DARK CHOCOLATE CHEESECAKE

Nonstick cooking spray, for the pan
5 chocolate graham crackers
4 tablespoons salted butter, melted
2 ounces 70% dark chocolate
12 ounces cream cheese, at room temperature
1/3 cup granulated sugar
1 teaspoon cocoa powder
1/2 teaspoon vanilla extract
1/4 teaspoon kosher salt
1 large egg
1 cup canned cherry pie filling
1 sprig fresh mint, for garnish

Steps:

  • For the crust: Position an oven rack in the center of the oven and preheat to 350 degrees F. Spray a 6-inch springform pan with cooking spray to coat the bottom and sides.
  • Add the graham crackers to a resealable plastic bag. Using your hands or a rolling pin, crush the graham crackers into crumbs. Transfer them to a mixing bowl and add the melted butter. Fold and press together with a spatula until a loose, crumbly mixture is made. Pour the mixture into the bottom of the prepared pan and press to create an even base for the cheesecake. Chill the crust in the fridge while you make the filling to set the base.
  • For the filling: Add the chocolate to a heatproof bowl and set the bowl over a pan of simmering water. Heat, stirring with a spatula, until the chocolate is melted and completely smooth. Set aside.
  • Mix the cream cheese, sugar and cocoa powder in a food processor until smooth. Remove the lid and scrape down the sides of the bowl. Add the vanilla, salt and egg and process until completely incorporated. Scrape down the sides once more. Turn the machine back on and while the machine is running, drizzle in the melted chocolate and allow it to completely incorporate into the mixture.
  • Pour the chocolate filling over the prepared crust and smooth out the top with a spatula. Transfer the cheesecake to the center rack and bake until the filling is no longer soupy but still slightly jiggly, about 32 minutes. Turn off the oven and open the door just a hair. Allow the cheesecake to sit in the warm oven for 15 more minutes with the door ajar.
  • Transfer the cheesecake to a cooling rack and let cool for 30 minutes.
  • Run a sharp knife around the edge of the pan to help free the cheesecake, but keep it in the pan. The cheesecake will continue to shrink while it cools and this step makes it easier to separate the cheesecake when you are ready to serve it.
  • For the topping: Pour the cherry pie filling onto the cooled cheesecake and smooth into an even layer, leaving a bit uncovered around the edges. Cover the springform pan with plastic wrap and refrigerate for at least 2 hours.
  • When you are ready to eat, remove the cheesecake from the fridge and transfer to a serving platter. Garnish with a sprig of mint and serve.

1 1/4 lbs lean ground turkey (99%/1%)
8 slices turkey bacon, chopped
16 cherry tomatoes, cut into quarters
1/2 red bell pepper, ribs and seeds removed
3/4 cup fresh corn (previously roasted or boiled. frozen is ok, too)
8 ounces fat free cream cheese
16 ounces low-fat monterey jack cheese
16 ounces black beans
4 98% fat free tortillas
6 ounces salsa verde (only 1/4-1/2 cup is needed) or 6 ounces green enchilada sauce (only 1/4-1/2 cup is needed)
1 (1 1/2 ounce) package sazon con azafran seasoning
1 teaspoon garlic powder
1 teaspoon salt (or to taste)
1 teaspoon black pepper
1/2 teaspoon black pepper
2 teaspoons cumin
1/2-1 teaspoon cayenne pepper (or flakes)
10 sprigs fresh cilantro, chopped or 1 tablespoon dried cilantro
1/2 cup water
1 cup water

Steps:

  • Chop the turkey bacon and start to brown in a large skillet. Add ground turkey; use a spatula to separate meat and brown. Add salt and 1 teaspoon pepper while the meat is browning. Open the can of black beans and place in a separate pot; add ½ cup of water, bring to a boil, reduce heat, mash to refried bean texture using a potato masher and add ½ teaspoon pepper and garlic powder, turn off once a somewhat viscous paste consistency has been reached. When the meat is browned, add tomatoes, red bell peppers, corn, cilantro, cumin, cayenne pepper, Sazon and remaining 1 cup of water. Mix and allow to simmer, about ten minutes until the water is almost completely gone. Add cream cheese and turn off heat. Add black beans to meat and cheese mixture and incorporate thoroughly.
  • Turn on oven to 350 Degrees. Place Reynolds Aluminum Foil in am 8X8 glass cooking dish. Spread (enough to barely cover the bottom, about ¼ cup) Verde sauce on the bottom of the dish. Cut tortillas to match and fit into the bottom of the pan (it is ok to overlap a little). Layer 1/3 of the shredded cheese on top of the tortillas. Place half of the meat sauce on top of the cheese and tortillas. Cut more tortillas and fit on top of meat mixture. Add another light layer of Verde sauce on top of tortillas (just to cover tortillas). Add 1/3 bag of shredded cheese on top. Layer the remainder of meat sauce on top of cheese. Finish with one more layer of cut and fitted tortillas, a light covering of Verde sauce and the remainder of the Monterey jack cheese. Cover the dish with Reynolds foil and place into the oven for 20 minutes. Turn the oven up to 500 (or broil), take the foil off and allow the cheese to brown 3-10 minutes depending on preference and oven heat distribution. Take out of the oven, allow to rest 5-10 minutes, serve and enjoy!

Here's a dark chocolate muffin made even better with cream cheese and a chocolate almond crumb topping. The foil liners make a beautiful presentation for this delicious decadent muffin. COOKS NOTES: Melt the chocolate in a microwave safe bowl in the microwave for 30 seconds; remove and whisk smooth. Set aside to cool.

2 ounces dark chocolate, melted and cooled
1 cup all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
1/4 cup unsalted butter, softened
4 ounces cream cheese, softened
3/4 cup granulated sugar
1 teaspoon vanilla extract
1 large egg
1/2 cup all-purpose flour
2 tablespoons unsalted butter, melted and cooled
2 tablespoons light brown sugar, packed
2 tablespoons slivered almonds, coarsely chopped
1 tablespoon unsweetened cocoa
1/4 teaspoon almond extract
1/2 cup confectioners' sugar
2 tablespoons heavy cream, plus more if necessary
1/2 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees. Melt the dark chocolate and set aside to cool. Using Reynolds Wrap, cut SIX 6X6 squares. Using a 6- cup JUMBO muffin pan, push a foil square into each muffin cup. Use a large plastic cup to help mold the shape of the foil in the muffin cup. The 4 points of the square should be visible. Lightly coat the foil cups with cooking spray.
  • MAKE THE BATTER: In a medium mixing bowl, whisk together the flour, baking powder and salt. Set aside.
  • With an electric mixer on medium speed cream the butter, cream cheese, sugar and vanilla until light and fluffy, about 3 minutes. Add the egg and beat just until smooth. Add the melted and cooled chocolate and beat just until smooth. On medium low speed, add the flour mixture slowly and beat until smooth. Scrape the sides a few times during this step. Add the batter evenly to each muffin cup and set aside while making the crumbs.
  • MAKE THE CRUMB TOPPING: In a medium mixing bowl, combine the flour, butter, brown sugar, almonds, cocoa and almond extract forming large crumbs. Sprinkle the crumb topping on top of each muffin and gently push into the batter. Bake for 20-30 minutes or until a tester comes out clean. Cool 15 minutes in the pan and then remove to a platter to cool before icing.
  • MAKE THE ICING: In a medium mixing bowl, whisk together the confectioner's sugar, heavy cream and vanilla extract until smooth. If necessary whisk in more cream to make a pourable smooth consistency. Drizzle on top of each cooled muffin in a back and forth motion.

6 tablespoons butter, melted
1 (8 ounce) package cream cheese, softened
2 tablespoons white sugar
1 dash vanilla extract
1 (12 ounce) container frozen whipped topping (such as Cool Whip®), thawed
3 ½ cups milk
2 (3.9 ounce) packages instant chocolate pudding mix
1 ½ cups mini chocolate chips

Steps:

  • Mix cookie crumbs and melted butter in a bowl with a fork. Press into the bottom of a 9x13-inch baking pan to make the crust. Place in the refrigerator.
  • Combine cream cheese, sugar, and vanilla extract in a bowl; beat with an electric mixer until creamy. Fold in 1 1/2 cup whipped topping; spread over crust. Place in the refrigerator.
  • Whisk milk and chocolate pudding mixes in a bowl until thickened. Let sit for 5 minutes. Spread over cream cheese layer. Spread remaining whipped topping over chocolate pudding layer. Sprinkle chocolate chips evenly on top.
  • Freeze until set, about 1 hour, or refrigerate for 4 hours.
