If you love pineapple (and/or lemon bars), you are sure to love this super easy pineapple bars recipe! Canned pineapple works in a pinch, but cut up half of a whole fresh pineapple and get ready to be hooked for life on this sweet and tangy treat!!

TROPICAL ROADIE BARS

Steps:
- Line a small cookie sheet or quarter sheet pan with parchment paper. Spray lightly with nonstick spray.
- Spray a large bowl. Add the almonds, pecans, dried pineapple, millet, oats and coconut flake and stir well.
- In a medium saucepot fitted with a candy thermometer, add the brown sugar, maple syrup, pineapple juice concentrate and salt; mix together with a heatproof spatula. Place the pot over high heat and cook the syrup to the soft-ball stage (240 degrees F), about 10 minutes.
- Pour the syrup over the nut mixture and toss well. Scrape onto the prepared cookie sheet and press firmly and evenly into a tight, compact layer. Cool for about 20 minutes in the refrigerator.
- Transfer to a cutting board and cut into 16 to 20 bars. Store in an airtight container.

Steps:
- Mix shortening, sugar and egg thoroughly. Stir in pineapple.
- Mix flour, baking soda, salt, nutmeg, and nuts. Add to pineapple mixture.
- Chill at least one hour.
- Preheat oven to 400 degrees F (200 degrees C).
- Drop by teaspoonfuls on lightly greased cookie sheet, about 2 inches apart. Bake for about 8 to 10 minutes, or until no imprint is made when touched lightly. Variations: Add one cup of coconut (omit nutmeg) or add one cup of raisins, if desired

- Pineapple Filling:
- Mix 1 cup crushed pineapple and juice (8 1/4-ounce can), 1 cup sugar, 2 1/2 Tablespoons cornstarch, 1 Tablespoon butter, and 1 cup water in saucepan.
- Cook until thickened, cool.
- Preheat oven to 400 degrees F (200 degrees C).
- Cream together shortening and sugar thoroughly.
- Stir in flour, baking soda and salt.
- Mix in rolled oats.
- Press and flatten half of the mixture over bottom of a 13 x 9 1/2 x 2 inch greased pan.
- Spread with cooled filling.
- Top with remaining crumb mixture, patting lightly.
- Bake 25 to 30 minutes, or until lightly browned.
- While warm cut into bars and remove from pan.
SOUTHERN PINEAPPLE CASSEROLE
My grandmother used to make this for us on Easter. She recently revived the dish and I begged her for the recipe. It is now a staple to all my cookouts and is always a favorite. She hates that my extended family calls this "my" recipe since it's hers, but I always give her credit!

- Cut butter or margarine into flour with pastry blender or two knives.
- Add sour cream and vanilla.
- Mix well and refrigerate 2 hours.

- Dump the pineapple in a strainer and let it drain while you cream the butter and sugar.
- Add the flour and mix well. (you can do this in a food processor with hard butter cut into chunks and the steel blade).
- Spread mixture out in a greased 9x13 inch pan and press it down evenly with your hands.
- Bake at 350 degrees for 15-20 minutes. Remove from oven, but do not turn the oven off.
- Mix the eggs with sugar.
- Add pineapple concentrate and drained pineapple, mix.
- Add salt and baking powder and stir it all up.
- Add the flour and mix thoroughly. It will be runny, it will set in the oven.
- Pour this mixture on top of the pan you just baked and stick it back in the oven.
- Bake at 350 degrees for another 45-50 minutes.
- Remove from oven and cool thoroughly.
- Sprinkle with a little powdered sugar and cut into brownie-sized bars.
