DAL (INDIAN LENTIL CURRY)

Dal (Indian Lentil Curry) image

Recipe video below. There are countless variations of Dal all across India. This is a northern Indian version called "dal tadka" that's akin to what is served in Indian restaurants. "Tadka" refers to spices sizzling in hot oil that's poured over the dal. It's dramatic and gives it a flavour bump - but is optional. I include it for company, and leave it out for midweek or if being served alongside other punchy flavoured curries. Heat level in this recipe is mild - just a tickle. If you like it fiery, try leaving in the seeds in the chillies and/or adding some chilli powder. This is a dal that's flavourful to have as a main!

Provided by Nagi

Time 1h45m

Number Of Ingredients 20

2 tbsp / 30 g ghee (, or 1 tbsp oil + 1 tbsp/15g butter (Note 1))
2 green cayenne chillies (, deseeded and cut into chunks (optional) (Note 2))
1 medium onion (, finely chopped (brown or yellow))
6 garlic cloves (, finely chopped)
1 tbsp ginger (, finely chopped (1.5cm / 3/5"))
8 fresh curry leaves (, or 6 dried (Note 3))
1 tomato (, chopped)
1/2 tsp ground cumin
1 cup dried chana dal (, yellow split peas or other yellow lentils (Note 4 for other lentils))
4 cups / 1 litre water
1/2 tsp turmeric powder
1/8 tsp garam marsala
3/4 tsp salt
1 1/2 tbsp / 20g ghee (, or half each butter + oil (Note 1))
1 eschalot or 1/4 small onion (, halved lengthways and sliced (Note 5))
1 tsp cumin seeds
1/2 tsp black mustard seeds ((optional))
3 dried chillies (, broken in half, seeds removed (optional))
Fresh coriander/cilantro sprigs ((optional))
Steamed basmati rice

Steps:

  • Soak Lentils: Rinse lentils and leave to soak in plenty of water for 1 hour. Drain in colander.
  • Heat ghee/oil in a heavy based saucepan over high heat. Add green chillies and fry for a minute until starting to blister.
  • Add onions and fry until softened.
  • Lower heat to medium, add garlic, ginger and curry leaves. Cook for 1 minute until garlic starts to turn golden and smells amazing.
  • Add tomatoes and cumin, cook until tomatoes start to break down and thicken to a paste - about 2 minutes.
  • Add lentils, water, tumeric and salt. Stir, bring to simmer, cover and simmer gently for 1 hour. Stir two or three times during the hour.
  • Remove lid and simmer gently for 30 minutes to thicken, stirring every now and then. The dal is ready when it has a consistency like porridge - some lentils should be intact but some have broken down to thicken the sauce.
  • Stir through garam masala at the end. Adjust salt if desired.
  • Pour over Tadka, if using, and stir through.
  • Serve Dal over rice, garnished with a sprig of coriander if desired.

CURRIED RED LENTIL DAHL

Curried Red Lentil Dahl image

When I first posted this recipe, I hadn't made it, I had posted it for a tag game, but encouraged by the positive reviews it has received, I made it this weekend, and took it as a gift for my friend, who loves hot curries and dahls. Its a little hot for my personal taste, but she loved it! Easy and quick to make, it comes from the Very Easy Vegetarian Cookbook, by Simon & Alison Holst

Time 35m

Yield 3-4 serving(s)

Number Of Ingredients 14

1 tablespoon olive oil
1 large onion, diced
1 teaspoon garlic, minced

2 teaspoons turmeric
2 teaspoons mustard seeds
2 teaspoons cumin seeds
1 cup split red lentils
2 cups water
2 teaspoons vegetable stock powder
salt
1 -2 tablespoon chopped coriander, leaf

Steps:

  • Heat the oil in a large pan.

  • Tip in the lentils and the stock (made with the water and the stock powder), bring the mixture to the boil, then reduce the heat to a gentle simmer. Cover the pan with a lid whilst simmering, so that the liquid does not evaporate too quickly.

PARIPPU THEMPARADUWA (DAL WITH CURRY LEAVES)

Parippu Themparaduwa (Dal With Curry Leaves) image

This Sri Lankan dal of tender lentils, like other dals on Sri Lankan tables, are central to every meal and usually served with several other dishes, such as kukul mas maluwa (chicken curry). Because it is part of a larger meal, dal is often seasoned simply. This version is as well, but it is richer in taste from curry leaves, which infuse the lentils with their flavor. Dry or frozen curry leaves are fine substitutes if you can't find fresh ones. You can add some cumin or coriander powder, too, if you'd like, or skip the Maldive fish flakes for a vegan dish. This dal is easy to cook and can be refrigerated in a covered container for up to three days. Serve with long-grain rice, bread or any of your favorite roti or other Indian flatbreads.

