1 cup butter, softened
1 ⅓ cups white sugar
3 eggs
3 cups sifted all-purpose flour
1 teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon ground cloves
2 teaspoons water
1 ½ cups chopped pitted dates
1 cup chopped pecans

Steps:

  • In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition. Combine the flour, baking soda, cinnamon and cloves; gradually stir into the creamed mixture. Combine the water and dates; stir into the dough along with the chopped pecans. Cover and chill for 1 hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Drop by rounded spoonfuls onto the prepared cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Cookie:
3 cups flour
2 tsp bkg powder
1/2 tsp salt
2/3 cup butter or shortening
1/2 cup brown sugar
1 beaten egg
1 tsp vanilla
1/3 cup milk
Filling:
2 cups chopped dates
2/3 cup sugar
2/3 cups boiling water
1 tblsp lemon juice
1 tblp butter
You may choose to buy solo date filling in a can instead.

Steps:

  • Filling: Place first 3 ingredients into a saucepan and cook till thick( 8-10 minutes). Now add the lemon juice and butter and let cool. Cookies: Mix the dry ingredients. Cream the butter and sugar till light, add the egg and vanilla. Now alternately add the flour and milk. Chill. Roll out the dough to 1/9 th inch and cut with a 21/2" round cutter. Optional, you may choose to cut half of the rounds with a decorative cutter such as a heart or star like you would for linzer cookies. To form place 1 tsp filling in center of cookie and place another on the top. With a fork seal the edges. Bake @ 375* for 10-12 minutes. May dust with powdered sugar.

1 stick (8 tablespoons) unsalted butter, at room temperature
1/2 cup packed brown sugar
1/3 cup granulated sugar
1 large egg, at room temperature
1 1/2 cups old-fashioned rolled oats
1/2 cup all-purpose flour
1/2 teaspoon ground cinnamon
3/4 cup chopped Medjool dates (about 5 dates)
1/2 cup chopped walnuts

Steps:

  • Mix the butter, brown sugar and granulated sugar in a large bowl with an electric mixer on medium speed until creamy. Turn the mixer to low, add the egg and mix well to combine. Add the oats, flour and cinnamon and mix on low until combined. Fold in the dates and walnuts with a wooden spoon or rubber spatula. Cover the bowl and refrigerate for at least 1 hour and up to 2 days.
  • When you're ready to bake, preheat the oven to 350 degrees F; line a baking sheet with parchment.
  • Scoop mounds of dough with a cookie scoop (about 1 1/2 tablespoons per cookie) and place on the prepared baking sheet, leaving about 2 inches between cookies.
  • Bake on the middle rack until golden around the edges, 10 to 12 minutes. Cool the cookies on the baking sheet for about 10 minutes, then transfer to a cooling rack. Repeat with the remaining dough.

12 tablespoons (1 1/2 sticks) butter, melted
1/3 cup all-purpose flour
2 eggs
2 tablespoons pumpkin pie spice
2 teaspoons pure vanilla extract
1 cup quick-cooking oats
1 cup walnuts, chopped and toasted
1 cup chopped dates

Steps:

  • Preheat oven to 375 degrees F.
  • Combine cake mix, melted butter, flour, eggs, pumpkin pie spice, and vanilla in large bowl. Beat with a hand mixer for 1 minute, or until well blended. Stir in oats, walnuts and dates. 3/4 cup 4% cottage cheese
2 cups all-purpose flour
1 large egg, room temperature, lightly beaten
1 cup finely chopped walnuts
1/2 cup sugar
1/8 teaspoon ground cinnamon

Steps:

  • In a large bowl, beat butter and cottage cheese until blended; gradually add flour and mix well. Cover and refrigerate for 2 hours or until easy to handle. , On a lightly floured surface, roll out to 1/8-in. thickness. Cut out with a floured 2-in. round cookie cutter. ½ cup butter, softened
3 ounces cream cheese, softened
1 cup all-purpose flour
⅛ teaspoon salt
¼ cup walnut halves, or as needed
10 ounces pitted dates, slit open
confectioners' sugar, or as needed

Steps:

  • Beat butter and cream cheese together in a bowl using an electric mixer until smooth and creamy. Sift flour and salt together into a bowl; stir into creamed butter until dough holds together. Cover bowl with plastic wrap and chill, 3 hours to overnight.
  • Press 1 walnut into each date and press closed.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Spread a pastry cloth over a work surface and sprinkle generously with confectioners' sugar. Roll chilled dough into 1/8-inch thick rectangle on the prepared work surface. Cut dough into 3 1/2 x 1 1/2-inch strips using a pastry wheel or pizza cutter.
  • Place 1 stuffed date in the center of each strip. Roll strip around date and sprinkle with confectioners' sugar. Arrange cookies, folded side-down, on a baking sheet.
  • Bake in the preheated oven until lightly browned, 15 to 18 minutes.

1/2 cup butter
1 cup sugar
2 large eggs
1 tablespoon milk
2 teaspoons baking powder
2 cups flour
1 pinch salt
1 cup chopped dates
1/2 cup water
3 teaspoons flour
1/2 cup sugar
chopped nuts, to taste

Steps:

  • Cream butter and 1 cup sugar; add eggs and beat well.
  • Add milk.
  • Sift together baking powder, 2 cups flour, and salt; add flour mixture to creamed mixture.
  • Refrigerate.
  • While dough is chilling, make filling by cooking dates, water, 3 tsp flour, and 1/2 cup sugar until thick; add chopped nuts.
  • Roll out dough; cut in rounds.
  • Mound filling in center, place another round on top and seal edges.
  • Bake at 375°F on greased cookie sheets until lightly browned.

2 cups chopped dates
3/4 cup sugar
3/4 cup water
1/2 cup nuts
1 cup shortening
3 1/2 cups flour
2 cups brown sugar
1 teaspoon baking soda
2 eggs
1 teaspoon salt
1/2 cup buttermilk

Steps:

  • Mix all filling ingredients (except nuts) together over medium heat. Add nuts -- stirring constantly.
  • Once sugars are disolved and mixed with other ingredients, take off heat and let cool.
  • Mix shortening, sugar and eggs thoroughly. Stir in buttermilk. Sift in flour, baking soda, and salt.
  • Let chill at least 1 hour.
  • Roll dough in ball and make a thumb print in center of the cookie. Add approx 1 tsp date filling in the hole, then cover top of filling with a small piece of dough patted down lightly.
  • Bake at 400 degrees for 8-10 minutes.

12 large marshmallows, cut in half horizontally
Chocolate Frosting for Surprise Cookies

Steps:

  • Preheat oven to 375 degrees. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar until light and fluffy, about 2 minutes. Add egg, milk, and vanilla, and beat until well combined. Add reserved flour mixture; mix on low speed until combined.
  • Using a tablespoon or 1 3/4-inch ice cream scoop, drop dough onto ungreased baking sheets, about 2 inches apart. Bake until cookies begin to spread and become firm, 10 to 12 minutes.
