Fun new twist on Banana Cream Pie that's made of a crust with Cocoa Puffs® cereal instead of graham crackers.

2 1/2 cups Cocoa Puffs™ cereal
1/3 cup butter, melted
1 package (4-serving size) banana cream instant pudding and pie filling mix
1 1/4 cups milk
1/2 cup Cool Whip frozen whipped topping, thawed
2 medium bananas, sliced (1 cup)
Additional Cool Whip frozen whipped topping, thawed
Additional sliced banana
Additional Cocoa Puffs™ cereal, crushed

Steps:

  • Heat oven to 350°F.
  • In food processor or blender, place the 2 1/2 cups cereal. Cover; process until cereal is finely crushed. With processor running, pour melted butter into bowl through feed tube; process until just combined. Lightly press crumb mixture in bottom and up side of ungreased 9-inch glass pie plate. Bake 8 minutes; cool completely on cooling rack, about 20 minutes.
  • Meanwhile, in medium bowl, beat dry pudding mix and milk with whisk 2 minutes. Fold in whipped topping.
  • Arrange banana slices evenly in bottom of crust; top with pudding mixture. Cover; refrigerate at least 4 hours. Serve with toppings. Cover and refrigerate any remaining pie.

1/2 c. (1 stick) unsalted butter, melted, plus more for pie plate
10 Oreo cookies, broken into pieces
4 c. Cocoa Puffs cereal, divided
2 tbsp. cornstarch
1/2 c. plus 1 tablespoon sugar, divided
1 1/2 c. whole milk
3 large egg yolks
6 oz. bittersweet chocolate, chopped
2 tsp. pure vanilla extract
1/2 tsp. salt
2 ripe bananas, sliced
2 c. heavy cream

Steps:

  • Butter a deep-dish 9-inch pie plate. Pulse cookies and 3 1/2 cups cereal in a food processor until finely crushed, 8 to 10 times. Add melted butter and process until combined, 30 seconds. Firmly press mixture into prepared pie plate. Freeze 30 minutes.
  • Whisk together cornstarch and 1/2 cup sugar in a medium saucepan. Whisk in milk and egg yolks. Cook over medium heat, whisking constantly, until thickened, 6 to 8 minutes. Continue cooking, whisking constantly, 1 minute. Remove from heat. Whisk in chocolate until smooth. Whisk in vanilla and salt.
  • Arrange banana slices in chilled crust. Top with warm filling. Cover with plastic wrap, pressing it directly on the surface of the pudding; chill at least 8 hours and up to 24 hours.
  • Beat cream and remaining 1 tablespoon sugar on medium-high speed with an electric mixer until soft peaks form, 1 to 2 minutes. Top pie with whipped cream. Garnish with remaining 1/2 cup Cocoa Puffs.

1 teaspoon (1 Teaspoon) vanilla
1 medium banana, sliced
Meringue
3 reserved egg whites
6 tablespoons sugar

Steps:

  • Heat oven to 325°F.
  • Reserve 1/4 cup coconut; set aside.
  • Combine remaining coconut and butter in bowl; press onto bottom and up sides of 9-inch pie pan. Bake 20-25 minutes or until golden brown.
  • Combine 1/2 cup sugar, flour and salt in 2-quart saucepan; stir in milk. Cook over medium heat, stirring constantly, 7-8 minutes or until mixture comes to a full boil.
  • Remove from heat. Stir small amount of milk mixture into egg yolks; return to pan. Reduce heat to low. Continue cooking 1-2 minutes or until slightly thickened. (Do not boil.) Stir in vanilla.
  • Pour half of hot filling into baked crust; cover with banana slices. Top with remaining filling.
  • Increase oven temperature to 375°F.
  • Beat egg whites in bowl at low speed until foamy. Beat at high speed, gradually adding 6 tablespoons sugar, until glossy and stiff peaks form. Spread onto warm filling, sealing to edge of crust. Sprinkle with reserved coconut.
  • Bake 9-11 minutes or until lightly browned. Cool 30 minutes at room temperature. Refrigerate at least 3 hours. Store refrigerated.

1 1/2 ounces bittersweet or semisweet chocolate, chopped
30 chocolate wafer cookies
1 tablespoon sugar
2 to 3 firm, but ripe bananas
2/3 cup granulated sugar
1/4 cup cornstarch
1/8 teaspoon salt
5 large egg yolks, lightly beaten
2 cups whole milk
1/2 cup non-fat evaporated milk
1 3-inch long vanilla bean, split lengthwise and seeds scraped
1 cup heavy cream
2 tablespoons confectioners' sugar, sifted
2 tablespoons sour cream

Steps:

