LEMON & RASPBERRY MASCARPONE TART
A creamy cheesecake flavoured tart, with a simple biscuit base.

Steps:
- Pre heat oven to 180c/350f (fan forced).
- Using a food processor (or a sturdy zip lock plastic bag & a rolling pin) process biscuits into fine crumbs, then add melted butter to combine.
- Line the base of a 25cm/9 1/2 inch loose bottom tart tin with baking/parchment paper (see notes).
- Press biscuit mixture firmly into the base and sides of the tin.
- Place tart tin on a baking sheet, and bake for 10 mins, then allow to cool.
- While base is cooling, in a medium bowl combine lemon curd, egg & sugar, mixing until smooth.
- Add cornflour & mascarpone, again mixing until smooth.
- Place raspberries evenly over the cooled biscuit base, then pour mascarpone mixture over the top and smooth out the mixture - being careful not to move the raspberries around too much (see notes).
- Bake for 30 mins - tart should be set in the middle but with a slight wobble, and light brown around the edges.
- Allow to cool for 10 - 15 mins, then refrigerate for 2 -3 hours to set.
- Serve chilled.

LEMON MASCARPONE BRûLéE TARTS WITH RASPBERRY SAUCE

- Make shells:
- Cut butter into 1/2-inch pieces. In a food processor combine flour, pecans, sugar, and salt and pulse until finely ground. Add butter and pulse until mixture resembles coarse meal. Add milk and pulse until a dough just forms. Form dough into a flattened disk and chill, wrapped in plastic wrap, at least 1 hour and up to 1 day.
- Press dough (about 1/3 cup for each shell) onto bottoms and up sides of eight 4 1/2-inch fluted tart pans with removable rims. Prick bottoms of shells all over with a fork. Freeze shells 1 hour.
- Preheat oven to 350°F.
- Arrange shells in a shallow baking pan and bake in middle of oven 18 minutes, or until golden. Cool shells in pans on a rack. Shells may be made 1 day ahead and kept, covered, at room temperature.
- Make filling:
- In a heavy saucepan combine butter, 3/4 cup sugar, and lemon juice over moderately high heat, stirring occasionally until butter is melted. Bring mixture to a boil, stirring, and remove pan from heat. In a bowl whisk together whole eggs, yolks, and remaining 3/4 cup sugar until thick and pale. Add hot butter mixture in a stream, whisking constantly, and transfer to pan. Cook mixture over moderate heat, stirring constantly, until thick and just beginning to boil. Pour mixture through a fine sieve into a heatproof bowl and stir in zest. Cool lemon mixture completely, its surface covered with buttered wax paper, and chill at least 8 hours and up to 1 day.
- In another bowl with an electric mixer beat together mascarpone and cream until thick and smooth. Fold in 1 1/2 cups lemon mixture, reserving remainder for another use, until combined well.
- Divide filling among shells, smoothing tops. Chill tarts, loosely covered, at least 1 hour and up to 1 day.
- Make sauce:
- In a blender puree sauce ingredients and pour through a fine sieve into a bowl, pressing on solids.
- Sprinkle about 1 tablespoon superfine sugar evenly over each tart and caramelize with a blowtorch, moving flame evenly back and forth over sugar (not crust) until melted and caramelized, about 30 seconds. (Alternatively, caramelize sugar under a preheated broiler. If using broiler, cover crusts with pieces of foil to prevent burning.)
- Serve tarts with raspberry sauce.
RASPBERRY MASCARPONE TART
A golden puff-pastry shell is filled with vanilla-flecked mascarpone cream and topped with rows and rows of juicy raspberries in this impressive dessert.

- Preheat oven to 400 degrees. On a sugared work surface, roll out pastry to a 16 1/2-by-12 1/2-inch rectangle, about 1/8 inch thick. Using a pizza wheel or a sharp knife, cut 1 1/4-inch strips from each side of dough. Brush a 1-inch border of egg wash around perimeter of dough and top with strips, overlapping corners and trimming ends to fit. Lightly press strips to adhere. Transfer to a parchment-lined unrimmed baking sheet and freeze until firm, about 15 minutes.
- Using a paring knife, score strips with a pattern of diagonal lines. Using a docking tool or the tines of a fork, prick holes all over center of dough, creating steam vents. Score bottom crust along interior edges of strips. Freeze until firm, about 15 minutes.
- Invert a wire rack over tart shell and transfer to oven. Bake until puffy and beginning to brown, about 20 minutes. Remove rack and continue baking until deeply golden brown, 15 to 20 minutes more. Transfer to a wire rack and let cool completely.
- In the bowl of a mixer fitted with the whisk attachment, beat together mascarpone, vanilla seeds, lemon zest, and 1/3 cup sugar on medium speed until combined and slightly thickened, about 2 minutes. Add cream and continue beating until stiff peaks form. Spread filling evenly into tart shell. Top with raspberries and refrigerate at least 30 minutes before serving.
LEMON-RASPBERRY DANISH WITH MASCARPONE
This braiding technique looks fancy, but it couldn't be easier to achieve. The lemon-raspberry-mascarpone filling is pudding-like, which makes it important to weave the dough as tightly as possible to prevent too much leakage (though a little is to be expected). Let the pastry cool completely before glazing and serving. This allows the glaze and the filling to set properly; impatient slicers will be met with a sloppy filling rather than a creamy one.