Categories     weekday, beans, vegetables

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 11

1 1/2 cups masoor dal (red lentils)
1 teaspoon ground turmeric
1 teaspoon ground cayenne
2 teaspoons Maldive fish flakes (optional; see Tip)
3 tablespoons coconut oil
20 fresh curry leaves, plucked off the stems (1/4 cup), or use dried or thawed frozen curry leaves
1 small red onion, sliced thin
6 garlic cloves, finely chopped
1 teaspoon finely chopped fresh ginger
Salt
Cooked rice or roti, for serving

Steps:

  • Put masoor dal in a medium bowl, cover with water and rinse thoroughly. Drain and repeat twice more until the water runs clear.
  • Transfer dal to a medium saucepan and add 3 cups water. Bring to a boil over medium heat. Cook, uncovered and stirring occasionally, until the water has absorbed and the dal has cooked through and softened, about 15 minutes.
  • Turn off the heat and add ground turmeric, cayenne and fish flakes, if using. Mix well.
  • In a large nonstick pan, heat coconut oil over medium. Add curry leaves and onion, and cook, stirring often, until the onion has softened, about 5 minutes. Add garlic and ginger, and cook, stirring, until fragrant, 1 to 2 minutes. Add the dal mixture and stir well. Add 1/4 cup water, reduce heat to medium-low and simmer for 3 to 5 minutes. Season to taste with salt and serve with rice or roti. The curry leaves aren't meant to be eaten but can be served with the dal, then discarded after the meal.

DHAL CURRY WITH MEAT (GOSHT DHAL)

Dhal Curry With Meat (Gosht Dhal) image

Since one of the themes on Zaar this month is comfort food I thought I would submit this. This is my ultimate comfort food. This is a dhal curry which is made with meat. Serve with rice, salads, sambals, Indian pickes and crispy spicy fried potatoes. Mmmmmhhh. NOTE: It can be made with red meat or chicken, if using chicken please remove the skin. Use the oil dhal type that you will find in most Indian spice shop preferably. If you cannot find it then use gram(chana) dhal or red lentils. But will not be the same as when using oil dhal. The second list of ingredients are the tempering spices used.

Categories     Chicken

Time 2h30m

Yield 6-8 serving(s)

Number Of Ingredients 21

300 -400 g lamb (cut into pieces) or 300 -400 g chicken (cut into pieces)
1 1/2 cups lentils (OIl dhal please read note)
1/4 cup brown lentils
2 teaspoons salt
2 teaspoons turmeric powder
1 teaspoon ginger-garlic paste
2 teaspoons coriander powder
1 teaspoon cumin
1 teaspoon chili powder
1 medium onion, chopped
2 tablespoons oil
1 small tomatoes, chopped
1 cinnamon stick
1 teaspoon whole cumin seed
fresh cilantro leaf, for garnishing
2 tablespoons ghee
3 slices onion rings
1 teaspoon whole cumin seed
1/2 teaspoon mustard seeds
3 whole garlic cloves
1 teaspoon garam masala

Steps:

  • Rinse dhal and lentils in some lukewarm water. Soak overnight if you have the time otherwise not necessary. Pour in to large saucepan cover with water, 1 tsp each of the salt and tumeric. Boil like you would do for beans until soft and mushy.
  • In a separate saucepan, saute onions, cinnamon stick and cumin seeds in oil till a pale gold colour .
  • Add meat and the spices. Stir a few times without adding water.
  • Gently cooking the spices, by adding water you don't give the spices a chance to cook, and then you will have a tasteless curry remember this with all Indian food.
  • When it starts sticking to the pot add the tomotoe and about half a cup of water.
  • Simmer slowly till well blended and the water has dried up.
  • Liquidise the dhals and add to pot and some water to the consistency you would like the dhal about a cup of water should be enough. Bring to boil and then simmer slowly till dhal is well blended in, about half an hour. Adding water if becoming to thick.
  • When done, make your tempering, heat your ghee in a pan add onion, cumin and mustard seeds and garlic cloves, and fry till nice golden brown. Add to pot of dhal and close lid tightly.
  • Just before serving add your chopped cilantro and your gharam malasa. (In Indian cooking gharam masala is always added just before serving as it is a pepping up spice. Stir and serve with white rice/roti etc.
