ANDY'S SPICY GREEN CHILE PORK



Andy's Spicy Green Chile Pork image

Rich spicy recipe for slow cooking pork. This makes for excellent tacos, enchiladas, etc. We crave this pork, and you will too.

1 white onion, chopped
salt and pepper to taste
2 ½ pounds pork shoulder roast
1 (16 ounce) jar green salsa (such as Frontera®)
½ cup chopped fresh cilantro
2 serrano chile peppers, or to taste

Steps:

  • Layer the chopped onion into the bottom of a slow cooker. Season the pork shoulder with salt and pepper; place atop the chopped onion. Pour the green salsa over the pork. Sprinkle the the cilantro over the salsa and pork. Drop the serrano chile peppers into the slow cooker.
  • Cook on Low until the meat falls apart easily, about 8 hours. Gently remove the pork to a cutting board. Strain and discard about half the remaining liquid from the slow cooker, reserving the rest. Discard the onions, peppers, and cilantro if desired.
  • Shred the pork shoulder with a pair of forks. Mix the pork with the reserved liquid from the slow cooker to serve.

1-1/4 pounds pork tenderloin
2 tablespoons olive oil, divided
1/2 teaspoon salt
1/2 teaspoon pepper
1 large onion, thinly sliced
2 green peppers, thinly sliced
1 sweet red pepper, thinly sliced
1/4 cup reduced-sodium tamari soy sauce
4 garlic cloves, minced
1 chipotle pepper in adobo sauce, minced
1 tablespoon ground cumin
1/4 teaspoon cayenne pepper
1 can (14-1/2 ounces) chicken broth
3/4 cup maple syrup
1/2 cup honey
Optional: Hot cooked rice

Steps:

  • Brush pork with 1 tablespoon oil and sprinkle with salt and pepper. Grill, covered, over medium-hot direct heat until a thermometer reads 145°, 15-20 minutes, turning occasionally. Remove from heat; let stand 10 minutes., Meanwhile, in a large skillet, cook onion, green pepper and red pepper in remaining 1 tablespoon oil, stirring occasionally until tender, 4-5 minutes. Add soy sauce and cook until reduced by half, 2-4 minutes. Stir in garlic, chipotle pepper, cumin and cayenne; cook 1 minute. Add broth and bring to a boil; reduce heat and simmer until reduced by half, 10-12 minutes. Stir in maple syrup and honey; bring to a simmer. Cut pork into 1-in. cubes; add to sauce. Cook until heated through. Serve with rice if desired.

2/3 cup nonfat sour cream
1/2 cup water
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon dried rubbed sage
1/4 teaspoon black pepper
4 (6 ounce) bone-in center-cut pork chops, trimmed
1/4 teaspoon salt
1/8 teaspoon black pepper
1 teaspoon olive oil
1/2 cup chopped onion
1 (8 ounce) package presliced mushrooms
1/2 cup whiskey

Steps:

  • Combine the first 6 ingredients in a small bowl.
  • Sprinkle pork with 1/4 teaspoon salt and 1/8 teaspoon pepper.
  • Heat the oil in a large nonstick skillet over medium-high heat.
  • Add pork; saute 5 minutes on each side or until golden.
  • Remove pork from pan.
  • Add onion and mushrooms to pan; saute for 3 minutes.
  • Carefully add whiskey to pan; cook for 1 minute or until liquid almost evaporates.
  • Stir sour cream mixture into pan.
  • Return pork to pan; spoon sauce over pork.
  • Wrap handle of skillet with foil.
  • Cover and bake at 300 degrees for 1 hour.
  • Serve immediately.

This is my Inlaws original shortbread recipe from Scotland. I have to make it for all my friends & family and I almost lost the recipe during my last move so I'm putting it here for safe keeping. I think the key is leaving it in the oven overnight to dry.

Number Of Ingredients 5

1 lb butter (no substitutions)
1 cup white sugar, & 4 tbsp
4 cups all-purpose flour
4 tablespoons rice flour
1 nut Crisco (approx 1 tsp)

Steps:

  • Beat 1 cup of sugar together with butter and crisco til creamy. Gradually add all purpose & rice flour until dough forms ball. This is easiest in a kitchaid mixer, but if you do it by hand, you will have to put some muscle into it. Remove from bowl and knead on floured surface for 3-5 minute Press dough into heavy 9X13 pan. Even out with offset spatula. Pierce with fork forming lines to prevent crumbling when slicing into bars.Bake @ 325 oven for 55-60 min being careful not to let it brown. Remove from oven. Slice into bars along perferation marks. Shake remaining 4 tbsp sugar over surface. Put back into turned off oven for overnight to dry.
