RAFFY'S CHICKEN AND RICE



Raffy's Chicken and Rice image

2 tablespoons unsalted butter
1 pound chicken tenders
1 teaspoon kosher salt
1 large red onion, diced
2 cloves garlic, peeled and smashed
1 cup basmati rice
1/2 teaspoon Calabrian chile paste
1 cup milk
1/2 cup low-sodium chicken broth
3 sprigs thyme
2 sprigs sage
One 2-inch piece Parmesan rind
3/4 cup frozen peas
Freshly grated Parmesan, for garnish
Extra-virgin olive oil, to finish

Steps:

  • Heat a medium straight-sided skillet over medium-high heat. Add the butter and melt until the bubbles subside. Sprinkle the chicken tenders evenly on both sides with 1/2 teaspoon of the salt. Add the chicken tenders to the pan in one layer. Cook the chicken until golden brown, about 4 minutes per side (don't worry about them being cooked through at this point). Remove the chicken to a plate and set aside.
  • Reduce the heat to medium. Add the onions and garlic to the pan along with the remaining 1/2 teaspoon salt. Cook, stirring often, until softened and beginning to caramelize, about 4 minutes. Add the rice and chile paste and toast for an additional 2 minutes. Add the milk, chicken broth, thyme, sage and Parmesan rind. Stir to combine. Nestle the chicken pieces and their juices back into the pan in the rice. Cover the pan and reduce the heat to low. Simmer for 15 minutes.
  • Turn off the heat and sprinkle with the peas. Cover and allow the mixture to steam for an additional 12 minutes off the heat. Remove the herbs and rind from the pan, fluff the rice with a fork and serve with grated Parmesan and a drizzle of extra-virgin olive oil.

This is a great busy day casserole that can be made the night before! Leftovers are yummy too! Can be complemented with peas, a green salad, and rolls on the side.

3 (10.75 ounce) cans condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
2 cups white rice
2 cups hot water
2 cubes chicken bouillon
1 (1 ounce) package dry onion soup mix
6 skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Stir cream of chicken soup, cream of mushroom soup, and rice in a large bowl. Mix hot water and chicken bouillon in a bowl until bouillon is dissolved; stir into rice mixture. Spread rice mixture into prepared baking dish and sprinkle with half the onion soup mix. Sprinkle remaining onion soup mix over chicken breasts; arrange chicken in a single layer over rice mixture. Cover with aluminum foil.
  • Cook the chicken breasts until no longer pink in the center and the juices run clear, 2 1/2 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

My DH's speciality, that we all enjoy. Very easy and we usually serve it over plain rice and with a salad. The amount of vegetables can be increased. I haven't tried it but probably it can be done in the oven too. I am not too sure on cooking time either but it's easy to say when it's done.

1 whole chicken
1 tablespoon oil
2 onions
2 potatoes
2 tomatoes
salt
pepper

Steps:

  • Cut up the chicken.
  • Cut the vegetables in round slices about 1 cm thick.
  • Add oil to your pan.
  • Add the onion and the potato slices. Place the chicken on top of them.
  • Add the tomato slices and season.
  • Cover with a lid and let is cook on low. Don't need to stir it.

This recipe is an awesome one for dad to use when Mom goes late at work or when you do most of the cooking. Simple and easily augmented by herbs and other things.

1 (10 3/4 ounce) can mushroom soup
1 can of canned diced tomato (Ro-tel if you like it spicy)
1 cup water
3/4 cup of uncooked regular long grain rice
1/4 teaspoon paprika
1/4 teaspoon black pepper
4 boneless chicken breast halves or 4 bone in chicken breast halves

Steps:

  • Mix soup, water, rice, paprika, tomatoes, and black pepper in a shallow baking dish.
  • Stir and allow to sit for 5-10 minutes.
  • Add chicken on top on mixture, cover with foil and bake at 375 degrees for approximately 45 minutes.(Temperature and time will most likely vary with oven strength)
  • Possible Augmentation(s): Sliced red onion on top of the chicken, Sprinkle grated cheese on the dish during the last five minutes.
  • Add any herb or spice (marjoram, sage, thyme, curry, etc.) to the mixture before cooking.
  • A way to avoid crunchy rice is to soak the rice for about 15-20 minutes before adding to the mixture.