  • 1.To prepare the crust: Lightly dust a 9-inch-diameter glass pie dish with cocoa powder or confectioners' sugar. Melt the butter and chocolate together in a heavy small saucepan over very low heat. Pulse the cookies and sugar in a food processor until the mixture resembles coarse sand. Pulse in the melted chocolate-butter mixture until evenly moistened. Press the crumb mixture evenly into the bottom and up the sides of the dish. Freeze until firm, about 30 minutes.
  • 2.Peel and halve each banana, slice each in half lengthwise. Arrange the bananas cut-side down in concentric circles, on the crust.
  • 3.To prepare the custard: Whisk the sugar, cornstarch, and salt together in a medium saucepan. Vigorously whisk in the yolks, and both milks until smooth. Add the vanilla seeds and pod to the pot. Cook over medium heat, stirring constantly, until mixture starts to thicken and simmer, and reaches about 160 degrees F, about 4 minutes. Once the mixture is simmering, continue to cook 1 minute longer, stirring constantly. Remove from heat, remove the vanilla pod and pour or spread the custard evenly over the bananas. Chill for 2 hours and up to overnight.
  • 4. To prepare the topping: Beat the heavy cream with an electric mixer until it just starts to thicken. Beat in the confectioners' sugar and continue beating until just stiff peaks form. Gently fold in the sour cream, then spoon onto pie to cover the custard. Serve immediately or chill for up to 4 hours.

Steps:

  • For the crust: Adjust an oven rack to the middle position and preheat the oven to 325 degrees F. My grandmother was a wonderful cook, made great pies, and this was my favorite. She always used a homemade pie crust and served it with a dollop of Cool Whip or whipped cream on top. She didn't give me any idea how many bananas to use...so I guessed. She would also use the same custard, making a half batch, for the filling in cream puffs.

4 tablespoons flour
2 tablespoons cornstarch
3 egg yolks
1/2 cup sugar
1/8 teaspoon salt

Steps:

  • TO MAKE FILLING: Mix flour and constarch with 1/3 cup cold milk to make a thin smooth paste, and set aside.
  • In a separate bowl, beat egg yolks, then add sugar and salt and beat well.
  • In a medium saucepan, scald remaining milk, stirring constantly.
  • While you continue stirring the milk in the pot, add a small amount of the scalded milk to the flour paste and a small amount to the egg/sugar mixture.
  • Pour both mixtures into the pot with the scalded milk and stir well.
  • Cook over medium heat, stirring constantly, until thickened. Remove from heat.
  • Add butter and vanilla, and stir well.

  • Refrigerate once the custard has cooled.
  • Serve with whipped cream or Cool Whip.

BANANA COCONUT CREAM PIE

I created this pie as I had some ripe bananas left which I thought would be great in this recipe. To top it off I used my Coconut Whipped Cream recipe #219030. I also had a little of the puff pastry left, so I decorated the top of the pie with some little maple leafs.

1 (3 1/2 ounce) package banana instant pudding (I used Dr. Oetker's cooked pudding and pie filling)
1 (1/3 ounce) package vegan gelatin (I used Kojel)
1 (17 1/3 ounce) package puff pastry (1 sheet)
5 ripe medium bananas (sliced)
3 cups non-dairy whipped topping (divided)
1 cup unsweetened flaked coconut (toasted)

Steps:

  • Open the puff pastry and remove one of the sheets and let it thaw at room temperature for about 40 minutes.
  • Spread your unsweetened flaked coconut on a baking sheet and toast at 350'F for 5-10 minutes. Keep an eye on this as it will brown very fast. Remove as soon as the ends of the coconut become golden. Let cool.
  • For The Pudding:.
  • Prepare the pudding according to the package directions "except" only use one cup of non- dairy milk. This will make the pudding thicker. Once the pudding boils add 1 cup of coconut whipped cream.
  • Give it a good whisk to incorporate.
  • Take it off the heat and add the vegan gelatin and whisk again to break up the gelatin. Whisk for a few minutes until the mixture is smooth. Put a lid on it and set aside for now.
  • Preheat oven to 400'F.
  • To prepare the puff pastry crust:.
  • After the puff pastry has thawed out roll it out to fit into a 9" pie dish. If any holes develop, use water to glue the pastry back together.
  • Place the rolled out pastry into the pie pan and make sure you get all the air bubbles out from underneath. Prick with a fork.
  • Place it into the preheated oven for 15 minutes. I re-pricked the pastry about 7 minutes into the cooking as it did puff up more.
  • Once the puff pastry is golden remove from the oven and put it on a metal rack to cool slightly.
  • Place enough of the sliced banana onto the puff pastry crust to cover the bottom (and sides if you wish).
  • Give the pudding another whisk and then pour it on top of the sliced bananas. Spread it evenly then top with more banana slices.
  • Then spread the remaining two cups of coconut whipped cream on top of the banana slices. Spread it out evenly.
  • Sprinkle the toasted coconut over the coconut whipped cream Put it into the fridge and let it chill for at least 3-4 hours.
  • Bon Appetit!
