Just like the ones sold in those iconic blue tins but Martha's are even tastier! The secret is using the best-quality salted butter you can find.

1 cup (2 sticks) best-quality salted butter, room temperature
1 cup confectioners' sugar
1 teaspoon pure vanilla extract
1 large egg
2 1/2 cups unbleached all-purpose flour

Steps:

  • Preheat oven to 325 degrees.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat together butter and confectioners' sugar on medium speed until light and fluffy, about 3 minutes. Add vanilla and egg, and beat to combine. Gradually add flour, and beat until well incorporated. Transfer dough to a pastry bag fitted with a 7/16-inch star tip (such as Ateco #825).
  • Pipe 2 1/2-inch rings onto parchment-lined baking sheets, spaced 2 inches apart. Bake, rotating halfway through, until lightly golden around edges but still light on top, about 20 minutes. Transfer sheets to wire racks; let cool completely.

Danish gingerbread cookies - baked with fresh ginger, cardamom, and white pepper (and without molasses) - are delightful Scandinavian Christmas cookies very unlike their traditional American counterpart. They're perfect for a holiday full of hygge!

5 T unsalted butter
5/8 cup granulated sugar
1/4 cup plus 1 T heavy whipping cream
2 cups all-purpose flour
1/2 tsp. freshly grated ginger
1/2 tsp. ground cinnamon
1/2 tsp. ground white pepper
1/2 tsp. ground cardamom
1/2 tsp. baking soda
1/2 tsp. baking powder

Steps:

  • In the bowl of an electric mixer, beat the butter and then stir in the sugar and whipping cream.
  • In a separate bowl, whisk together flour, ginger, spices, baking soda, and baking powder.
  • Add the dry ingredients to the butter mixture and stir on low speed until combined.
  • Preheat oven to 400°F.
  • Roll dough into one inch balls and place two inches apart on a cookie sheets lined with silicone baking mats or parchment paper.
  • Bake cookies for 10-12 minutes, until cookies puff up and edges become golden. Let cookies cool on the tray for 5 minutes before transferring to a wire rack to cool completely.

120g unsalted butter, softened
1½ tbsp black treacle
170g soft light brown sugar
½ tsp fine sea salt
1 medium egg
200g plain flour
¼ tsp bicarbonate of soda
¼ tsp ground cloves
1½ tsp ground ginger
½ tsp ground cinnamon
60g golden caster sugar

Steps:

  • Beat together the butter, treacle, brown sugar and salt in a large mixing bowl. Add the egg, then beat through all of the remaining dry ingredients apart from the caster sugar. Chill the mixture in the fridge for 1 hr.
  • Heat the oven to 200C/180C fan/gas 4. Line two baking sheets with baking parchment. Roll the mixture into 20 even-sized balls (weighing for accuracy, if you like). Tip the caster sugar onto a small plate, then add each ball and roll around to coat. Space each ball out on the baking sheets. Bake for 9-10 mins until golden brown. Leave to cool completely on a wire rack.

1 cup packed brown sugar
1 egg

2 1/2 cups Gold Medal™ all-purpose flour
2 1/4 teaspoons baking soda
1/2 teaspoon kosher (coarse) salt
1 tablespoon ground ginger
1 tablespoon ground cinnamon
2 teaspoons ground cloves
1 1/2 teaspoons ground nutmeg
1/2 teaspoon ground allspice
2/3 cup granulated or coarse sugar

Steps:

  • In large bowl, beat butter and brown sugar with electric mixer on medium speed until light and fluffy, about 5 minutes. Beat in egg and molasses. Stir in remaining ingredients except granulated sugar. Cover; refrigerate at least 2 hours.
  • Heat oven to 350°F. Line cookie sheets with cooking parchment paper or silicone baking mat. In small bowl, place granulated sugar. Shape dough into 1-inch balls; roll in sugar. On cookie sheets, place balls 2 inches apart.
  • Bake 8 to 10 minutes or just until set and soft in center. Cool 2 minutes; remove from cookie sheets to cooling racks. Store tightly covered up to 1 week.
