DAWN'S PERFECTLY PUMPKIN BREAD
I got this recipe from the first cookbook I ever purchased through a fundraiser for my church youth group. This is still one of favorite cookbooks and my most requested recipe.

Steps:
- Preheat oven to 350°F
- Crack eggs in large mixing bowl. Break the yolks and mix together. Add sugar and oil. Mix well.
- Sift together dry ingrediants. Add sifted dry ingridiants alternatly with juice (or water,) mixing well between additions.
- Fold in vanilla.
- Bake in preheated oven for 20-30 minutes until an inserted knife comes out clean.

DAWN'S PUMPKIN PECAN DUMP CAKE
My friend Dawn sent me this recipe to try, and I did... It's like a pumpkiny custard on the bottom and crumb topping on top, and loaded with nuts. It's just plain WONDERFUL! Great anytime, but also for the holidays, and a lot easier and quicker than making a pie :D I made this for the Cake-A-Thon to honor Chef-I-Am October 2007. Steps:
- Preheat oven to 350.
- In a mixing bowl, combine first 6 ingredients, until well blended.
- Pour batter into a 9x13" greased pan.
- Sprinkle DRY cake mix on top, then cover with pecans.
- Pour melted margarine or butter over top.
- Bake 50-60 mins., or until golden brown.
- Serve with Cool Whip or whipped cream on top.

CHOCOLATE ALMOND PUMPKIN BREAD
This is a yummy recipe I got from a real estate agent who used to leave whole pumpkins on our doorsteps around Halloween time. Super easy and quick to prepare! My family LOVES it!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Spray the inside of a 9x5-inch loaf pan with cooking spray.
- Mix flour, sugar, baking soda, salt, cloves, cinnamon, nutmeg, pumpkin pie spice, and baking powder together in a large bowl. Add pumpkin puree, vegetable oil, water, and eggs; beat until well incorporated and smooth. Gently stir in chocolate chips and almonds. Pour batter into the prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted in the center of the bread comes out clean, 1 hour and 15 minutes. Let cool in pan for 10 minutes before transferring to a wire rack to finish cooling.

PUMPKIN BREAD PUDDIN'
Try this great substitute for the hum-drum pumpkin pie. Adults and kids alike will rave over this recipe. Serve warm with a dollop of whipped cream.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease 6 large custard cups.
- Whisk together the egg and egg yolks in a large bowl. Add the milk, sugar, pumpkin puree, vanilla extract, salt, cinnamon, nutmeg, and cloves; whisk into a smooth batter. Add the bread cubes and toss gently to dampen. Set aside for 15 minutes.
- Pour the batter evenly into the prepared cups. Sprinkle chocolate chips and brown sugar over each portion. Arrange the custard cups in a shallow baking pan. Pour hot water into the baking pan to halfway up the sides of the custard cups.
- Bake in preheated oven until pudding is golden brown and puffy, about 40 minutes; transfer to cooling rack for 10 minutes.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x5-inch loaf pan with nonstick spray. Line a baking sheet with parchment paper.
- Sift flour, baking soda, cinnamon, and salt together into a bowl. Set aside.
- Cream brown sugar and butter together in a large bowl. Mix in Greek yogurt, eggs, and vanilla extract. Add mashed bananas and mix until combined. Gradually mix in dry ingredients. Fold in strawberries. Pour into the prepared pan and set on the lined baking sheet.
- Bake in the preheated oven until golden brown and a toothpick inserted in the center comes out clean, 65 to 80 minutes.
