A low-fat tomato vinaigrette recipe. Try it over crisp green or even over pasta, yum!

Steps:
- In a blender or small food processor, blend or process the tomatoes, vinegar, basil, thyme, and mustard on medium to high speed, about 25 seconds or until well combined. To store, transfer to a jar with a tight-fitting cover and refrigerate for up to 2 days. Shake well before serving.

SUN-DRIED TOMATO VINAIGRETTE

- In a saucepan simmer the sun-dried tomatoes in 2 inches water for 3 minutes, or until they are tender, drain them, and mince them. In a bowl whisk together the tomatoes, the vinegars, and the garlic paste, add the oil in a stream, whisking, and whisk the vinaigrette until it is emulsified. Stir in the basil.

I came up with this blend so I would have a change from the usual Italian dressings that are so tart. It has a smooth taste and can be used in pasta salads, on green salads and also as a dipping sauce for your favorite breads.

GRILLED VEGETABLES WITH SUN DRIED TOMATO VINAIGRETTE

- Place tomatoes, vinegar, garlic and basil in a blender and blend until smooth. Slowly add the olive oil until emulsified. Season with salt and pepper to taste. Preheat grill. Brush the vegetables with olive oil and season with salt and pepper to taste. Grill until cooked through. Arrange on a platter and drizzle with tomato vinaigrette. Turn each slice over, sprinkle with parsley and grill an additional 20 seconds.

- Whisk together 2 tablespoons lime juice, 1/2 teaspoon lime zest, 1 tablespoon each olive oil and oil from a jar of sun-dried tomatoes and a pinch of salt. Add a 14-ounce can chickpeas (drained and rinsed), 1 chopped red bell pepper, 1/4 cup sliced sun-dried tomatoes and 1/2 cup chopped cilantro. Season with salt. Refrigerate at least 15 minutes before serving.
SUN-DRIED TOMATO VINAIGRETTE
This thick vinaigrette gets umami from the ultra-concentrated flavor of sun-dried tomatoes and is a luscious lip-smacker of a dressing. Rather than drizzling it on salad, place your greens in a chilled bowl and toss with the vinaigrette until the leaves are coated, using tongs or your hand. Then, finish with your garnishes: pine nuts, cucumbers, onions, croutons, grated cheese, etc. This hearty vinaigrette works well with sturdy greens or in a pasta salad. It would also be delicious spooned on top of salmon fillets.
