This recipe works great with other cobbler fruit and is an excellent light dessert that isn't too sweet! Serve with whipped cream or vanilla ice cream.

⅓ cup orange juice
⅔ cup all-purpose flour
¼ teaspoon baking powder
1 pinch salt
½ cup butter, softened
½ cup white sugar
1 egg
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In an 8 inch square baking dish, mix blueberries, 3 tablespoons sugar, and orange juice. Set aside. In a small bowl, thoroughly mix flour, baking powder, and salt. Set aside.
  • In a medium bowl, cream butter and 1/2 cup sugar until light and fluffy. Beat in egg and vanilla extract. Gradually add flour mixture, stirring just until ingredients are combined. Drop batter by rounded tablespoons over blueberry mixture. Try to cover as much of filling as possible.
  • Bake in preheated oven for 35 to 40 minutes, until topping is golden brown and filling is bubbling.

6 cups Granny Smith apples, peeled, cored and diced
1/2 cup granulated sugar
1/4 cup dark brown sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
Pinch salt
Pinch ground nutmeg
1/2 lemon, juiced
Ginger Whipped Cream, recipe follows
2 tablespoons butter, softened
1/2 cup self-rising flour
1/2 cup sugar
Pinch salt
Pinch ground ginger
1 egg, beaten
1 cup whipping cream, chilled
1/4 cup confectioners' sugar
1/4 cup candy ginger, minced

Steps:

  • Preheat oven to 375 degrees F.
  • Lightly butter a 9 by 9-inch baking dish.
  • In a large bowl, mix together the apples, sugars, flour, cinnamon, vanilla, salt, nutmeg and lemon. Add the mixture to the prepared baking dish.
  • Add all the topping ingredients to a medium bowl and combine well with a wooden spoon, to form a batter. Dollop the batter in various spots on top of the apple mixture. The batter will spread as it bakes. Put the cobbler in the oven and bake until the apples are tender and the crust is colored, about 30 minutes. Remove from the oven and serve with Ginger Whipped Cream.
  • Add the cream and sugar to a medium bowl. Using a hand-held electric mixer, beat the cream until stiff peaks form, about 2 to 3 minutes. Fold in the ginger. Cover and chill up to 4 hours before serving.

2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt

1 teaspoon vanilla extract
⅔ cup milk
1 cup fresh raspberries, divided
1 (16 ounce) container cream cheese frosting, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease the entire bottom and sides of a 9-inch cake pan with shortening on a paper towel. Shake 1 tablespoon flour onto the pan until shortening is covered; turn pan over and lightly tap the bottom to remove excess flour.

  • Bake in the preheated oven until lightly golden brown and a toothpick inserted into the center comes out clean, 20 to 25 minutes. Let cool completely, about 30 minutes. Frost as desired and decorate with remaining raspberries.

1 c sugar
3/4 c all purpose flour
2 tsp baking powder
1 pinch salt
3/4 c milk
2 c fresh or canned (drained) peaches

Steps:

  • 1. Melt butter in 8 or 9 inch square baking dish. In medium size bowl, combine sugar, flour, baking powder, salt, and milk. Stir together until combined but do not overmix. Pour mixture over melted butter. DO NOT STIR. Place sliced peaches evenly over batter. DO NOT STIR.
  • 2. Bake in 350 oven 45 - 50 minutes.

  • In a medium saucepan mix together 1 cup of sugar, cornstarch, cinnamon and boiling water. Bring the sugar mixture to a boil over medium heat. Boil 5 minutes stirring occasionally until thickened. Remove from the heat and add the blackberries and any accumulated juices. Stir gently until the blackberries release some juice. Set aside.
  • Cut one of the pastry discs in half and roll out on a lightly floured to about 1/8th inch thick. Cut the pastry into a square roughly the same size as the prepared casserole dish. Reserve any pastry scraps. Place the pastry square on the parchment lined baking sheet and bake until firm, lightly browned with bubbles starting to form on the crust, about 10 minutes. This will be used for the middle layer of the cobbler. Set aside.
