Categories     Main Dish Recipes

Time 55m

Yield 4

Number Of Ingredients 8

4 large green bell peppers, tops and seeds removed
½ pound ground beef
½ pound Italian sausage
1 small onion, chopped
½ cup spaghetti sauce with mushrooms
1 cup grated mozzarella cheese, divided
½ cup ricotta cheese
½ cup cooked white rice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a pot of lightly salted water to a boil. Reduce heat to medium-high to maintain a rolling simmer. Cook peppers until starting to get soft, about 5 minutes. Transfer to a paper towel-lined plate to drain.
  • Heat a nonstick skillet over medium heat. Add ground beef, sausage, and onion. Cook and stir, breaking up the beef, until onion is soft and meat has lost all its pink color, 5 to 6 minutes. Transfer to a bowl with a slotted spoon.
  • Mix spaghetti sauce, 1/2 cup mozzarella cheese, ricotta cheese, and cooked rice into the beef mixture. Divide among 4 bell peppers and transfer peppers to a baking dish. Sprinkle remaining mozzarella cheese on top of the peppers.
  • Bake in the preheated oven until cheese melts and begins to brown, 25 to 30 minutes.

Categories     Main Dish Recipes     Pasta     Lasagna Recipes     Meat Lasagna Recipes

Time 45m

Yield 6

Number Of Ingredients 15

18 jumbo pasta shells
1 ½ pounds ground beef
2 tablespoons chopped onion
1 (12 ounce) can tomato paste
1 (14 ounce) can tomato sauce
½ teaspoon salt
½ teaspoon dried oregano
½ teaspoon garlic powder
2 eggs
3 cups cottage cheese
1 (16 ounce) package shredded mozzarella cheese, divided
½ cup grated Parmesan cheese
2 tablespoons dried parsley
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Fill a large pot with lightly-salted water and bring to a rolling boil; stir in the shell pasta and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has nearly cooked through but still very firm to the bite, about 5 minutes. Drain well and rinse with cold water.
  • While the shells are cooking, heat a large skillet over medium-high heat; cook and stir the beef and onion in the hot skillet until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease; stir in the tomato paste, tomato sauce, salt, oregano, and garlic powder. Bring to a simmer and cook for 5 minutes. Spread half of the sauce into a 9x13-inch baking dish.
  • Beat the eggs in a mixing bowl. Stir in the cottage cheese, 3/4 of the mozzarella cheese, Parmesan cheese, parsley, salt, and pepper. Spoon the cheese mixture into the shells and set them into the prepared baking dish. Once all the shells have been filled, pour the remaining meat sauce over the shells and sprinkle with the remaining mozzarella cheese.
  • Bake in the preheated oven until the shells are hot in the center and the mozzarella cheese is melted and bubbly, 25 to 30 minutes.

DAD'S LASAGNA

Dad's Lasagna image

Like my father's rib recipe which I've also posted, this is a recipe which some old buddies of mine recently requested that I post. Back when we all were a little younger, the guys used to come over everytime my Dad made his lasagne. Maybe it was the free meal or maybe it was just that good but this recipe is the reason why lasagna has always been one of my favorite foods. I know that you can substitute ground beef for the sausage (or use both combined) with equal success. I've posted this as 6-10 servings but I know from experience that 4 big guys can polish this off and still ask for more.

Provided by Nurbel

Categories     Pork

Time 1h5m

Yield 6-10 serving(s)

Number Of Ingredients 13

1 lb Italian sausage
1 garlic clove, minced
1 tablespoon whole basil
1 1/2 teaspoons salt
1 lb canned tomato
12 ounces canned tomato paste (2 cans usually)
10 ounces lasagna noodles
2 eggs
3 cups fresh ricotta or 3 cups cream-style cottage cheese
1/2 cup grated parmesan cheese or 1/2 cup romano cheese
2 tablespoons parsley flakes
1 teaspoon pepper
1 lb mozzarella cheese, sliced very thin

Steps:

  • Remove sausage skins and break up the sausage in frying pan.
  • Brown meat slowly and spoon off excess fat.
  • Add garlic, basil, 1 1/2 teaspoons salt, tomatoes and tomato paste.
  • Simmer, covered for 15 minutes; stir often.
  • Set aside when finished.
  • Meanwhile, cook noodles in boiling salted water until tender; drain; rinse.
  • In a large bowl, beat eggs; add Ricotta, Parmesan, Parsley, pepper and a tsp of salt.
  • Mix well.
  • Now in a 13x9x2 inch baking dish; Layer half the noodles; spread with half the Ricotta cheese/egg mixture; add half the thinly sliced mozzarella and then half the meat sauce.
  • Repeat.
  • Bake at 375 F degrees for about 30 minutes.
  • Alternatively, you could refrigerate until later and then bake for 45 minutes.
  • Either way let the lasagna stand for 10 minutes before serving.

