Chocolate Date Cake I image

My mothers' recipe. Great for snacking--or you can frost it, for a special occasion cake. One of my family's favorites.

1 cup dates, pitted and chopped
1 cup boiling water
1 ¾ cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
3 teaspoons unsweetened cocoa powder
1 cup white sugar
½ cup butter
2 eggs
½ cup chopped walnuts
1 cup semisweet chocolate chips, divided

Steps:

  • In a small bowl, combine dates with boiling water. Set aside to cool.
  • Pre heat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch pan.
  • In a medium bowl, mix flour, soda, salt and cocoa. Set aside.
  • Cream butter and sugar until light and fluffy. Add eggs. Add flour mixture alternating with cooled date mixture. Fold in chopped nuts and 1/2 cup of the chocolate chips to mixture.
  • Spread batter into prepared pan. Sprinkle remaining 1/2 cup of chocolate chips over top.
  • Bake in preheated oven for 45 to 60 minutes, or until toothpick inserted into middle of cake comes out clean.

I have tested many chocolate cake recipes but this has come up trumps from them all. Altered from Sophie Gray Destitute Gourmet. It is moist and makes a good amount. It is the only chocolate cake I make now.

1 2/3 cups flour
1 1/2 teaspoons baking soda
1 1/2 cups sugar
2/3 cup cocoa
1 teaspoon salt
1 1/2 cups skim milk
100 g butter, melted
2 eggs
2 teaspoons vanilla
1 teaspoon coffee
25 g butter
1/3 cup cocoa
1 cup icing sugar
1 teaspoon coffee
1 teaspoon vanilla essence
water or milk
2 tablespoons cream cheese

Steps:

  • Preheat oven to 180°C Grease cake tin. Put all the main ingredients into a food processor and mix. Pour into the prepared tin. Bake for at least 50 minutes. (I found I need less time than this). The cake will rise a lot and when cooked the centre should spring back when gently pressed.
  • ICING: Mix above ingredients together with enough water or milk to make the icing consistency right. NB: You can make extra icing for a filling if you cut the cake in half horizonally.

I got this recipe a long time ago from the back of a cannister of baking chocolate. I have also used the splenda/sugar for baking mix, low fat cream cheese, low fat sour cream,and even eggbeaters in place of the eggs and this cheesecake still comes out rich and creamy!

1 cup chocolate wafer crumbs
1/4 cup butter or 1/4 cup margarine
3 (8 ounce) packages cream cheese, softened
1 1/4 cups sugar
1 (8 ounce) container sour cream
2 teaspoons vanilla extract
1/2 cup cocoa
2 tablespoons all-purpose flour
3 eggs
1/2 cup semi-sweet chocolate chips
2 teaspoons shortening (do not use butter, margarine, spread or oil)

Steps:

  • PreHeat oven to 450°F
  • Combine chocolate wafer crumbs and butter or margarine; press onto bottom of 9-inch springform pan. Makes 1 (9-inch) crust.
  • Beat cream cheese and sugar until blended. Add sour cream and vanilla; beat until blended. Beat in cocoa and flour. Add eggs, one at a time; beat just until blended. Pour into crust.
  • Bake 10 minutes. Reduce oven temperature to 250°F; continue baking 40 minutes. Remove from oven to wire rack. With knife, loosen cake from side of pan. Cool completely; remove side of pan.
  • Place Chocolate Chips and 2 teaspoons shortening (do not use butter, margarine, spread or oil) in small microwave-safe bowl. Microwave at HIGH (100%) 30 seconds. If necessary, microwave at HIGH an additional 15 seconds at a time, stirring after each heating, just until chips are melted.
  • Drizzle over top.
  • Refrigerate overnight. Store covered in refrigerator.

This recipe has been passed down through the family for many generations. It is the only chocolate cake recipe I use anymore. The cake is nice and moist and has such a bold flavor. This cake is great for a German chocolate icing, but I have used all types of icings, which all complement the cake nicely. This cake always pleases the crowd when I make it. Hope you enjoy it as much as my family has for all these years.

2 cups all-purpose flour
¾ cup unsweetened cocoa powder
1 ¼ teaspoons baking soda
½ teaspoon salt
1 ¾ cups white sugar
¾ cup unsalted butter, at room temperature
2 large eggs
1 teaspoon maple extract
1 ⅓ cups brewed coffee

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans.
  • Whisk together flour, cocoa powder, baking soda, and salt in a medium bowl.
  • Cream sugar and butter together in a large bowl with an electric mixer. Mix in eggs and maple extract. Add flour mixture in 2 batches, alternating with coffee, beating batter until smooth after each addition. Pour batter into the prepared pans.
  • Bake in the preheated oven until a toothpick inserted in the centers comes out clean, 35 to 40 minutes.
