CUCUMBER COOLER SLUSHIES

- Peel, seed and chop 2 seedless cucumbers; freeze 2 hours. Chill 4 tall glasses. Blend the frozen cucumbers, 3 ounces gin, 2 ounces elderflower liqueur, 1/2 cup fresh mint and 1/4 cup frozen lemonade concentrate until slushy. Pour into the glasses; top with seltzer and stir. Garnish with cucumber.
CUCUMBER COOLER
I was desperate to come up with some cucumber recipes after my garden mass produced the veggie. I find this is a refreshing treat, especially after mowing the yard. Serve over ice. Garnish with mint, as your taste dictates.

CUCUMBER COOLER
There's no alcohol in our recipe for a cucumber drink flavored with mashed mint leaves and lime, but this lightly sweet beverage is more refreshing than any cocktail.

- In a blender, puree cucumbers and water. Pour through a fine-mesh sieve set over a large bowl, pressing on solids (you should have about 2 cups juice; refrigerate overnight, if desired). In a pitcher, mash fresh mint leaves with back of a wooden spoon until bruised. Add cucumber juice, lime, club soda, and agave nectar or honey; stir to combine. Fill 4 glasses with ice, top with drink, and serve with thinly sliced cucumber.

- Start by grabbing a Ball jar with lid or a cocktail shaker (Ball jars are insanely easier, plus you make the entire drink in one glass!) let's hear it for fewer dishes!
- Add mint or basil, lime, sugar and gin to the jar and gently muddle (press) to release oils from either mint or basil.
- Add your cucumber slices to the jar and 4-6 cubes of ice, cover tightly with lid and shake vigorously for 20-30 seconds.
- Pour the mixture into a glass*, simply top with ice and your favorite tonic water. My favorite tonics are Q Drinks Tonic or their Indian Tonic (more bitter, but a little sweeter than regular tonic to pair better with a London Dry Gin). I paired the sweeter mint with regular Tonic Water and the Indian Tonic with the more earthy basil. Delicious both ways!

- Cut 3-4 very thin slices of cucumber for garnishing. I used a vegetable peeler and peeled along the length of the cucumber to get thin long slices. You can also use a sharp knife to cut the slices. Peel the remaining cucumber and chop it into small pieces. Add the chopped cucumber to a blender along with sugar, mint leaves, and 1 cup of water.
- Strain the mixture using a soup strainer. Use a spoon to mash the pulp and get the maximum liquid out of it. Discard the pulp.
- Take 2 glasses and add one thin slice of cucumber to each glass. Add a few ice cubes to each glass. Pour the drink into the glasses. Garnish with lime ring and mint leaves. Serve immediately.