STUFFED LASAGNA PIE

Stuffed Lasagna Pie image

Here are traditional lasagna flavors in a party-stopping timpano presentation. The lasagna noodles create a crisp shell for the traditional fillings within: meat sauce, cheese and sausage.

Provided by Food Network Kitchen

Categories     main-dish

Time 3h

Yield 8 to 10 servings

Number Of Ingredients 23

Kosher salt
One 16-ounce box dried curly-edge lasagna noodles (not no-bake)
2 tablespoons breadcrumbs
3/4 cup plus 2 tablespoons grated Parmesan
Nonstick cooking spray
3 cloves garlic, crushed
1 carrot, cut into chunks
1 stalk celery, cut into chunks
1/2 onion, cut into chunks
2 tablespoons extra-virgin olive oil, plus more for brushing
4 links sweet Italian sausage (just under 1 pound)
1 pound 80-percent lean ground beef
1 pound ground pork
1/2 cup tomato paste
1 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
1/2 cup dry white wine
1 pound fresh ricotta
1 large egg, beaten
1/2 cup fresh basil leaves, chopped, plus sprigs for garnish
1/2 cup fresh Italian parsley leaves, chopped
8 ounces low-moisture mozzarella, sliced
2 cups marinara sauce, warmed

Steps:

  • Preheat the oven to 400 degrees F. Bring a large pot of salted water to a boil. Cook the noodles until pliable but still very al dente, about 3 minutes less than the package cooking time. Drain, but do not rinse. (The starch from the noodles will help them stick to the sides of the pan.) Spread on a baking sheet. Cut 4 of the noodles crosswise into thirds.
  • Toss the breadcrumbs and 2 tablespoons Parmesan together in a small bowl. Spray a 10-inch tube pan with cooking spray. Coat with the Parmesan breadcrumbs, tapping out the excess.
  • Combine the garlic, carrot, celery and onion in a food processor or mini food processor and process to a paste.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Prick each sausage with a fork and cook until browned, 5 to 6 minutes; remove and set aside. Add the remaining tablespoon olive oil to the skillet and crumble in the beef and pork. Cook, breaking up with a wooden spoon, until browned, about 4 minutes. Add the aromatic paste from the food processor. Cook, stirring occasionally, until it dries out, about 3 minutes. Make a space in the middle of the pan and add the tomato paste. Cook, stirring the tomato paste until it darkens a shade or two, about 2 minutes, then stir into the meat. Season with the oregano, red pepper flakes and 1/2 teaspoon salt. Add the white wine and cook until reduced by half, about 1 minute. Add 1 cup water and simmer rapidly until very thick, 4 to 5 minutes.
  • Combine the ricotta, egg, basil, parsley and 1/2 cup Parmesan in a medium bowl.
  • Line the prepared pan with the whole lasagna noodles, overlapping slightly. Spread about half of the meat sauce in the bottom of the pan on top of the noodles. Nestle the sausages into the meat sauce, pressing down to submerge them about halfway. Top with a third of the sliced mozzarella, breaking the slices to fit. Top with half of the cut noodle pieces and press down gently. Spread the ricotta mixture over the noodles and top with another third of the mozzarella. Top with the remaining cut noodles and press again. Spread over the remaining meat sauce and top with the remaining mozzarella. Fold over the noodles used to line the pan to encase the filling and brush with olive oil. Sprinkle with the remaining 1/4 cup Parmesan.
  • Cover the timpano with foil and bake until heated through, 30 to 35 minutes. Uncover and bake until the top is crisp and golden-brown, about 30 minutes more. Let rest 45 minutes to 1 hour before unmolding. Run an offset spatula or butter knife around the edges of the pan to ensure it can be removed with ease. Unmold the lasagna by inverting it onto a serving platter. Arrange the basil sprigs in the middle. Slice with a serrated knife and serve with the marinara on the side.

