Provided by Becky Hardin

Categories     Main Course

Time 20m

Number Of Ingredients 7

4 chicken breasts
salt and pepper to taste
2 tablespoons butter
1.5 tablespoons canola peanut or olive oil
2 cups fresh baby spinach leaves
1 5.2 ounce package garlic-herb cheese (such as Boursin cheese)
½ cup dry white wine optional

Steps:

  • Cut about a 3-inch wide pocket into the thick side of each breast almost to the other side, but do not cut all the way through. Season both sides of each breast with kosher salt and freshly ground black pepper.
  • Heat oil & butter in a large skillet over medium-low heat. Turn the heat to medium.
  • Place the spinach in the skillet and sauté the spinach about 30 seconds, just long enough to wilt but not burn. Dab the spinach on a paper towel to remove excess oil.
  • In a medium bowl, mix the cheese and spinach until combined. Stuff the chicken breasts with the spinach/cheese mixture and secure the breasts with toothpicks.
  • Place the breasts in the hot skillet and leave for 4 minutes or until the chicken turns golden brown. Carefully turn the breasts over and cook another 3 minutes or until golden brown.
  • Reduce heat to low, add wine (if using), cover and cook another 3-5 minutes or until the meat is no longer pink in the middle. A meat thermometer should read 160°F when placed in the thickest part of the meat.
  • Enjoy!

For an elegant dinner, try Rachael Ray's Spinach-and-Mushroom-Stuffed Chicken Breasts from 30 Minute Meals on Food Network, served with a white wine sauce.

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 17

4 boneless, skinless chicken breasts, 6 ounces
Large plastic food storage bags or waxed paper
1 package, 10 ounces, frozen chopped spinach
2 tablespoons butter
12 small mushroom caps, crimini or button
2 cloves garlic, cracked
1 small shallot, quartered
Salt and freshly ground black pepper
1 cup part skim ricotta cheese
1/2 cup grated Parmigiano or Romano, a couple of handfuls
1/2 teaspoon fresh grated or ground nutmeg
Toothpicks
2 tablespoons extra-virgin olive oil
2 tablespoons butter
2 tablespoons flour
1/2 cup white wine
1 cup chicken broth

Steps:

  • Place breasts in the center of a plastic food storage bag or 2 large sheets of waxed paper. Pound out the chicken from the center of the bag outward using a heavy-bottomed skillet or mallet. Be firm but controlled with your strokes.
  • Defrost spinach in the microwave. Transfer spinach to a kitchen towel. Twist towel around spinach and wring it out until very dry. Transfer to a medium-mixing bowl.
  • Place a nonstick skillet over moderate heat. When skillet is hot, add butter, mushrooms, garlic and shallot. Season with salt and pepper and saute 5 minutes. Transfer mushrooms, garlic and shallot to the food processor. Pulse to grind the mushrooms and transfer to the mixing bowl, adding the processed mushrooms to the spinach. Add ricotta and grated cheese to the bowl and the nutmeg. Stir to combine the stuffing. Return your skillet to the stove over medium high heat.
  • Place a mound of stuffing on each breast and wrap and roll breast over the stuffing. Secure breasts with toothpicks. Add 3 tablespoons oil to the pan, 3 turns of the pan. Add breasts to the pan and brown on all sides, cooking chicken 10 to 12 minutes. The meat will cook quickly because it is thin. Remove breasts; add butter to the pan and flour. Cook butter and flour for a minute, whisk in wine and reduce another minute. Whisk in broth and return breasts to the pan. Reduce heat and simmer until ready to serve. Remove toothpicks. Serve breasts whole or, remove from pan, slice on an angle and fan out on dinner plates. Top stuffed chicken breasts or sliced stuffed breasts with generous spoonfuls of the sauce.

SPINACH AND CHEESE STUFFED CHICKEN BREAST #RSC

Ready, Set, Cook! Hidden Valley Contest Entry. I love creating my own recipes and menus for people. I have been doing this since I was about 12 years old. I put together a birthday party with lots of freshly prepared food and cake that I prepared for my mom. I had help from my cousins and friends who were my assistants and servers. The party was a great success and I have been doing this ever since. I made this chicken dish 8 years ago and it was the only thing different my mom would eat so I made sure I perfected the dish just for her and of course others. I usually brine my chicken in a mixture of salt, brown sugar and water for at least 45 minutes

HUMMUS AND SPINACH STUFFED CHICKEN BREASTS

Hummus and Spinach Stuffed Chicken Breasts image

This unique creation adapted from Je Mange la Ville is easy and impressive. It's tempting to overstuff the chicken but it may spill out into the sauce. The cooking time will depend on the thickness of your chicken.

Provided by FLKeysJen

Categories     Chicken Breast

Time 45m

Yield 2 stuffed breasts, 2 serving(s)

Number Of Ingredients 10

2 boneless skinless chicken breasts
1/4 cup hummus (roasted garlic is good)
8 spinach leaves (more or less)
1/4 cup parmesan cheese, grated
2 tablespoons olive oil
salt
pepper
1/2 cup orange juice
1/2 cup chicken broth
spices (your favorite spice blend, we used Paul Prudhomme's Poultry Magic)

Steps:

  • Spread a piece of plastic wrap out over a cutting board and lay a chicken breast down. Fold a layer of the plastic wrap over it and pound the breast out until it's much thinner. Repeat with the other breast.
  • Sprinkle a little seasoning mix and lay down some spinach leaves on each flattened piece of chicken. Divide the hummus between the breasts. Sprinkle each with a little Parmesan.
  • Roll up, and sprinkle each chicken roll-up with some salt, pepper, a little more seasoning mix and some Parmesan cheese. Heat a skillet over medium-high heat and add the oil. Then, add the chicken, seasoned and parmed side down. Go ahead and season the side facing up and let it brown for a couple of minutes.
  • Flip it over and brown the second side. Add the orange juice and broth to the pan and reduce the heat to medium. Cover partially and let cook until the chicken is done (cut open or wait until a thermometer says 165 degrees - make sure you are checking the hummus temperature too).
  • Serve the chicken with orange sauce drizzled over it.
