DARK CHOCOLATE INDULGENT BROWNIES
I am a huge fan of dark chocolate. There are so many choices these days when going to select chocolate. I use the chocolate with the highest percentage of cacao I can find. We also like to add a 1/2 cup of walnuts to the batter. Drizzle some melted chocolate on top of the brownies for a special presentation. Choose what you like the best!

Steps:
- Preheat oven to 350 F and grease an 8x8 baking pan.
- Heat 6 oz of chocolate, butter, sugar, and water over low heat until melted and combined. Stir constantly. I do this with a small glass bowl placed over a small sauce pan which contains water to steam the bowl from underneath. Some like to do this step in the microwave. Stir every 30 seconds if you choose the microwave method and watch carefully toward the end so the chocolate doesn't burn.
- Pour this mixture into a larger bowl and cool slightly. You don't want scrambled eggs in your brownies!
- When chocolate mixture has cooled enough add in the eggs one at a time mixing thoroughly.
- Stir in vanilla, flour, and salt. Mix well.
- Add remaining 4 oz of chocolate and nuts if desired.
- Pour batter into prepared baking pan and cook for 30 to 35 minutes. Cool before cutting.

This recipe is great! You can double it to make more, using a bigger pan. My family just loves them. It is a regular dessert is our home! The brownies just melt in your mouth! Adding peanut butter to the batter really brings out the fudge taste!

- Preheat oven to 350 degrees F (175 degrees C). Grease an 11x7 inch baking pan.
- In a medium bowl, beat sugar, oil, eggs, and vanilla until light and fluffy. Combine the flour, baking powder, salt, and cocoa; stir into the sugar mixture. Blend in the peanut butter. Spread batter evenly into the prepared pan.
- Bake for 25 to 30 minutes in the preheated oven, until edges of brownies start to pull away from the sides of the pan. Cool before cutting into bars and serving.

ULTIMATE CHOCOLATE BROWNIES

- Preheat oven to 180C/fan 160C/gasmark 6.
- Melt the chocolate and butter together over hot water (can be melted in the microwave if you're in a hurry).
- Beat together the eggs, sugar and vanilla extract/paste, add to the melted chocolate and butter, mix.
- Sift together the flour, cocoa and baking powder, then fold into the rest of the mix.
- Add the chopped white chocolate pieces and pour into a lined and greased baking tray.
- Cook for 22 minutes (the knife should come out clean when cooked), allow to cool, cut into 12 and serve.
HEALTHY DARK CHOCOLATE BROWNIES
Delicious, low fat, vegetable added, whole wheat, dark chocolate, moist, fudgy brownies...what's not to like? Optional additions: 1-2 T bourbon, rum or whiskey adds a nice complex flavor, 1 C chopped nuts of your choice (walnuts, pecans, almonds), marshmallows &/or fresh raspberries as a topping. I usually add 2-4 T ground flax and chia seeds for health & increased protein--makes them into a breakfast bar in my opinion!

- Preheat oven to 350F (180C) and grease a 9x13 inch pan. Sprinkle turbinado sugar on the pan to make a delicious crunchy crust.
- In a large bowl, stir together the cocoa powder, baking soda, & salt. Blend in milk & yogurt and mix until smooth.
- Pour in boiling water, stirring until mixture thickens.
- Stir in eggs, sugar, and vanilla, stirring until smooth.
- Add flour, chia and flax seeds, stirring until smooth.
- Add chocolate chips, stir to combine and pour batter into baking pan. Add liquor if using.
- Bake at 350F for 20 minutes if you want fudgy brownies. Cook for additional 5-10 minutes for drier brownies. If adding marshmallows or raspberries as a topping add now and put under broiler for 1-2 minutes. I love adding a sprinkle of turbinado sugar to the top of the brownies to add a nice crunch.
