This is a creamy, delicious alternative to traditional egg nog. It's even pretty healthy, and vegan!

2 cups almond milk
3 medjool dates, pitted
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 pinch fresh diced ginger
1 tablespoon brown sugar
1 teaspoon vanilla extract

Steps:

  • Put all ingredients in a high speed blender and blend until smooth and creamy.
  • If you prefer a smoother beverage, strain the nog through a nut milk bag.
  • Chill until ready to serve. You can sprinkle a dash of cinnamon on each cup of nog when you serve it, or place a cinnamon stick in each mug.

1 cup cashews
1 can lite coconut milk
¼ cup maple syrup
¼ cup water, add more as needed for desired consistency
3 pitted dates
¼ teaspoon allspice
2 vanilla bean pods, seeds scraped
1 teaspoon fresh nutmeg, to taste
spiced rum, or bourbon, to taste, optional
6 cinnamon sticks, to serve

Steps:

  • Soak cashews in water for 30 minutes. Rinse, then drain in a colander.
  • Add cashews, coconut milk, maple syrup, water, dates, allspice, vanilla bean seeds, nutmeg, and rum (optional) to a blender. Blend until completely smooth.
  • Refrigerate the mixture until ready to enjoy. Refrigeration will thicken the veggnog. Add more water and blend again for a thinner consistency.
  • Serve chilled with nutmeg, and cinnamon stick.
  • Enjoy!

25g cashew nuts
25g dried apricots
¼ tsp mixed spice
100ml brandy
1 vanilla pod , seeds only
1l sweetened almond milk
ice , to serve
nutmeg , to serve

Steps:

  • Soak the dates, cashews, apricots and mixed spice in the brandy overnight.
  • The next day, tip the mixture into a blender and add the seeds from the vanilla pod and the almond milk. Blitz until smooth, then pour into eight tall glasses (use a sieve, if you like) with ice and grate some nutmeg on top.
