"DA BEEF" ITALIAN POT ROAST SANDWICH
"I love Chicago Italian beef sandwiches, so I started with the classic, then put my spin on it," says Jeff.

- Make the pot roast: Preheat the oven to 300 degrees F. Liberally sprinkle the entire beef roast with salt and pepper. Heat the vegetable oil in a Dutch oven over medium-high heat. Add the roast and cook until browned and caramelized all over, 3 to 4 minutes per side (reduce the heat if the fat begins to smoke). Transfer to a plate and reduce the heat to medium.
- Add the onion to the pot and sauté, stirring occasionally, until just beginning to brown, 8 to 10 minutes. Add the Italian seasoning and red pepper flakes and sauté until fragrant, another minute. Add the garlic and sauté until fragrant, about 30 seconds. Deglaze with the red wine and cook until reduced by half, about 2 minutes. Add the beef stock and thyme and bring to a simmer. Adjust the seasoning of the jus. Return the beef roast to the pot along with any accumulated juices. Cover, place in the oven and cook, turning the roast every 30 minutes, until very tender, 3 1/2 to 4 hours. Transfer the roast to a cutting board and tent with foil. Increase the oven temperature to 350 degrees F.
- Strain the jus through a fine-mesh strainer into a bowl and return to the pot. Bring to a simmer and adjust the seasoning if necessary. Once the meat is cooled a bit, pull it apart into smaller chunks; return to the jus and reserve until ready to build the sandwiches.
- Meanwhile, cook the peppers: Toss the green bell pepper strips with the olive oil, granulated garlic and some salt and pepper on a baking sheet. Bake, stirring halfway through, until soft, about 20 minutes.
- Build the sandwiches: Place some beef on each hoagie roll, then top with the peppers and some giardiniera. Pour the warm jus into a bowl. Take each hoagie and quickly dunk it in the jus. Wrap in parchment for at least a minute to let the juices "settle," then eat away!
BARBECUED BEEF SANDWICHES
This recipe came from a military wife almost 30 years ago (thanks Elise) and it couldn't be much easier. Simply combine all ingredients and cook for 3 hours, then shred the meat. Serve it on buns of your choice...and then sit back and take in the compliments! Everyone loves this recipe, and I've used it at fund raising events with great success! Excellent with potato salad or coleslaw.

- Place roast in a Dutch oven, and sprinkle with chopped onions. Cover with tomatoes, water, sugar and Worcestershire sauce. Season with salt and pepper.
- Cook over medium heat with lid slightly ajar for 3 hours.
- Remove meat, and shred with 2 forks. Discard bones, fat and gristle. place shredded meat back into sauce, and cook until liquid is reduced, 15 to 20 minutes.

NANNIE RUBY'S DAGO BREAD
My mother-in-law showed me how to make this bread before her son and I were married. She learned it from her mother-in-law who was an immigrant from Sicily. Our family tradition is to have this bread on Christmas Eve. We take a slice of bread and put olive oil, salt and pepper on it and eat it. We also cook homemade Italian sausage and wrap it in a slice of Nannie's bread.

- Mix flour, yeast and salt.
- Dissolve honey in one cup warm water.
- Add two cups warm water and olive oil to honey mixture.
- Add liquid to dry ingredients and mix by hand or KitchenAid mixer using dough hook.
- Knead dough about 5 minutes. Place in bowl with a little olive oil in the bottom. Turn dough to coat with oil. Place in warm, draft free area to rise(about 50 min).
- Take dough out of bowl and knead a second time about 2 min on a floured surface. Place back in bowl, turning dough to coat with oil. Let rise a second time(about 30 min).
- Knead third time - gently about 2 minute
- Divide dough into four parts. Smear butter on work surface. Knead each dough ball with fingertips on buttered surface. Each ball of dough should be rolled up like a jellyroll. I add butter to the work surface as needed.
- Place dough into greased pans. We use PAM to grease the pans.
- Let dough rise again about 30 minutes. I always cover the loaves with a dish cloth while they rise.
- Bake at 350 degrees for 20 minute Lower to 300 degrees and bake 10 minute longer.
- Brush tops of loaves with slightly beaten egg whites.
ITALIAN SANDWICH #1 (SAUSAGE AND PEPPER SANDWICH)
This is a simple, quick-to-make sandwich that I threw together one morning before heading out the door to work. I rarely eat traditional breakfasts and really love things with zip, flavor, and zest; this sandwich really worked well for that! Normally, I make this kind of "Dago" with tomato sauce, but I was out of time. I'll post that varient, later.

- Form a patty from the Italian sausage no thicker than 1/2" in the rough shape of the bread. In a skillet over medium heat, fry the sausage, adding a tiny bit of oil if it is too lean. Cook for 4-6 minutes on the first side or until it turns brown, then flip over for 3-4 more minutes.
- Place the slices of roasted red pepper on the cooked side of the sausage while the raw side of the meat cooks. Cover with the cheese and continue cooking as it melts. NOTE: If the meat is done and the cheese has not yet melted, simply cover the skilled with a lid for a few moments, adding a few drops of water underneath for steam.
- On the toaster's lowest setting, lightly toast the two slices of bread. Butter one side of each toasted slice of bread and place the meat/pepper/cheese on the buttered side. NOTE: If you have toasted only one side of the bread, this should be the outside.
- Serve hot.
