VEGAN WHOLE ORANGE CAKE



Vegan Whole Orange Cake image

Vegan orange cake using a WHOLE orange including the rind just like the classic Sicilian orange cake. This cake is made with only 5 ingredients and is also gluten-free, oil-free, eggless and flourless!

1 x (~250 g) medium-sized organic orange (with the rind still on)
250 g (2 1/2 cups) almond flour / blanched almond meal ((note 1))
150 g (3/4 cup) granulated sugar ((note 2))
85 g (1/2 cup + 1 tablespoon) potato starch (or corn starch / corn flour (plus more if needed))
80 g (1/3 cup) water
3 heaped teaspoons baking powder

Steps:

  • I recommend weighing the ingredients for this recipe rather than using the cups measurement. Like all of my recipes, this whole orange cake was tested using grams except the baking powder.

The best vegan orange cake with heaps of orange flavor and a gorgeous color. Light and fluffy and topped with a gorgeous orange buttercream frosting.

2 2/3 cups All Purpose Flour ((330g))
1 1/2 cups White Granulated Sugar ((300g))
1 1/2 teaspoons Baking Soda
3/4 teaspoon Salt
1 1/2 cups Soy Milk ((360ml) or other non-dairy milk)
1/2 cup Canola Oil ((120ml) or Vegetable Oil)
1 Tablespoon Distilled White Vinegar (or Apple Cider Vinegar)
1 teaspoon Vanilla Extract
3 teaspoons Orange Extract
2 Tablespoons Orange Zest
3 1/2 cups Powdered Sugar ((420g))
1 cup Vegan Butter ((225g))
1/4 teaspoon Salt
2 teaspoons Orange Extract
Orange Zest
Orange Slices

Steps:

  • Preheat the oven to 350°F (180°C). Prepare two 8-inch* (see notes) cake pans by spraying with non-stick spray and lining the bottoms with circles of parchment paper.
  • Sift the all purpose flour into a mixing bowl and add the sugar, baking soda and salt and mix in.
  • Add soy milk, oil, vinegar, vanilla extract, orange extract and orange zest and mix it into a batter. Don't overmix.
  • Divide the batter between the two prepared cake pans and bake for 30 minutes or until a toothpick inserted into the center of one of the cakes comes out clean.
  • Let the cakes cool for a few minutes in the pans before removing them from the cake pans and placing on a wire cooling rack to cool completely before frosting.
  • Prepare your frosting by adding the powdered sugar, vegan butter, salt and orange extract to the bowl of a stand mixer and starting at slow speed, gradually increase speed until the frosting is thick and smooth.
  • When the cakes are cooled frost the cake and decorate with orange zest and orange slices around the sides (optional).

Date & Orange Sheet Cake (Vegan) image

An easy one step vegan data and orange sheet cake. Bung it all into a food processor or blender. Whizz and bake!

100 g dried dates (snipped into pieces and covered in boiling water and left to soak)
350 g Plain Flour
225 g Sugar (I use soft dark brown for colour and flavour but any would work)
100 g Cooking oil (Sunflower or rape/canola)
Zest one large orange (finely grated)
1 tsp baking powder
½ tsp bicarbonate of soda
Pinch salt
60 g golden syrup

Steps:

  • Drain the dates, reserving the soaking water, make the volume of the date water up to 225ml.
  • Place all the ingredients into a bowl or your stand mixer and whizz until you have a smooth golden brown batter.
  • Pour into 8" square pan lined with greaseproof paper (if needed) and bake at GM4/180C for about 25 - 30 mins until risen and a cocktail stick inserted into the middle comes out clean.
  • Cut into squares and dust with icing sugar.

1 (18 1/4 ounce) box lemon cake mix
1 (3 ounce) box orange gelatin
4 eggs or 4 egg substitute
3/4 cup water
3/4 cup canola oil
1 lb powdered sugar
3/4-1 cup orange juice

Steps:

  • Preheat oven to 350.
  • Spray bottom of 9x13" sheet cake pan with cooking spray.
  • Set aside.
  • Beat first five ingredients with an electric mixer for 4 minutes.
  • Pour into the prepared cake pan.
  • Bake for 35 minutes.
  • For icing, beat the powdered sugar and orange juice with a mixer until smooth.
  • (Start with 3/4 cup orange juice. If you want the cake even moister/soggier than it already is, slowly increase the amount of orange juice).
  • Remove cake from oven, and poke with many holes- using a chopstick or fork or skewer, etc.
  • Pour the icing over the warm cake.

2 teaspoons baking powder
1 teaspoon baking soda
1 cup butter, softened (can use light)
1 cup sugar (I use Splenda Blend)
3 eggs, well beaten
3 tablespoons orange marmalade
2 tablespoons orange peel, grated
1 (11 ounce) can mandarin orange segments, chopped, optional (I add them for more flavor)
1 1/3 cups orange juice
1 cup granulated sugar
1/4 cup cornstarch
1 teaspoon lemon juice
1 cup fresh orange juice
2 tablespoons orange peel, finely grated
1/2 teaspoon salt
2 tablespoons butter (can use light)

Steps:

  • Sift flour, baking powder, and salt together.
  • In a large bowl, cream butter until smooth. Gradually add sugar and beat until light and fluffy.
  • Beat eggs; stir in marmalade, orange rind and mandarin segments, if you like.
  • Beat in flour mixture alternately with orange juice, beating after each addition.
  • Turn batter into a greased and floured 11x14x1-inch or cookie sheet and bake at 350° for 30 to 35 minutes.
  • Cool in pan on rack for about 10 minutes and turn in a plate to coool completely and frost with.

  • Combine sugar and cornstarch in saucepan. Add lemon and orange juices slowly and stir until smooth.
  • Add remaining ingredients and cook, stirring frequently, over low heat until thick and glossy. Cool and spread on cake.
  • Recipe can be doubled if you want.
