a medium bowl and season with salt and pepper, to taste.
  • Heat oil in a pan on the side burner of the grill or on the grates. Add onion and garlic and cook until soft. Stir in lime juice, orange juice, zests and habanero, and bring to a boil. Cook until reduced by half, remove habanero and season with salt and pepper. Stir in the cilantro and cumin.

BAKED BABY BACK RIBS

Baked Baby Back Ribs image

Even a barbeque purist cannot scoff at these foil-wrapped, baked and glazed baby back ribs. They're satisfyingly sweet, savory, smoky and flavorful. The meat falls off the bones! Baking in foil also reduces the amount of clean up. You'll be busy enjoying these ribs -- who has time for dishes?

Provided by Food Network Kitchen

Categories     main-dish

Time 3h20m

Yield 4 servings

Number Of Ingredients 13

2 slabs baby back ribs, about 1 pound each (see Cook's Note)
1/4 cup light brown sugar
1 tablespoon chipotle chile powder
2 teaspoons kosher salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon seafood seasoning, such as Old Bay
1/2 teaspoon freshly ground black pepper
1 cup apple cider
2 tablespoons apple cider vinegar
1 tablespoon pure maple syrup
1 tablespoon Worcestershire sauce
2 cloves garlic, minced

Steps:

  • In a small bowl, combine the brown sugar, chipotle chile powder, salt, onion powder, garlic powder, seafood seasoning and black pepper.
  • Place each slab of ribs on a piece of aluminum foil large enough to fold over and seal, then place on a baking sheet. Do not seal the ribs in the foil yet (see Cook's Note). Generously sprinkle the dry rub on both sides of the ribs. Place in the refrigerator, meat-side down and uncovered, for at least 1 hour. Preheat the oven to 300 degrees F.
  • In a small bowl, combine the apple cider, apple cider vinegar, maple syrup, Worcestershire and minced garlic. Pour half the liquid over each slab and tightly seal each in the aluminum foil, crimping the edges to make a packet.
  • Transfer the foil packets and baking sheet to the oven and bake until the meat is tender and starts to pull away from the bones, about 2 hours.
  • Remove the sheet pan from the oven. Carefully open the aluminum packets and pour the braising liquid into a small saucepan. Bring the liquid to a simmer over medium heat until it becomes a thick and syrupy glaze, about 4 minutes.
  • While the braising liquid reduces, line a baking sheet with foil and gently transfer the ribs to it. Position a rack on the top level of the oven and preheat the broiler.
  • Using a pastry brush, generously brush the ribs with about half the glaze. Place the ribs under the broiler for about 1 minute. Brush with the remaining glaze and return to the broiled until charred in spots, about 1 minute more. Slice each rack between the bones into 2-rib portions and serve.

CUBANO MOJITO OVEN-ROASTED BABY BACK RIBS WITH HABANERO & GUAVA-PINEAPPLE TROPICAL BBQ SAUCE

Cubano Mojito Oven-Roasted Baby Back Ribs with Habanero & Guava-Pineapple Tropical BBQ Sauce image

Because our weather in Central New York is less than tropical, we have to figure out ways of keepin' those warm weather flavors coming even when poundin' rain or three-foot drifts make it hard to get to your backyard grill. So here's a way to make ribs in your oven and bring on all the flavors of places with better weather. Our method for makin' ribs in the oven can also be applied to the recipe for Dinosaur-Style Ribs (page 93). All you'll be missin' is the taste of the smoke and the smell of the outdoors, but the ribs will still be fallin'-off-the-bone tender.

Yield feeds 2 to 4

Number Of Ingredients 12

2 racks pork baby back ribs (2 1/2 to 3 pounds)
1 cup Mojito Marinade plus more to use as a mop sauce (page 164)
Black pepper
1 tablespoon vegetable oil
1 tablespoon minced ginger
1 teaspoon minced habanero pepper
2 cups diced fresh pineapple
6 tablespoons guava paste (see note)
1/4 cup lime juice
2 tablespoons lemon juice
1 cup Mutha Sauce (page 165)
1 heaping tablespoon chopped fresh cilantro

Steps:

  • Set the ribs in a shallow roasting pan, and pour the Mojito Marinade over them. Flip the ribs around in it to make sure they're coated all over; then grind on lots of black pepper. Cover and marinate for 4 hours or overnight.
  • Preheat the oven to 250°. Put a wire rack over a jelly roll pan and pour 1 cup of water into the pan. Pull the ribs out of the marinade, scraping off any extra. Set the ribs on the rack, meaty side up. Slide them into the oven and roast slowly. Check every hour or so. If the meat looks dry, mop it lightly with some of the Mojito Marinade.
  • Cook up a batch of sauce while the ribs are roasting. Set a saucepan over medium-high heat. Pour in the oil, and once it gets hot, add the ginger and habanero peppers. Cook for 1 minute. Dump in the pineapple and the guava paste, stirring til the guava paste dissolves. Add the lime and lemon juices and the Mutha Sauce. Simmer for a couple of minutes to blend the flavors. Stir in the cilantro. Set aside and heat up before serving.
  • Check the ribs for doneness after 2 1/2 to 3 hours. They will be done if you can gently tear the meat between the bones or poke your finger through the meat, or if they've reached an internal temperature of at least 180°, or if they bend nicely when you grab them in the middle with a pair of tongs. Once they're tender, glaze the ribs with some of the sauce and keep cooking for 15 to 20 minutes. Or for a caramelized finish, turn on the broiler and get the surface of the ribs sizzling. When they're nicely bronzed, brush with the sauce.
  • Pull the ribs out and let them set for 5 to 10 minutes, then serve with the remaining sauce.

  • Make the rub: Place the sugar, salt, pepper, mustard, and five spice powder in a bowl and mix with your fingers, breaking up any lumps in the sugar or mustard powder.
  • Place the ribs on a baking sheet. Remove the membranes. Sprinkle the ribs on both sides with rub, rubbing it into the meat. Cover the ribs and store in the refrigerator while you set up your grill.
  • Set up the grill for indirect grilling and heat to medium-low. Brush and oil the grill grate.
  • Arrange the ribs, bone side down, in the center of the grate over the drip pan away from the heat. If working on a charcoal grill and using wood chips, toss half on each mound of coals.
  • Spray the ribs with rice wine. Recover the grill and continue cooking until the ribs until well browned and cooked through, yet tender enough to pull apart with your fingers, to 3 hours more, 3 to 4 hours in all.
  • The last few minutes, brush the ribs on both sides with some of the guava barbecue sauce and move them directly over the fire. Grill until the ribs are browned and bubbling, 2 minutes per side.
  • Transfer the ribs to a large platter or cutting board, and cut the racks in half, widthwise (or into individual ribs). Serve at once with the remaining guava sauce on the side.
