DANISH COFFEE CAKE
My mother gave me this recipe when I was a teenager - it's something I treasure as a childhood memory. She made this tender, flaky pastry as part of a special breakfast on Sundays or holidays. I often bring these easy-to-fix pastries to ladies' meetings. They can't believe how good they taste with relatively few ingredients. -Lee Deneau, Lansing, Michigan

Steps:
- Place 1 cup flour in a large bowl, cut 1/2 cup butter into flour until mixture resembles coarse crumbs. Sprinkle with 2 tablespoons water; toss with a fork until mixture forms a ball. Divide into thirds. On a floured surface, roll each portion into a 9-in. x 6-in. rectangle. Place on greased baking sheets; set aside. , In a saucepan, bring salt and remaining butter and water to a boil. Add remaining flour all at once; stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. , Spread over the dough. Bake at 400° for 30 minutes or until puffed and golden brown. Cool for 10 minutes before removing from pans to wire racks., For icing, combine the butter, confectioners' sugar, vanilla and enough water to achieve desired consistency. Spread over warm coffee cakes. Sprinkle with walnuts. Store in the refrigerator.

EASY GARLIC KALE
Kale is supposed to have cancer-fighting properties. I love it, but my husband hates it. Cooking it this way is the only way he'll eat it.

Steps:
- Soak kale leaves in a large bowl of water until dirt and sand begin to fall to the bottom, about 2 minutes. Lift kale from the bowl without drying the leaves and immediately remove and discard stems. Chop the kale leaves into 1-inch pieces.
- Heat olive oil in a large skillet over medium heat; cook and stir garlic until sizzling, about 1 minute. Add kale to the skillet and place a cover over the top.
- Cook, stirring occasionally with tongs, until kale is bright green and slightly tender, 5 to 7 minutes.

DANISH GROENLANGKAAL (GREEN-LONG-CALE)
This is a cream-stewed cabbage dish that we in my family have at 2nd day of Christmas (the 26th of December). we eat it with glazed ham, sugar glazed potatoes and mustard. We eat this more as a primary item at the meal, than as a sauce.

Steps:
- Melt the margarine or butter and whisk in the flour, then add the milk or cream a little at the time. Let it cook for a short time while you are whisking til it's thick enough to cover the back of a spoon.
- Then add the cabbage and let it simmer for about 10 minutes. It has to be rather thick and a nice dark-green color (not a white sauce with cabbage pieces in it, then it is too thin and you need to make it a bit thicker).
- Add salt, pepper and nutmeg to taste.

DANISH DREAM CAKE
This cake has been a favorite since 1965, when a girl won a baking competition in with her grandmother's secret family recipe.

Steps:
- Preheat the oven to 375°F. Prepare a 9-inch springform or round cake pan, greased and lined with baking parchment.
- In the bowl of a stand mixer, whisk the eggs, granulated sugar and vanilla sugar on a high speed for a few minutes, until white and light. Meanwhile, in a separate bowl, sift the flour and baking powder together.
- Carefully fold the flour into the egg mixture. Mix the milk with the melted butter in a jug/pitcher and carefully pour into the batter, folding it in until incorporated. Pour the batter into the prepared cake pan.
- Bake in the preheated oven for 35-40 minutes, or until almost done (try not to open the oven door for the first 20 minutes of the total baking time).
- To make the topping, put all the ingredients in a saucepan and gently melt together.
- Remove the cake from the oven and carefully spread the topping all over the cake. Return to the oven. Turn up the heat to 400°F and bake for a further 5 minutes.
- Leave cake to cool before eating, if you can (we are well aware it's hard to do that).
GERMAN STYLE GREEN KALE (GRUENKOHL)
I am posting this for my father, who tried a version of this recipe at the Sion Brauhaus in Cologne, Germany when he was here visiting us. He enjoyed it so much, that he asked me to find a recipe for him. This recipe, as translated directly from the German version I found in "Koch Vernuegen Wie Noch Nie" is very close to what he tried. Bacon grease is really quite essential here for the flavor - please try not to use a substitute as it just won't taste quite the same. You may use any type of cooked sausage you like, however, if you decide to throw some in at the end of the cooking process. In the area of Germany I currently live in, you would most often see bratwurst added to the kale. I am guessing on the cook time as I have not acutally made this myself yet. I will warn you that this is a very ugly looking dish and may be considered an acquired taste for some, although I find it quite delicious personally.

Steps:
- Wash the kale in lukewarm warm very well several times to remove all grit and dirt- do not dry them off- leave them dripping wet.
- Remove the hard stems from the leaves and then place the kale into a pot, put the lid on, and let it cook over medium heat until it wilts- this won't be terribly long.
- Drain in colander and then dry the leaves completely.
- Coarsley chop the kale.
- Heat the bacon grease in a skillet, add onion and cook until brown, stirring often.
- Add the kale to the pan, along with salt and pepper to taste, a pinch of freshly grated nutmeg, and a pinch of sugar.
- Add the beef broth to the vegetables and stir to mix.
- Cover and let cook 45 minutes- it should get very, very tender and will be very, very soft.
- If you prefer, briefly cook some bratwurst in hot water according to the package directions, then add them to the pot in the last 15 minutes of cooking time.
- Check seasonings again before serving.
