Dark Cocoa Buttermilk Cake With Chocolate Cream Cheese Frosting Recipe

  1. butter
  2. eggs
  3. all-purpose flour
  4. unsweetened cocoa powder
  5. baking soda
  6. baking powder
  7. salt
  8. granulated sugar
  9. brown sugar
  10. vanilla extract
  11. buttermilk
  12. cream cheese', "confectioners' sugar"]

Steps:

  1. cake:
  2. lightly grease bottoms of two 8x1-1 / 2-inch round cake pans
  3. line bottoms of pans with waxed paper
  4. grease and lightly flour bottoms and sides of pans
  5. set pans aside
  6. preheat oven to 350 degree f
  7. in a medium mixing bowl , stir together the flour , cocoa powder , baking soda , baking powder , and salt
  8. set aside
  9. in a large mixing bowl , beat butter with an electric mixer on medium to high speed for 30 seconds
  10. in a small bowl , combine granulated and brown sugar
  11. gradually add sugar mixture , about 1 / 4 cup at a time , beating on medium speed until well combined
  12. scrape sides of bowl
  13. continue beating on medium speed for 2 minutes
  14. add eggs , one at a time , beating well after each addition
  15. beat in vanilla
  16. add flour mixture and buttermilk alternately to beaten mixture , beating on low speed just until combined after each addition
  17. beat on medium to high speed for 20 seconds more
  18. spread batter evenly into the prepared pans
  19. bake for 30 to 35 minutes or until a wooden toothpick inserted in the center comes out clean
  20. cool cake layers in pans for 10 minutes on wire rack
  21. remove from pans
  22. peel off waxed paper
  23. cool thoroughly on wire racks
  24. frosting:
  25. place the cream cheese and butter in a large mixing bowl
  26. blend with an electric mixer on low speed until combined , 30 seconds
  27. stop the machine', "add the cocoa powder , extract , and confectioners' sugar and blend with the mixer on low speed until the ingredients are moistened , 30 seconds", 'increase the speed to medium and beat until the frosting is fluffy , 2 minutes more
  28. use at once to frost your cake or cover and keep refrigerated till you are ready to frost
