If you like rich, cakey brownies, then this is the recipe for you. My favorite thing to make growing up, this brownie recipe page was covered in who knows what. I assume that just made these morsels that much more delicious! Disgustingly Rich Brownies just like we made growing up

1 cup butter (melted)
2 cups sugar
3/4 cup cocoa
4 eggs
1 teaspoon vanilla extract
1 1/4 cup flour
1/2 teaspoon salt
20 pecan halves

Steps:

  • Preheat oven to 350 degrees. Spray 9 inch square pan with nonstick spray.
  • Melt butter in microwave or on stovetop, being careful not to burn butter.
  • Meanwhile, mix cocoa and sugar in a stand mixer or large bowl. Add melted butter.
  • Beat eggs in a small bowl. Add beaten eggs and vanilla to sugar mixture. Mix well.
  • Add flour and salt. Mix until just smooth.
  • Pour batter into baking pan. Place pecan halves in rows across top of batter.
  • Bake 45-55 minutes until sides just begin o pull away from the side. Let cool. Cut into squares.

6 ounces dark chocolate chips (170 grams)
6 tablespoons unsalted butter (85 grams (¾ stick))
1 cup granulated sugar (200 grams)
2 large eggs (100 grams. room temperature)
2 tablespoons brewed black coffee (28 grams, hot (180-200°F))
2 teaspoons pure vanilla extract (8 grams)
¾ cup all-purpose flour (90 grams)
¼ cup unsweetened cocoa powder (21 grams)
½ teaspoon baking powder (2 grams)
½ teaspoon kosher salt
½ cup chocolate chips (85 grams, optional)
½ cup chopped nuts (57 grams, optional)

Steps:

  • Preheat the oven to 350°F. Line an 8x8-inch baking pan with parchment paper. Set aside.
  • Place the butter and chocolate chips in a heatproof glass bowl and microwave in 30-second intervals, stirring between each blast of heat, until smooth. Add the sugar and whisk well. Set aside to cool for about 5 minutes.
  • Add the eggs to the cooled chocolate mixture and whisk well until the batter thickens.
  • Add the coffee and vanilla and mix until combined, about 1-2 minutes.
  • Whisk in the flour, cocoa powder, baking powder, and salt until well combined.
  • Fold in nuts or chocolate chips, if using.
  • Transfer the batter to the prepared baking pan.
  • Bake for 25-30 minutes until top is dry, then remove to cool completely.

5 -6 ounces dark baking chocolate
1/2 cup salted butter
1 cup sugar
3 tablespoons maple syrup
3 -4 eggs
2 teaspoons vanilla
1 1/2 cups whole milk or 1 cup half-and-half
1/2 cup whole wheat flour
1 1/2 cups white flour
1 teaspoon baking powder
4 -5 ounces semisweet baking chocolate
1/3-1/2 cup evaporated milk
1/3-1/2 cup sugar

Steps:

  • Melt dark chocolate bars in a double boiler until melted and add butter until melted.
  • Add sugar and maple syrup and blend.
  • After cool, add 3 or 4 eggs and whisk together well.
  • Add 2 teaspoons vanilla.
  • Add milk or half and half and whisk together well.
  • In a separate large bowl, add 1/2 cup whole wheat flour and 1 1/2 cups white flour together with 1 teaspoons baking powder. Whisk until well blended.
  • Add liquid ingredients from pan into the bowl of dry ingredients. Mix until well blended.
  • Bake at 350 degrees in middle of oven for 20-30 minutes depending on whether you use a metal or glass pan. Metal pans cook brownies faster. A knife inserted in center should come out clean when they are done.
  • For the frosting or glaze (depending on how much liquid you use) melt 4 or 5 ounces of the semi-sweet chocolate in double boiler and add sugar until dissolved. Place mixture in a mixing bowl and add evaporated milk until you get desired consistency. You can vary amount of sugar for taste.

1/2 cup Crisco shortening
2 ounces unsweetened chocolate squares
3/4 cup sifted enriched flour
1/2 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1 cup sugar
1 teaspoon vanilla
1 cup broken walnuts (optional)

Steps:

  • Melt shortening and chocolate together in a metal bowl placed over hot water.
  • Cool.
  • Sift the flour by shaking it through a sieve WITH the baking powder and salt.
  • Beat the eggs until light; add sugar, then add the chocolate mixture and blend.
  • Add flour, vanilla and nuts.
  • Mix well.
  • Pour batter into a greased 8 x 8 x 2 pan.
  • Bake at 350 for 30-35 minutes.
  • Cool and cut into squares.
  • Makes 16 brownies.