LASAGNA-STUFFED CROISSANT

Lasagna-Stuffed Croissant image

A fabulous lasagna-style stuffed croissant, of sorts, but without the noodles! A childhood favorite that started with my great-grandmother.

Provided by Cindy L.

Categories     Main Dish Recipes     Pasta     Lasagna Recipes     Meat Lasagna Recipes

Time 1h

Yield 8

Number Of Ingredients 16

½ pound ground pork sausage
½ pound ground beef
1 (6 ounce) can tomato paste
¾ onion, chopped
1 tablespoon dried parsley flakes
½ teaspoon dried basil
½ teaspoon dried oregano
1 pinch garlic powder, or to taste
salt and ground black pepper to taste
1 cup cottage cheese
¼ cup grated Parmesan cheese
1 egg
2 (8 ounce) tubes refrigerated crescent rolls
½ cup shredded Monterey Jack cheese, or to taste
2 teaspoons milk, or as needed
2 tablespoons sesame seeds

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir pork and beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Blot meat with paper napkins to remove as much grease as possible.
  • Add tomato paste, onion, parsley, basil, oregano, garlic powder, salt, and pepper to the browned meat. Reduce heat to medium-low. Mix well and simmer the meat filling, uncovered, for 5 minutes.
  • Meanwhile, mix cottage cheese, Parmesan cheese, and egg together for the cheese filling.
  • Unroll crescent rolls and press together to form a rectangle of dough. Place on an ungreased baking sheet, with the short sides of the dough hanging over the long edge of the baking sheet.
  • Spread 1/2 of the meat filling down the middle of the dough. Spoon cheese filling on top. Layer remaining meat filling over the cheese. Add Monterey Jack cheese on top. Pull sides of dough across one another to form a loaf, sealing all open edges. Brush top of loaf with milk and sprinkle sesame seeds on top.
  • Bake in the preheated oven until deep golden brown in color, 20 to 25 minutes.

CHICKEN AND STUFFING LASAGNA

Chicken and Stuffing Lasagna image

One of my favorite recipes is my aunt's Chicken Stuffed Shells. Unfortunately, it isn't what you could consider a healthy recipe -- pasta shells stuffed with a mixture of chicken, stove top stuffing, and mayonnaise, all drenched in a sauce made up of mostly butter and heavy cream. In my quest to make a healthier version, I used stove-top stuffing with no added butter, added broccoli to the filling, used reduced fat miracle whip, and opted for whole wheat lasagna noodles rather than regular jumbo shells. This recipe was a lot of work but turned out to be a delicious slimmed down version of my mom's stuffed shells. You could also make this ahead of time and freeze!

Provided by MariaMiller

Categories     One Dish Meal

Time 2h15m

Yield 12 pieces, 12 serving(s)

Number Of Ingredients 9

2 cups chicken breasts, cooked and diced
1 (6 ounce) box chicken flavor stuffing mix (prepared, without butter)
1 (16 ounce) bag frozen broccoli florets, steamed and chopped
1 cup Miracle Whip light
2 stalks celery, chopped
1 small onion, chopped
2 (10 3/4 ounce) cans cream of chicken soup, 98% fat free
1 (10 3/4 ounce) can skim milk
9 -12 whole wheat lasagna noodles

Steps:

  • Saute onion and celery until translucent and tender.
  • Boil lasagna noodles as directed.
  • In a large bowl, mix chicken, stuffing, chopped broccoli, miracle whip, and celery/onion mixture.
  • To make the "sauce", in a separate bowl, empty the cans of soup.
  • Refill one can with skim milk and add to the soup, season with salt and pepper, and whisk until combined.
  • Spray a 9x13 pan with cooking spray, then coat the bottom with about a cup of the sauce.
  • Lay 3 lasagna noodles into the pan and drizzle with a bit more sauce.
  • Top with half of the chicken/stuffing mixture and more sauce.
  • Repeat, adding lasagna noodles, sauce, chicken/stuffing mixture, and more sauce, making sure to reserve some sauce for the top.
  • Top with the remaining 3 lasagna noodles and the rest of the sauce.
  • Bake for 1 hour, covered with aluminum foil.
  • Remove from oven and let sit 15-20 minutes.
  • Enjoy with a nice green salad.
