Steps:
- Thaw spinach and squeeze out water. Soften cream cheese.
- In a mixing bowl, combine spinach, cream cheese and seasoning salt. Mix well and spoon into 2 quart casserole dish.
- Sprinkle with bread crumbs and bake at 350 degrees F (175 degree C) for 20 minutes.

BAKED EGGS WITH BACON AND SPINACH

- Preheat oven to 400°F. Cook bacon in large skillet over medium heat until crisp; transfer to paper towels. Pour off drippings from skillet; reserve drippings. Add spinach to pan, sprinkle with pepper, and toss over medium heat, 1 minute. Transfer to strainer set over bowl to drain. Brush four 1-cup ramekins with drippings. Crumble bacon.
- Place 1 toasted English muffin half, split side up, in each ramekin. Divide spinach among ramekins, then sprinkle bacon over, dividing equally. With back of spoon, shape well in center of each ramekin. Gently crack 1 egg into well in each ramekin, keeping yolk intact. Drizzle 1 tablespoon cream over each egg. Sprinkle with salt and pepper.
- Bake eggs until whites are just set but yolks are still runny, 14 to 16 minutes.
SPINACH RAMEKIN

- Preheat the oven to 350 degrees 1. Cook the shallot in the olive oil until soft 2. Add spinach and cook until wilted 3. Beat eggs in a large bowl 3. Whisk in flour, butter, salt & pepper 4. Fold in the goat cheese, and mozzarella 5. Stir in spinach and shallot mixture. 6. Butter a small casserole dish and sprinkle with half of the parmesan cheese 7. Pour in the spinach, egg, and cheese mixture 8. Top with the other half of the parmesan cheese 9. Bake in casserole dish for 1 hour
BAKED EGGS WITH CANADIAN BACON, SPINACH, AND AGED CHEDDAR
Steps:
- Heat oven to 350 degrees F and arrange rack in middle. Butter 4 (6-ounce) ramekins and set aside.
- Melt 1 tablespoon butter in a large frying pan over medium heat. When it foams, add onion, season well with salt and freshly ground black pepper, and cook until softened, about 1 minute. Add spinach and cook until spinach is well wilted, about 2 minutes.
- Place ham on bottom of ramekins and top with spinach. Crack eggs into ramekins, place 1 tablespoon cream over each egg, and divide half of cheese evenly among ramekins.
- Put ramekins on a baking sheet and bake, rotating pan halfway through baking, until whites are just set but yolks are still runny, about 15 to 18 minutes.
- Meanwhile, spread remaining 2 tablespoons butter on 4 slices sourdough bread. Top with grated cheese and toast until golden brown. Serve eggs with toast.
SPINACH FILO SPIRAL PIE

- Heat a large non-stick pan over a medium heat. Tip in the spinach and cook, stirring, until wilted (you won't need any oil or water as it will steam in its own moisture). Leave to cool a little, then tip into a clean tea towel and squeeze out as much water as possible. Chop and put in a bowl.
- Heat the knob of butter in a non-stick frying pan. Add the onion and cook for about 10 mins until softened. Tip into the bowl with the spinach, then stir in the feta using a fork until fully combined. Taste for seasoning.
- Heat the oven to 190C/170C fan/gas 5. Brush a 24 x 4cm deep metal pie dish with some of the butter.
- Lay a filo sheet on your work surface. Brush with some of the melted butter, then spread about 2 tbsp of the filling in a line along the longest edge of the pastry. Roll loosely into a long sausage (don't roll it too tight as this might cause the pastry to split), then coil the pastry and put in the centre of the tin.
- Repeat with the rest of the pastry and filling, arranging the coils around the central one. Brush the tops with more butter, then sprinkle with the nigella seeds. Bake for 25-30 mins until golden and crisp.

- Preheat oven to 400 degrees.
- Pick over the spinach and remove all tough stems and blemished leaves. If necessary, rinse the spinach well and drain it. Pat dry. Chop the spinach leaves coarse- fine. There should be about eight cups loosely packed.
- Heat two tablespoons of the butter in a saucepan, and add the shallots and scallions. Cook, stirring, briefly and add the chopped spinach. Add salt, pepper and nutmeg. Cook, stirring, until the mixture is wilted, about two minutes.
- Add the cream and bring to the boil. Cook, stirring, about five minutes. Stir in the cheese and remove the mixture from the heat. There should be about two cups.
- Lightly grease 12 ramekins, about 1 1/2 inches deep and 3 inches in diameter, with the remaining three tablespoons of butter. Sprinkle the bottoms with salt and pepper.
- Spoon an equal portion of the spinach mixture into the bottom of each ramekin, but reserve a small portion to use as garnish. Keep it warm.
- Break one egg into each ramekin and sprinkle lightly with salt and pepper. Arrange the ramekins in a baking dish and pour boiling water around them. This will keep them from baking too rapidly. Bake 10 to 12 minutes. When cooked, the whites should be firm and the yolks liquid or just starting to firm. Do not overcook.
- Spoon a little of the remaining spinach mixture on top of each serving. Serve two to each guest along with French bread or buttered toast. The traditional method of serving dishes in ramekins is to cover a small plate with a napkin, then place the ramekin on the napkin. Provide each guest with a salad fork and a small spoon.

- Put the shrimp in a large pan with enough water to cover; bring to a boil.
- Remove from heat and let stand for 1 minute.
- Drain into a collander, peel, and devein; set aside.
- Cook the spinach by following the package directions; drain in a collander, squeeze almost dry and set aside.
- In a medium saucepan, melt 6 tablespoons butter over moderate heat.
- Add in the flour; whisk constantly for about 2 minutes or until very smooth.
- Gradually add in the half-and-half, whisking for 5 minutes or until the sauce thickens.
- Season to taste with salt and pepper, whisk and remove from heat.
- Butter six to eight 4-oz. ramekins; set aside.
- In a skillet, melt the remaining 2 tablespoons butter over medium heat.
- Add in the scallions; stir/saute 1 minute.
- Add in the sherry, cook until almost evaporated; stir onion mixture into cream sauce.
- Add 1/2 cup cream sauce to the spinach mixture (adding more sauce, if necessary, for a creamy but not soupy mixture).
- Divide half the spinach among the prepared ramekins; layer equal amounts of shrimp over the spinach; sprinkle each with some of the lemon juice; cover each with equal amounts of the remaining spinach mixture.
- Sprinkle cheese over the top of each and bake on a heavy baking sheet in a 350° oven for about 10 minutes or until golden.

- Soak spinach in cold water to cover 1 hour. Drain. Place spinach in a large Dutch oven (do not add water); cover and cook over high heat 5 minutes or until tender. Drain spinach, reserving 2 tablespoons liquid. Chop spinach, and set aside.
- Melt butter in a 10-inch skillet over low heat; add flour, stirring until smooth. Add spinach; cook 10 minutes over medium heat, stirring frequently. (If necessary, gradually add reserved liquid for desired consistency.) Spoon spinach mixture into 4 lightly greased 6-ounce custard cups. Set aside.
- Fill a saucepan or skillet with 1 1/2 inches salted water, and heat to boiling. When water boils, lower heat to simmer. Break eggs, one at a time, into a clean custard cup. Hold the lip of the cup close to water, and gently slip egg into the water. Simmer until eggs reach desired degree of doneness. (Do not allow water to boil.) Remove eggs with a slotted spoon, and drain well.
- Place a poached egg on top of spinach in each custard cup. Cover each with cream sauce; top with cheese, and bake at 400° just until cheese melts. Serve hot.
