CUCUMBER-MINT MARGARITA
This recipe is sponsored by Cointreau. We take advantage of the end-of-summer abundance of cucumbers and fresh mint and update The Original Margarita, one of the most popular classic cocktails in the country. The recipe has been around for over 70 years and is still made with just three simple ingredients: Cointreau, tequila and lime. In this version, we start by muddling the cucumber and mint until both are fragrant and the mint has released its natural oils. Cointreau elevates this cocktail with its highly aromatic yet balanced flavor profile. Once shaken with plenty of ice and served in a glass with a salt rim, it is the most refreshing cocktail you will have this season.

Steps:
- Rub the rim of a rocks glass with 1 lime wedge, then dip the rim in coarse salt.
- Muddle the mint and cucumber in a cocktail shaker with a muddler or the handle of a wooden spoon until the cucumber is broken up and the mint is bruised, 5 to 6 times. Add the Cointreau, tequila and lime juice. Fill the shaker three-quarters of the way with ice and shake well. Pour into the prepared glass and garnish with the remaining lime wedge.
CUCUMBER MINT RAITA
Steps:
- Transfer the yogurt to a large glass mixing bowl. Whisk until smooth, about a minute. Fold in the cucumbers, mint, honey and cumin. Stir until completely incorporated. Finish with the lemon juice and salt and pepper to taste. Cover with plastic and chill until ready for use. Serve garnished with the lemon zest and mint. Can be made ahead of time and refrigerated in an airtight container for up to 3 days.
CUCUMBER-MINT MARTINI
This cucumber-mint martini is beyond refreshing! It pairs perfectly with any shrimp dish you might have as well as any appetizers that contain cilantro. It is crisp to the taste and sure to impress! As you make more and more of these you will find that they're actually quite easy to make.

- Set 2 ice cubes aside. Place remaining ice cubes in a martini glass and fill with water to chill the glass.
- Combine 3 slices cucumber, mint, and melon liqueur in a cocktail shaker. Mash thoroughly with a cocktail muddler. Add lemon-flavored vodka, vermouth, and 2 reserved ice cubes; cover and shake vigorously until the outside of the shaker becomes frosty; this is how you know the liquid is the same temperature as the ice.
- Dump the ice water from the martini glass. Strain martini into the glass and garnish with remaining cucumber slice.

- Combine water and sugar in a saucepan over medium heat; stir until sugar has dissolved, 5 to 7 minutes. Remove from heat and pour into a container. Place simple syrup in the freezer to quickly chill, about 15 minutes.
- Meanwhile, peel 3 cucumbers and place into a juicer; process to yield about 2 cups juice. Run through a strainer to remove excess pulp. Combine cucumber juice, tequila, lime juice, and chilled simple syrup in a large pitcher. Chill in the refrigerator for at least 1 hour.
- Slice remaining cucumber for garnish. Moisten rims of glasses using lime wedge. Pour salt into a small plate and dip each glass to coat rims. Place about 3/4 cup ice into a cocktail shaker. Stir cucumber mixture, pour some into the shaker, and shake for 10 seconds. Pour into prepared glasses. Repeat with remaining mixture. Garnish glasses with cucumber slices.