- Make the dough: In a small saucepan over low, heat milk until just warm to the touch (about 95 degrees). If needed, let cool to the correct temperature before using.
- While the milk heats, in the bowl of an electric mixer fitted with the dough hook, mix the flour, granulated sugar, yeast and salt to combine. Add the warm milk and the egg and mix on low speed until the dough comes together, about 2 minutes. Scrape down the sides of the bowl well, and mix on medium until the dough is very smooth, 4 to 5 minutes.
- Transfer to a medium bowl lightly greased with nonstick spray, and cover with plastic wrap. Let rise until puffy and doubled in size, 45 minutes to 1 hour.
- While the dough rises, make the filling: In the bowl of an electric mixer fitted with the whisk attachment, whip the mascarpone and cream cheese on low speed until well combined, about 2 minutes. Add the confectioners' sugar and mix until well combined, scraping down the sides of the bowl as necessary, about 1 minute.
- Beat in the egg white on low speed, then scrape down the sides of the bowl. Add the lemon curd, lemon zest (if using) and vanilla and mix well to combine. Cover with plastic wrap and set aside.
- When the dough has risen, roll it out on a lightly floured surface using a lightly floured rolling pin into a 10-by-15-inch rectangle (about 1/2-inch-thick). Roll the dough around the rolling pin and gently transfer it to a piece of parchment paper that will fit on a baking sheet. Using the tip of a metal spatula, gently mark the dough into even, vertical thirds without cutting all the way through.
- Spoon the filling into the center third of the dough, spreading it in an even layer, leaving the outer thirds of the dough uncovered. Arrange the raspberries evenly on top of the filling.
- Using a bench knife, sharp knife or pastry wheel, cut 1 1/2-inch-wide horizontal strips down one side of the dough, stopping the cut just before you hit the filling. Repeat on the other side, being sure to cut the same number of strips at about the same place (these are the "strands" you'll braid over the filling). Transfer the parchment paper with the dough to a baking sheet to finish the assembly (it can be tricky to move the loaf once braided).
- Braid the dough: Fold each strip of dough in toward the center, crisscrossing the filling by alternating one strip from each side. It's O.K. to stretch the strips slightly if you need to. Continue to cross the strands all the way down the loaf. Pinch the excess dough at the ends together, then fold them under the loaf.
- Cover the loaf with greased plastic wrap and let rise until puffy, 30 to 45 minutes. Toward the end of the rise time, heat the oven to 375 degrees.
- Make an egg wash: Lightly beat 1 egg and 1 tablespoon water together. Brush the surface of the bread with the egg wash, taking care to get all the nooks and crannies of the braid. Bake until the loaf is deeply golden brown, 30 to 35 minutes. Cool completely on the baking sheet.
- While the loaf cools, make the glaze: In a medium bowl, whisk the confectioners' sugar and lemon juice together to combine. The glaze should be thin enough to brush it onto the loaf. Add milk 1 teaspoon at a time, as needed to thin glaze.
- Once the loaf is cool, brush with the glaze until coated. Don't worry if it pools in some places. Let the glaze set for 15 minutes before slicing and serving.
LEMON MASCARPONE TART
This cool and tangy lemon tart gets its creamy texture from mascarpone cheese-perfect for spring and summer parties!

- Prepare crust as directed, using pistachio nuts. Press mixture evenly in bottom and up side of 10-inch tart pan with removable bottom. Refrigerate 30 minutes.
- Meanwhile, Heat oven to 350°F. In medium bowl, beat 3/4 cup mascarpone cheese, the sugar and 2 tablespoons lemon peel with electric mixer on low speed until blended. Add lemon juice, 2 tablespoons whipping cream and 1 teaspoon vanilla; beat until well blended. Add eggs and egg yolk, beating on low speed just until combined. Spread filling evenly in chilled crust. Place sheet of foil on rack below tart in case of spillover.
- Bake about 35 minutes or until filling is set but center still jiggles slightly when moved. Cool on cooling rack 1 hour. Refrigerate at least 1 hour.
- In chilled large bowl, beat 1 cup whipping cream and 3 tablespoons mascarpone cheese with electric mixer on high speed until soft peaks form. Stir in honey and 1/2 teaspoon vanilla. Spread over top of tart. Garnish with lemon peel. Remove side of pan before serving.
