1 pound ground pork
1 teaspoon rubbed sage
1 teaspoon salt
1 teaspoon crushed red pepper
½ teaspoon ground marjoram
½ teaspoon ground black pepper
½ teaspoon onion powder
¼ teaspoon dried thyme leaves
1 tablespoon olive oil

Steps:

  • Combine ground pork, sage, salt, crushed red pepper, marjoram, black pepper, onion powder, and thyme leaves in a large bowl; mix until evenly combined. Form mixture into 10 small patties.
  • Heat oil in a large skillet over medium-high heat. Working in batches, cook patties for 3 minutes. Flip and cook 3 minutes more or until juices run clear. An instant-read thermometer inserted into the center should read at least 160 degrees F (73 degrees C). Transfer patties to a paper towel-lined plate to absorb any excess grease.

12 oz frozen (thawed) bulk hot pork sausage
1/3 cup chopped onion
2 cloves garlic, finely chopped
1 medium red bell pepper, chopped (1 cup)
1 1/2 cups Gold Medal™ all-purpose flour
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1 cup milk
3 eggs
1 1/2 cups shredded Mexican cheese blend (6 oz)

Steps:

  • Heat oven to 425°F. Grease bottom and sides of 13x9-inch (3-quart) glass baking dish with shortening or cooking spray. In 12-inch skillet, cook sausage, onion and garlic over medium heat, stirring frequently, until sausage is no longer pink; drain. Stir in bell pepper; remove from heat.
  • In large bowl, beat flour, salt, crushed red pepper, milk and eggs with wire whisk until smooth. Pour into baking dish. Spoon pork mixture over batter. Sprinkle with cheese.
  • Bake 22 to 27 minutes or until top is golden brown.

1 pound spicy Italian sausage, casings removed
4 cups grated extra-sharp Cheddar
2 cups baking mix, such as Bisquick
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • In a large bowl, combine the sausage, Cheddar, baking mix, garlic powder and salt and knead with your hands until a homogenous dough forms (this will take about 5 minutes). Pinch off golf ball-size pieces of dough, roll them into balls and arrange them 1 inch apart on the prepared baking sheets.
  • Bake until the sausage balls are golden brown and cooked through, about 25 minutes. Let cool for 5 minutes and serve warm or at room temperature. Store any leftover sausage balls in an airtight container for up to 1 week.

1/4 cup sugar
1 tablespoon cornstarch
3/4 cup maple syrup
1 tablespoon butter
2 cups pancake mix
1 large egg, beaten
2 tablespoons canola oil
1 package (7 ounces) frozen fully cooked breakfast sausage links, thawed and halved lengthwise

Steps:

  • Drain peaches, reserving juice; set aside. In a small saucepan, combine sugar and cornstarch; stir in 1/2 cup reserved peach juice until smooth. Bring to a boil. Cook and stir for 1-2 minutes or until thickened. Stir in syrup and butter; set aside and keep warm. , Combine the remaining juice and enough water to measure 1 cup. In a small bowl, combine the pancake mix, egg, oil and juice mixture. Pour into a greased 13x9-in. baking dish. Lay a piece of plastic rap on top of it. With an ice cream scoop, place the sausage into the ring. Lay another piece of plastic wrap on top and smash down with the lid. Perfect size for muffin, egg, cheese and sausage sandwich.

8 slices white bread, crusts removed and cut into cubes
1 lb spicy pork sausage, crumbled and cooked (Italian, bulk, or Jimmy Dean)
1 cup sliced mushrooms
1/4 cup finely chopped onion
2 cloves garlic, minced
1 (4 ounce) can mild green chilies, drained
1 1/2 cups grated sharp cheddar cheese
10 large eggs
2 cups milk
2 tablespoons chopped sun-dried tomatoes
1 tablespoon minced fresh basil
1/4 teaspoon ground sage
2 teaspoons dry mustard
1 teaspoon salt
pepper, to taste (anywhere between 3 dashes to 1/4 teaspoon)
2 dashes Tabasco sauce, to taste

Steps:

  • Cook the sausage until browned well, crumble; set aside.
  • In the same pan, sauté the mushrooms, onion, garlic, and green chiles.
  • Combine the sausage with the mushroom mixture; set aside and let cool.
  • Grease a 9x13-inch glass baking dish and fill the bottom with the prepared bread cubes; top with sausage mixture then the cheese.
  • Beat together the eggs, milk, sundried tomatoes, basil, sage, dry mustard, salt, pepper, and Tabasco; pour over sausage and cheese in the baking pan.
  • (This dish can be prepared a day ahead- at this point you'd cover it with plastic wrap and put it in the refrigerator.) In the morning, remove the casserole from the refrigerator and set it out on the counter for 30 minutes.
  • Preheat oven to 350 degrees F.
  • Uncover and bake casserole until it's golden and puffy and the center is set, about 50 to 60 minutes.
  • Cut into squares and serve.
  • If you want it especially spicy, chop up a jalapeno and sauté it along with the onion and mushrooms; you can also substitute O'Brien potatoes for the bread; you can even substitute vegetarian sausage for the meat!

1 1/2 cups monterey jack cheese, shredded
1 (9 ounce) box frozen asparagus cuts, thaw

3/4 cup milk
2 tablespoons parmesan cheese, shredded

Steps:

  • Preheat oven to 350 degrees. Spray 8 inch square (2 qt.) glass baking dish with non-stick cooking spray.
  • In 8 inch skillet cook sausage over medium heat for 8-10 minutes, stirring occasionally until no longer pink; drain.
  • In baking dish, layer half of the thawed potatoes, half of the the monterey jack cheese, the sausage, asparagus, remaining potatoes and cheese.
  • In a medium bowl, beat eggs and milk until well blended. Pour evenly over potato mixture.
  • Cover tightly with foil; bake 1 hour. Uncover dish; sprinkle with parmesan cheese. Bake uncovered 15-20 minutes longer or until knife inserted in center comes out clean. Let stand 5 minutes before serving.
