DATE-NUT APPLE CAKE
WE have enjoyed this recipe for many years. It was given to me by a college friend. It looks like a standard fruit cake, but the rich, moist texture of apples, dates, raisins and nuts makes it a very satisfying dessert. A slice of this cake, topped with whipped cream, whipped topping or a big scoop of ice cream will have your guests coming back for more.

Steps:
- In a small bowl, combine dates and raisins. Add 1 tablespoon flour and toss to coat; set aside. , In a large bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the baking soda, salt and remaining flour; add to creamed mixture alternately with boiling water. Stir in the apple, walnuts and reserved date mixture., Transfer to a greased and floured 10-in. fluted tube pan. Bake at 350° for 65-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar if desired.

FRESH APPLE DATE CAKE
I've had this recipe for ages and it's a favorite of ours! Most of us have the ingredients on hand, so it's an easy dessert to throw together and I especially like the fact that the apples don't have to be peeled! It's also a good way to use up "slightly past their prime" apples that are a little wrinkled. It turns out very moist and delicious and also freezes well.

- Preheat oven to 325 degrees.
- Cream butter and sugar.
- Add eggs and mix well.

APPLE DATE BUNDT CAKE
This is a very sweet and rich tasting, classic Jewish cake. As the sugar melts and caramelizes, and as the apples soften and produce juice, the cake will bake up into a moist and dark treat.

Steps:
- Preheat the oven to 325ºF, with a rack in the middle of the oven. Grease a 12-cup fluted tube pan (Bundt pan).
- In a bowl, sift together the flour, salt, baking soda and cinnamon. Stir in the dates, nuts and sugar.
- In a large mixer bowl, beat the eggs, egg whites, oil, applesauce and vanilla until well blended.
- Peel, core and chop the apples into dices, sprinkling with lemon juice as you cut them (to keep them from turning brown). Stir the flour mixture into the eggs. The batter will be very thick. Stir in the apples.
- Spoon the batter into the prepared pan and bake for 65 to 75 minutes or until a toothpick inserted into the center of the cake comes out clean with no moist crumbs attached.
- Cool on a rack for 20 minutes and then invert.The cake can be made 2 days in advance or frozen for up to 3 months.
APPLE DATE BUNDT CAKE
I found this recipe on another website. I have decreased considerably the amount of sugar originally called for and it is still fairly sweet. It is best made with Fuji or Granny Smith apples.
