Steps:
- Grease cookie tins.
- Preheat oven to 375°F (190°C).
- Beat butter, eggs, sugar and vanilla together until they are light and fluffy.
- Sift flour with baking powder, soda and salt and stir them into the first mixture. Blend well.
- Stir in coconut and rolled oats.
- Drop by heaping teaspoonfuls onto cookie sheets and bake for 10 minutes.
- Cool on wire racks and store in tightly covered cookie tins.

One of Grandma Dorothy's much sought after recipes. These oatmeal cookies are wonderfully chewy and are made with oil instead of butter or margarine so they appeal to the heath conscious. One is never enough!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a large bowl, stir together the flour, baking soda, salt, white sugar, brown sugar, oats and coconut. Make a well in the center and pour in the oil, eggs and vanilla. Mix well using your hands or a wooden spoon. Roll the dough into walnut sized balls and place 2 inches apart onto the prepared cookie sheets. Flatten slightly with a fork.
- Bake for 10 to 12 minutes in the preheated oven, cookies should be a very light brown and chewy - not crisp. Cool for a couple of minutes on the baking sheets before removing to wire racks to cool completely.

DAD'S COOKIES
This is a recipe I got from my friend Mabel many years ago. They are a delicious and easy cookie to make. You can freeze the logs and take them out when you want to bake them. Chill time is not reflected in the preparation time so plan ahead.

Steps:
- Cream together butter and sugars.
- Beat in eggs and vanilla.
- Stir in salt, soda and flour, mixing well.
- Stir in oatmeal.
- Shape into 4 round logs.
- Wrap well in wax paper and chill.
- Slice 1/4-inch thick, place on baking sheets and bake at 350°F for 10 minutes.
- You can add 1 cup of any of the following if you wish for a variation: coconut, nuts, raisins or chocolate chips.
DAD'S COOKIE SLICE RECIPE

- Mix crushed cookies and butter together. Line pan with parchment paper. Press 2/3 of the mixture into pan. Bake for 10 min in a 350 oven. Put chocolate and butter in a double boiler to melt. Add icing sugra, eggs , vanilla. Beat until fluffy. Add walnuts. Put on top of hot crumbs and sprinkle rest of crumbs on top. Press down gently. Place in fridge to cool.

- Whisk together flour, baking powder, and salt. Stir in seeds.
- Beat butter and sugar with a mixer on medium speed until pale and fluffy, about 6 minutes. Beat in egg and vanilla. Reduce speed to low; gradually beat in flour mixture. Divide dough in half. Shape each half into a disk; wrap in plastic. Refrigerate until firm, at least 1 hour or overnight.
- Preheat oven to 325 degrees. Roll out dough 1 disk at a time to just under a 1/4-inch thickness on a lightly floured surface. Using templates, cut out letters with a paring knife. Reroll scraps; cut more letters (you'll need 14 D's and 7 A's, total). Freeze on 2 parchment-lined baking sheets until firm, 15 minutes.
- Bake until edges are golden, 15 to 18 minutes, rotating sheets halfway through. Let cookies cool on sheets set on wire racks.

- Preheat oven to 350°. In a large bowl, cream butter, shortening and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. My children love spice cookies at any time. I think most children love them. I am enclosing a recipe that moms and dads can have their children help with during the baking at Christmas. Every child keeps their special memories of every day with the family and I sure remember mine from when I was a little girl.

- Beat the sugar, molasses, butter or margarine, and oil together. Add 2 cups of the flour and the baking soda, cloves, ginger, and cinnamon. Mix in the remaining flour 1/2 cup at a time until the dough is stiff. Flatten into disks and cover with plastic wrap. Refrigerate for at least 1 hour.
- Preheat the oven to 350 degrees F (175 degrees C).
- On a lightly floured surface roll the dough out to 1/4 inch thick and use cookie cutters to cut into desired shapes. Place cookies on a baking sheet and bake at 350 degrees F (175 degrees C) for 8 minutes.

- Cream shortening; gradually add 1 cup sugar, beating well at medium speed of an electric mixer. Add egg and molasses; mix well. Combine flour and next 8 ingredients; mix well. Add about one-fourth of flour mixture at a time to cream mixture, beating until smooth after each addition. Chill dough 1 hour. Heat oven to 375-degrees. Shape dough into 1-inch balls and roll in sugar. Place 2 inches apart on ungreased cookies. Bake 9 to 11 minutes (top will crack). Cool on wire racks.
