RANCH DEVILED EGGS

Steps:
- Put the eggs in a saucepan and cover with cold water by 1 inch. Bring to a boil; reduce the heat to low and simmer 10 minutes.
- Drain the eggs and transfer to a bowl of ice water to cool; peel and halve lengthwise. Scoop out the yolks and transfer to a bowl.
- Add the mayonnaise, sour cream, horseradish, mustard, 1/4 teaspoon salt and a few grinds of pepper; mash until smooth. Stir in the diced cucumber and the parsley, chives and dill. Spoon the filling into the egg whites; top each with a cucumber wedge. Refrigerate 30 minutes to 1 hour.

Steps:
- Hard boil eggs.
- Cut length wise.
- Remove cooked yokes to separate bowl (set aside sliced egg white for use later).
- De-seed, grate, and squeeze any remaining liquid from cucumbers & add to yokes.
- Add onion, dill, pickle, & mayo to yokes.
- Mix/Mash together until you have a creamy mixture.
- Take spoonfuls of the mixture and add to the centers of the egg whites where the yokes used to be.

Steps:
- 1. Place eggs in a saucepan and cover with cold water. Bring to a boil. Turn off heat, cover and let sit in the hot water for 15 minutes. Run under cold water and peel under running water.
- 2. Slice the hard-boiled eggs in half lengthwise and gently remove the yolks. Transfer the yolks to a prep bowl. Stir in the mayonnaise (or yogurt), vinegar, dill, garlic powder and paprika. Gently fold in the diced cucumber; season with salt and pepper.
- 3. Arrange the egg halves on a platter and fill the cavities with the yolk mixture. Top each with a cucumber slice and a light sprinkle of coarse salt; cover and refrigerate until ready to serve.

- Carefully slice hard boiled eggs in half.
- Cut and drain cucumber, by letting cucumber sit in a colander for about 5 minutes.
- Mix all ingredients with egg yolks together, (except reserved shrimp and fresh herbs) gently. Spoon back into empty hard boiled egg shell.
- Gently place the reserved shrimp on top of the egg yolk mixture, adding a small sprig of fresh herb.
- Serve with a little toast point or cracker.
