My dad makes blueberry pancakes for us every Saturday without fail. The combination of oats, cornmeal and buttermilk in the batter gives the pancakes heartiness we can't resist. -Gabrielle Short, Pleasant Hill, Iowa

Number Of Ingredients 13

1 cup all-purpose flour
3 tablespoons cornmeal
3 tablespoons quick-cooking oats
3 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Dash ground nutmeg
1 large egg
1-1/2 cups buttermilk
2 tablespoons canola oil
1 teaspoon vanilla extract
1 cup fresh or frozen blueberries

Steps:

  • In a large bowl, whisk the first 8 ingredients. In another bowl, whisk egg, buttermilk, oil and vanilla until blended. Add to flour mixture; stir just until moistened (batter will be lumpy). Let stand 15 minutes., Lightly grease a griddle or large nonstick skillet; heat over medium heat. Stir blueberries into batter. Pour batter by 1/4 cupfuls onto griddle or skillet. Cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is brown.

1 cup all-purpose flour
1 ⅓ cups dry milk powder
1 teaspoon baking powder
1 ½ teaspoons baking soda
1 teaspoon salt
2 cups whole wheat flour
¾ cup white sugar
4 eggs, lightly beaten
3 cups water
¼ cup butter, melted
3 tablespoons vinegar

Steps:

  • In a large bowl, sift all-purpose flour, milk powder, baking powder, baking soda and salt. Stir in whole wheat flour. In a small bowl, combine sugar, eggs, water, butter and vinegar. Make a well in the flour mixture, and pour in the egg mixture. Mix until smooth.
  • Heat a lightly oiled griddle or frying pan over medium heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.

This secret family pancake recipe was passed down from my grandfather. He fed a family of 7 (including 4 growing boys!) on these pancakes, and refused to give anyone the recipe until he finally relinquished it to my mother (his daughter-in-law) before he passed away. It is a long-standing family favorite!

1 cup all-purpose flour
¼ cup white sugar
1 tablespoon baking powder
¼ teaspoon salt
1 cup milk, at room temperature
1 egg, at room temperature
1 tablespoon oil
2 teaspoons oil, or as needed

Steps:

  • Combine flour, sugar, baking powder, and salt in a bowl; make a 'well' in the center of the flour mixture. Pour milk, eggs, and 1 tablespoon oil into the well. Mix until well moistened.
  • Place a griddle over medium-high heat; sprinkle a few drops of water onto the griddle. If the droplets bounce, the griddle is ready; add 2 teaspoons oil.
  • Spoon batter onto the griddle; cook until bubbles form and the edges are dry, 3 to 5 minutes. Flip and cook until browned on the other side, 3 to 5 more minutes. Repeat with remaining batter.

Our family has pancakes every Saturday morning and this is the recipe that I've been using for years. My son likes it so much, he doesn't even use syrup. The rest of my family only uses real maple syrup.

Number Of Ingredients 8

1 cup all-purpose flour
1 tablespoon turbinado sugar (raw) or 1 tablespoon sugar
2 teaspoons double-acting baking powder
1/4 teaspoon salt
1 egg
1 cup skim milk (non-fat, skim delux, 2% or whole can be used instead)
2 tablespoons light olive oil
1 teaspoon pure vanilla extract

Steps:

  • Preheat to medium heat a large non-stick griddle. We use a double burner griddle.
  • In a large mixing bowl, mix together the dry ingredients.
  • In another bowl, beat the egg and then mix together the remaining moist ingredients.
  • Dump the wet ingredient mixture to the dry mixture.
  • Stir until everything is just blended. You will still have some lumps. (O.K. to break up any very large lumps).
  • Put a very light coat of oil onto the pan. I do this by putting a small amount of oil onto the pan and spread out using part of a paper towel and a spatula.
  • Put about 1/6 of the batter onto the hot skillet (I can cook 3 at a time). Cook until the edges appear dry and top of pancake bubbly. The bottom should be golden brown before turning.
  • Turn and cook until golden on the other side.
  • Serve with real maple syrup and butter.
  • Makes 6 large pancakes.

You can also try adding blueberries, bananas, or chocolate chips to the batter. From a Better Homes and Gardens cookbook, with the addition of my dad's not-so-secret ingredient (vanilla).

2 cups flour
2 eggs
4 tablespoons oil, plus more for greasing

Steps:

  • Combine flour, sugar, baking powder, and salt in a mixing bowl.
  • Beat the eggs in a smaller mixing bowl. Add milk, eggs, oil, and vanilla.
  • Pour the liquid mixture into the dry mixture, and stir to combine.
  • Spoon about 1/2 cup onto a hot, greased griddle and cook until the underside is brown.
  • Flip and cook until the other side is brown as well.
